This does not mean that you need to forget about your favorite celebration and reschedule the meeting to January 14, when it is customary to celebrate the Old New Year. Even the church does not forbid fasting people to join in the general fun. But here you will have to approach the choice of recipes for the New Year's table thoughtfully and, of course, prepare pickles in lean version. This is not a problem, especially if you use our ideas for lean New Year's menu.

What to serve as a side dish for the New Year, so that the dish meets the requirements of fasting and is festive? There may be many options. This includes potatoes in any variations, any cereals with mushrooms or vegetables, dishes from legumes, cauliflower and other vegetables.

Potatoes are the perfect choice for the New Year's table. In any case, the dish will turn out to be festive, suitable for both lean and quick meals, and is incredibly loved by both children and adults.

But for the New Year we will refuse the usual variant mashed potatoes, and prepare the original baked potatoes, the taste of which we emphasize with garlic.

We will need:

  • small potatoes - 1 kg;
  • vegetable oil - 4 tbsp. l.;
  • garlic - 4 - 5 cloves;
  • breadcrumbs- 4 tbsp. l.;
  • ground black pepper - 0.5 tsp;
  • dried basil - 0.5 tsp;
  • parsley, dill - on a branch.

We select medium-sized potatoes of approximately the same size. Wash and boil until half cooked.

To prevent the potatoes from overcooking, after boiling, cook it for no longer than 7 minutes.

You can cook already peeled potatoes. If you cooked a vegetable in a uniform, peel it after cooling.

Now add oil, salt, basil, pepper and main ingredient of this magical dish - finely chopped garlic. We put everything in a baking bag, we send crackers there and shake it well several times. Crackers should be evenly distributed over the surface of the potatoes.

We tie the bag and send it to the oven for half an hour. The baking temperature is 180 degrees.

Potatoes should be lightly browned.

Take out the potatoes, put them on a beautiful dish. Do not forget to sprinkle with greens and immediately bring to the table and receive the enthusiastic exclamations of the guests.

Vegetable curry with chickpeas

If you want to cook as a side dish a festive vegetarian dish try the vegetable curry with chickpeas.

This is a great alternative to potatoes, which fits into the concept of a lean holiday table. The dish belongs to Indian cuisine, but thanks to the lunch aroma of spices and an unusual combination of tastes, it quickly found fans among our compatriots.

We will need:

  • chickpeas - 3 cups;
  • large potatoes - 4 - 5 pieces;
  • frozen green beans - 1 cup;
  • spinach - 300 gr.;
  • carrots - 200 - 250 gr.;
  • tomatoes in own juice- 1 bank;
  • onion - 2 - 3 pcs.;
  • chili pepper - 1 pc.;
  • Bulgarian pepper (can be frozen) - 1 pc.;
  • coconut milk - 50 ml;
  • curry - 1 tbsp;
  • salt - ½ tsp;
  • sugar - 1 tsp;
  • ground red pepper - on the tip of a knife;
  • ground black pepper - ¼ tsp;
  • water - 350 ml;
  • garlic, lemon - to taste.

You need to soak the chickpeas first. It is better to do this the day before the preparation of the New Year's curry.

Pour the olive oil into a large vat or heavy bottomed pot and heat it up.

Don't let the oil overheat or it will turn into poison.

Dip the diced onion into the heated oil and fry it until a golden hue appears. Immediately add to the fried onions chopped carrots or sticks. Green beans and bell peppers will also go there.

Fry the vegetables all together and add the soaked chickpeas and tomatoes to them together with the juice. Now you need to mix the dish well.

It remains to send diced potatoes to the vat, and we begin to achieve extraordinary spicy taste through spices.

You must immediately put all the seasonings listed in the recipe, as well as salt and sugar. Pour the dish coconut milk and water and put the vat on a slow fire.

We will simmer the curry for about 6 hours, stirring occasionally. You don't usually need to add liquid, but be careful not to burn the curry.

At the very end of cooking, add spinach to the dish, knead and continue to simmer until the spinach changes color.

