  1. Melt the butter ahead of time and set aside.
  2. Dissolve yeast and butter in milk. Add flour, mix.

Important! The dough must be mixed with a spoon, not a blender, to achieve its airiness. The blender grinds the composition too much, making the mass heavy.

  • pressed yeast - 15 g;
  • flour of the 1st grade - 3 cups;
  • salt - about 5 g;
  • granulated sugar - 20 g;
  • fatty kefir - 200 ml (fat-free gives a bland taste);
  • odorless vegetable oil - 45 ml;
  • fresh green onions - 1 bunch;
  • eggs of the 1st grade - 2 units. + one more for lubrication;
  • round white rice - 50 g;
  • salt - "by eye".

Pies with rice, egg and green onions are prepared as follows:

  1. Combine warm (but not hot!) kefir with sugar, salt and vegetable oil.
  2. Sift flour, then add yeast. Pour in the kefir mixture.
  3. Mix the composition with a spoon or hands. Knead until a viscous consistency is reached. This will take several minutes.
  4. Cover the resulting bun with cling film or a towel and put it in a warm place for one hour.
  5. Rinse the green onions thoroughly, remove the white "tails" - we only need the green part. It needs to be finely chopped.
  6. Boil the rice in the usual way. In parallel, hard boil the eggs (10 minutes after boiling).
  7. Finely chop the peeled eggs, then mix with onion and rice. Don't forget to salt the resulting mixture.
  8. Lay the dough on a cutting board. It must first be divided into balls, and then rolled out.
  9. Spread the filling on each blank and seal the edges. Press them together hard enough to keep the shape of the products.
  10. Now place the pies on the baking sheet so that they do not touch each other. Top with beaten egg.
  11. Place the baking sheet in a warm oven. Bake the blanks until golden brown at a temperature of 180 degrees.

Do not rush to immediately serve the dish on the table. First, cover it with a towel and let it sit for 10 minutes.

How to fry in a pan?

According to this recipe, you can cook not only in the oven, but also in a pan.

For test:

  • sifted flour - 4 cups (about 800 g);
  • kefir or yogurt - 500 ml;
  • raw egg - 1 unit;
  • salt - 1 tsp;
  • refined sugar (regular, white) - 20 grams;
  • soda - 1 tsp

For filling:

  • boiled eggs - 6 units;
  • onion feathers - 1 bunch;
  • a pinch of salt and pepper.

It is preferable to take freshly ground pepper - it will be more fragrant.

Fried pies are prepared as follows:

  1. Mix all the elements from the test list. Add soda last.
  2. Finely chop the eggs and onion, mix them together, salt and pepper. The filling is ready.
  3. Roll out the dough into individual patties. Put the filling in the center of each (it is convenient to measure with a tablespoon).
  4. Now bend the edges of the cakes so as to cover the filling with dough. Pinch the edges firmly.
  5. It remains to pour oil into the pan and fry the workpieces. It will take a lot of fat, approximately half the height of the vessel. If you follow this rule, the dish will be ready in a couple of minutes.

  • milk - 0.5 cups (room temperature);

  • raw egg - 1 unit;
  • onion feathers - 1 kg (finely chopped);
  • boiled chicken eggs - 3 units. (cut in small pieces);
  • dill - one bunch (finely chopped);
  • salt, pepper - a couple of grams to your taste.

  • half a kilo of flour;

  • a pinch of salt;
  • 3 tablespoons of vegetable oil.

To prepare the dough:

  1. Mix flour, salt, baking powder, egg and sugar.
    Add kefir and vegetable oil. Mix everything thoroughly.
  2. We knead the resulting mixture for 2 - 3 minutes, after which we let the dough rest for half an hour.
  3. At this time, we are preparing a simple filling: finely chop the green onions and peeled eggs, mix and lightly salt.

We divide the settled dough into portions, roll them out, lay out the filling and seal the sides. The dish is cooked in the oven for 15 minutes at 180ºС until golden brown.

From yeast dough in the oven

To prepare a dozen pies on yeast dough, you will need:

  • sifted flour - 4 cups;
  • milk - one and a half glasses;
  • soft butter - 80 g (30 g of them - for dough);
  • sugar - about 10 g;
  • raw eggs - 1 unit. (for the test);
  • boiled eggs - 3 units. (For filling);
  • salt - 10 g (half a teaspoon in the dough and in the filling);
  • yeast - 7 g dry or 20 g fresh;
  • green onion - 40 g.

Meal preparation:

  1. We start preparing the dough. In milk heated to 40ºС (it should be warm, but not hot), we dissolve sugar, salt and yeast.
  2. Pour flour into a separate container. Add egg, butter and milk mixture to it. We mix.
  3. Knead the dough with your hands until it becomes springy, cover with a cloth and put in heat for one hour. During this time, the dough will double in size - consider this when choosing a container.
  4. At this time, proceed to the filling. Cut boiled eggs and green onions, mix them and salt.
  5. Cut the risen dough into portions the size of an egg. Each "egg" needs to be rolled into a cake. Then spread the filling one tablespoon at a time in the middle of each cake.
  6. When shaping the blanks, do not forget to pinch the edges.
  7. Grease a baking sheet with oil and sprinkle it with flour.
  8. Lubricate the pinch (seam) with a beaten egg. This does not affect the taste of the baked goods, but improves their appearance.

  • mashed potatoes - 0.5 kg;
  • chicken eggs, boiled to a hard yolk - 4 units;

Meal preparation:

  1. We prepare the dough in the usual way: we mix all the ingredients, knead the mass by hand and let it rest a bit. In the meantime, we are working on the filling.
  2. Place the mashed potatoes in a bowl. Finely chop the eggs and onion, add to the potato mass and salt it to taste.
  3. We roll out the dough into separate cakes, put the filling on each. On a note. Refrigerate the filling before laying out, otherwise the dough will bake unevenly.