Curry is ready. We spread the lean holiday treat on a dish. For decoration, use mint leaves and lemon slices.

We will need:

  • large carp - 1 pc.;
  • onion - 2 heads;
  • champignons - 0.5 kg;
  • salt;

We clean the onion, cut into half rings, cut the mushrooms into slices. Fry the onion with mushrooms until half cooked, without frying.

We place the filling in the belly of the fish, which we then sew up. Lubricate the fish vegetable oil and send the dish to the oven.

The carp will be baked for 40-60 minutes, while the temperature in the oven is maintained at 180 degrees. Exact time baking will have to be determined independently, depending on the capabilities of the oven and the size of the fish.

When will appear golden brown on the carcass, the fish can be taken out and served hot on New Year's table. We decorate the carp with lemon slices and dill sprigs. As a side dish for baked carp, you can cook boiled or baked potatoes.

We will need:

  • carrots - 2 pcs.;
  • cucumber - 2 pcs.;
  • onion - 4 pcs.;
  • coriander - to taste;
  • ground red pepper - 1 tbsp. l.;
  • acetic acid (70%) - 1 tbsp. l.
  • garlic - 5 cloves;
  • Bulgarian pepper (red) - 0.5 pcs.
  • soy sauce- taste.

We prepare the fish. You can simply peel and cut into small pieces.

It would be better to prepare the fillet by removing all the bones. And only after that cut the fillet into pieces.

Salt, pepper the fish and pour vinegar essence. We knead the workpiece well, you can even slightly crush the fish with your hands. We send the fish blank for at least 6 hours so that it marinates.

In parallel, you need to do onions. We clean it and cut it into half rings. Sprinkle prepared onion lemon juice and also put in the cold.

Now let's get to the vegetables. Three carrots and cucumbers on a grater for Korean cutting. Bulgarian pepper cut into cubes. Put all the vegetables in one bowl and season with oil. Add sugar, salt, coriander and hot pepper. Vegetables will also be marinated for about 6 hours.

Step 3. Remove the zest from the lemon, squeeze out the juice. Mix juice with salt and pepper, add 2 tbsp. l. oil, take a couple of tablespoons of cucumber juice, beat everything with a whisk.

Step 4. Season shrimp with juice and oil, sprinkle avocado with a little dressing. Put the shrimp in the avocado.

Step 5. Throw cucumbers in a colander, punch in a blender along with herbs. Gradually pour in the olive oil and beat again. Pour cucumber mousse over avocado with shrimp, garnish with strips of zest.

  • 2 green peppers

Step 3. Open a jar of mushrooms, drain the juice. Place the parsley in a blender and finely chop. Then add the mushrooms and grind them quite a bit - literally 1-2 seconds.

Step 4. Finely chop the onion and fry in olive oil until golden brown. Add mushrooms with herbs, pepper and salt, fry a little, at the end throw chopped garlic.

Step 5. Put ½ - 1 tsp into each eggplant oval. mushroom stuffing, roll up.

Step 6. Put on a dish, sprinkle with chopped cilantro.

Let's talk about the basic principles of Lenten New Year's holiday menu and relatively simple and therefore popular, proven by us, recipes.

Compared to the stricter Great Lent, most often fish is allowed on these days. And, of course, all seafood - squid, shrimp, mussels ... This, as a rule, is the basis of a lean New Year's table. Its second component is all kinds of vegetables, which, fortunately, are now on sale a lot in winter. They can help to tasty feed all guests and home-made flour dishes - both as hot dishes and as a dessert.

"For those who are accustomed to traditional dishes on the New Year's table, a partial change in one or another familiar recipe would be a good way out. Meat, cheese, eggs in some cases can be simply excluded, and sometimes replaced with fish, tofu, squid or shrimp. We use lean mayonnaise.

Salads

The most diverse section of the New Year's Lenten table is, of course, salads! The number of their options is limitless and the choice depends only on our taste and the availability of products.

Avocado salad with shrimp

A very popular recipe in recent years, which has many options. Often served in "boats" of avocado halves, the flesh of which is taken out and crushed added to the salad.

Salad "Flamingo"

All the ingredients here are red!

  1. Peeled shrimp cook for a short time.
  2. Salted salmon or trout, skinned and cut into cubes.
  3. Do not peel a large red (certainly red) apple, cut into strips, sprinkle with lemon juice so as not to darken, and mix.
  4. Tomatoes (2 pieces) cut into medium cubes, cut out the seeds.

Mussel salad

Saute onions and carrots in vegetable oil, add boiled mussels and boiled pasta or fig. Season with ketchup and mayonnaise in a 1:1 ratio.

Layered squid salad

  • 2 large onions;

If there is no special lean in the store, you can first study the composition of different sauces (there are a lot of them now - garlic, nut) or the most inexpensive mayonnaise - often there are no eggs in the composition. And if you want, you can make your own mayonnaise.

Option one.

200 soy milk(can be diluted from dry) beat with a blender, gradually adding 200 g of vegetable oil. Add mustard, salt to taste.

Option two.

Half a glass of any vegetable broth bring to a boil and pour in a thin stream of starch diluted in a small amount (1.5 tablespoons of dry matter), cook like jelly. Cool, add half a glass of vegetable oil, salt and mustard to taste, beat with a blender.

Other snacks

Great appetizer options - Korean salads . As you know, they can be cooked from almost any vegetable: carrots, cabbage, eggplant, even beets, and also from ferns, mushrooms ... But it is ideal for a lean New Year's table

Heh from fish

  1. Cut the fish into pieces with sides of 1.5x1.5 cm and place in a bowl. Add vinegar and mix well. Cover and refrigerate for about 1 hour. The fish should change color and become more matte and pink, the color inside the fish should be the same as the outside - this means that the fish is ready.
  2. Cucumber cut into thin strips, add to the fish; cut the onion into half rings, add to the fish and cucumbers. Cut the pepper into rings, finely chop the parsley. Add parsley and pepper to salad. Salt to taste.
  3. Boil vegetable oil in a saucepan. Pour the boiling oil into the salad and quickly mix everything.
  4. Cover the salad with a lid and let it stand for an hour in the refrigerator.

Salty fish

If you pickle pink salmon, chum salmon or salmon yourself, you will get fresh and tender slices. This is not at all difficult and does not require, as it may seem, a lot of time, but it can significantly save the family budget.

We cut the pink salmon fillet (or its relatives) into slices about 1 cm thick. You can remove the fish from the bones yourself, it is easiest to cut it half-frozen.
Sprinkle with a mixture of salt and sugar. Their ratio can be 1:1 or 2:1, as you like, for 1 kg of fillet about 1 tbsp. a spoonful of salt. You can add pepper, herbs, onions, lemon ... But you can do without it. We put oppression on top (a flat plate or a lid with a load) and put it in the refrigerator for several hours (overnight). In the morning the fish is ready!

Sushi and rolls


Now it is not difficult to master the technology of preparing these dishes - there are many detailed master classes on the Internet, and in practice it turns out to be quite simple. Also enough economical dish(as opposed to purchased): in addition to the mandatory components - dried nori seaweed, rice, vinegar, soy sauce or wasabi as a seasoning - you need absolutely a small amount of stuffing ingredients.

It can be: squid, shrimp, strips bell pepper, fresh or pickled cucumber, eggplant, Korean carrots, any greens ... Well, in the New Year's Lenten version, any salty fish, caviar. You can wrap the rolls not in nori, but in lean pancakes- in general, complete freedom for imagination.

And, of course, you can use Lenten menu New Year's row traditional snacks, for example, fresh vegetables in slices or in a salad, olives, home-made preparations - pickles, pickled mushrooms, .And also sandwiches or canapes with caviar!

Baked fish with potatoes.

You can take pike perch, pink salmon, chum salmon. On a greased baking sheet or in a mold, put pieces of salted fish 2-3 cm thick, on top of a layer of onion rings, slices of salted potatoes. Add pepper, spices, a couple of tablespoons of water to taste. You can grease the top with mayonnaise. bake in hot oven about half an hour (check when the potatoes are ready).

Options: you can lay another layer of potatoes at the bottom, under the fish; You can use zucchini or eggplant instead of potatoes.

Dumplings, manti

The dough is made elementary: 1 glass of water, 1 tsp. salt, flour as needed, until the dough is smooth.

It is convenient to make minced meat from fillets, but you can also separate the fish from the bones yourself. Most often, pink salmon, chum salmon or salmon are used (in the latter case, minced meat will be fatter). Add 1 large onion per pound of fillet (also scroll or chop), 1 clove of garlic, salt to taste. Next, cook like "regular" dumplings.

Besides fish, lean stuffing mushrooms can become fried with onions, you can add boiled beans; stewed pumpkin With large quantity onions and garlic. Such fillings are especially suitable for juicy manti.

Fish pie

Dough: for 50 g of “live” (or frozen) yeast diluted in 100 g of water with a teaspoon of sugar, take a glass of water and 200 g of melted margarine or vegetable oil, 1 tsp. salt, half a glass of sugar. Add flour until the dough is smooth.

The filling can be varied, for example:

  1. Pieces of red fish fillet, grated carrots, onions - fry everything. Boil rice until half cooked, mix with frying. Take rice no more than half of the total mass of the filling.
  2. Spread pike perch fillet on the bottom layer of dough, salt, pepper, add spices, lay onion rings on top. 1-2 onions for 500 - 700 g fillets.

Bake over medium heat for about 30-40 minutes.

Ragout in pots

This dish is served personally to everyone, very satisfying and fragrant!

Pieces of fish, potato slices, frying, any frozen vegetables to taste (for example, "lecho") are put in peas, salt and spices are added. We add water by about 1/3 - 1/2 of the pot, a couple of tablespoons of mayonnaise can be on top. Bake in a hot oven for 40 - 50 minutes. Instead of fish, you can take squid as a basis.

In addition to fish proper, they can be mentioned as main dishes.

We put the stuffed squid carcasses in a saucepan, pour boiling water, add seasonings, salt, mayonnaise (100 grams per medium-sized saucepan), close and put on medium heat. It takes a very short time to simmer, literally 5-10 minutes.

Not exactly fish, but a holiday dish beloved in our family - seafood pizza. .


And one more option for a hot dish for the New Year's Lenten table - for those who do not like fish.

mushroom snack

  • 1 can of red beans in their own juice (or boiled)
  • 300 g mushrooms, mushrooms or champignons,
  • 3-4 garlic cloves,
  • 1 onion
  • mayonnaise.

Finely chop the mushrooms and fry with chopped onions. Mix in a deep frying pan with beans, add garlic, mayonnaise and salt, simmer for 5 minutes.

Cake and fasting, at first glance, are not very compatible concepts. But a holiday is a holiday, to work hard the day before for the sake of your relatives and friends and please them especially delicious dish! At the same time, it will be lenten, and for the New Year's menu it will be more suitable than ever.

Napoleon cake"

  • Flour 4.5 tbsp.,
  • vegetable oil 1 tbsp.,
  • soda 1 tbsp.,
  • salt 0.5 tsp,
  • citric acid 0.25 tsp.
  • For cream:
  • semolina 250 g.,
  • sugar 0.5 kg.,
  • almonds 170 g.,
  • vanilla sugar 30,

Dough. Pour the flour into a large bowl. Pour in vegetable oil, as well as soda and citric acid With salt. We begin to mix, and then knead the dough. We crumple the dough into a ball, and so we leave it in a closed bowl, which we will put in the refrigerator for half an hour. The ball of dough is then divided into exactly 12 portions. One serving is rolled into a pancake, about 30 centimeters in diameter, the rest are returned to the refrigerator.

We heat the oven and put the dough on a baking sheet, bake until browned. We bake the rest of the cakes in the same way.

Cream. We clean the almonds, scalded in boiling water, grind and mix with sugar in one and a half liters of boiling water. Boil, then add to the mixture semolina and continue to cook until the cream becomes thick. We cut the zest from the lemon and cut it into pieces, both the zest and the lemon itself, previously freed from the white part of the skin. Grind these pieces together, and combine the resulting slurry with lean cream. Add vanilla sugar and beat.

We generously grease each cake with cream, turn the last cake into crumbs and sprinkle them with the last layer of cream. The cake will take half a day to soak.

Manna

  • 1 st. decoys,
  • 0.5 - 1 tbsp. sugar, to taste
  • a pinch of salt,
  • 1 st. warm boiled water.

Mix everything and leave for 0.5 - 1 hour.
Then add

  • 7 tablespoons of sunflower oil,
  • flour to the consistency of very thick sour cream,
  • 0.5 tsp soda.

Mix everything, add 1 tbsp. l. vinegar or chopped lemon with peel in a blender, mix. You can add any filling: apple slices, nuts, dried fruits, berries, canned pineapple, coconut flakes, cocoa, etc.

If you want to make a cake on this basis, you can cut the mannik in half and coat with jam.

Lenten gingerbread

An excellent base for a cake, but you can eat it with pleasure anyway.

  • 3/4 cup sugar
  • 0.5 cup raisins (or / and candied fruits),
  • 0.5 cup chopped nuts
  • 2 tbsp. spoons of jam,
  • 0.5 lemon, grated (or in a blender)
  • 2 tbsp. spoons of cocoa
  • 2 tbsp. tablespoons of vegetable oil
  • 1 cup (or a little more) warm water,
  • 1 tsp soda diluted in water
  • flour.

Mix everything, add flour to the consistency of thick sour cream, pour into a mold greased with vegetable oil, bake in a heated oven until cooked (check with a toothpick).

The cream, just like in Napoleon, is prepared on the basis of thick semolina porridge - add sugar and grated lemon there (margarine is possible, but not at all necessary).

Pie with apples, lemon pie, honey cake-

Shortbread honey cookies

  • 2 cups of flour,
  • 1 pack of margarine
  • 4 tbsp. l. Sahara,
  • vanillin,
  • ½ tsp soda,
  • 1 st. l. honey.

The dough is thick and not very soft. We roll out, cut out circles, stars or any figures, Bake over medium heat in a well-heated oven. Excellent, soft and elegant lean cookies for a festive New Year's table!


Oatmeal cookies

  • 3 glasses oatmeal,
  • 1 cup sugar (or less, to taste)
  • 1 pack of margarine
  • a pinch of soda
  • ½ tsp cinnamon.

Grind the flakes in a food processor, add sugar, margarine, soda, cinnamon. At the end of the kneading, add a little water (1-3 tablespoons) so that the dough from greasy crumbs forms into a lump. You can "crumple" the dough with honey, then put less sugar.

You can not grind the flakes, but pre-boil them, as oatmeal, and for density, add flour to the dough as needed. Such cookies will be softer.

brine biscuits

  • 250 ml. brine,
  • 70 g walnuts,
  • 200 ml. refined sunflower oil,
  • 500 g flour
  • 200 g sugar
  • 10 y. vanilla sugar,
  • 1 teaspoon of soda
  • a pinch of salt.

Peel the walnuts from the husk and chop with a blender. In a bowl, combine vegetable oil, brine, sugar, vanilla sugar and mix. Add flour with soda, nuts and knead.
Separate small pieces with a tablespoon, roll them into balls, flatten slightly to form cookies, and place on a floured baking sheet. Bake in an oven preheated to 180°C for 15 minutes.

It turns out toasted crispy biscuits, a little friable inside, but the next day it dries up.

"Raffaello"

  • Bananas 2 pcs.,
  • walnut 150 g.,
  • almonds 150 -200 g.,
  • coconut flakes for sprinkling - 50 g.

Grind the nuts with a blender, also grind the bananas to a puree state. Mix everything well. If the mass is too soft, you need to add more chopped nuts or, if desired, coconut flakes. Roll into balls the size of a walnut. roll in coconut flakes. Place in refrigerator for an hour and a half.
