Cooking step by step:

  1. Diluted in 250 ml of warm milk, mix the yeast with buckwheat flour and leave to make a dough.
  2. After 2 - 2.5 hours, when the dough fits well, pour the remaining milk into it, pre-beaten yolks with sugar, cream mixed with melted butter.
  3. Pour wheat flour into the prepared dough slowly, stirring constantly with a mixer at medium speed.
  4. Add proteins pre-whipped with salt, mixing process - manually.
  5. After a 10-minute "rest", you can start baking in a hot and greased pan.

How to cook:

Heat the milk until it is warm, but not hot. Combine sugar, salt, sour cream, eggs and half of the milk, mix thoroughly, add flour and mix again until the dough becomes homogeneous, without lumps. Then gradually add the rest of the milk, stirring constantly. You will get 1 kg of pancake dough. At the end, add half the vegetable oil and leave for 1 hour to swell.

Then mix the dough again, and fry thin pancakes in hot pans on both sides. The most convenient way to do this is in special pancake pans, which have low sides and a non-stick coating. Before pouring the dough for the first pancake into the pan, you need to grease it with vegetable oil. Then you can no longer do this if the pan is special.

Grease each finished pancake with melted butter and stack the pancakes in a pile.

With veal and sour cream

You can cook such pancakes for dinner, but also for festive table they have the same place. The secret is that the brisket, before scrolling it through a meat grinder, is quickly fried in a hot frying pan. It is not at all the same as the traditional meat filling from boiled beef. With soft nadugi cheese and salmon


Another recipe from the Mama Gochi restaurant is pancakes with mousse made from soft Georgian nadughi cheese with lightly salted salmon. At the end, pour in the lemon juice, salt, pepper and beat again.

For pancake filling, fry asparagus, shallots, morels in a pan for 3-5 minutes, add bere blanc sauce and let stand for a couple of minutes. In parallel, boil the poached egg, and so that the yolk remains slightly runny.

How to make pancakes without milk

Crack the chicken egg into a deep saucepan or the most ordinary bowl. Immediately add the indicated amount of sugar to it. Connect the mixer to the mains and beat the egg-sugar mixture at maximum speed.


Now pour in the water, which is heated to a slightly warm state (this procedure is necessary so that the soda reacts with the ingredients faster). Whisk everything again for just a few seconds. Just enough to mix the ingredients.


Now add baking soda and add flour immediately. Turn on the mixer again and beat everything well. There should be no lumps, otherwise pancakes after frying will not be attractive in appearance.




Heat the pan, you can grease it with a little butter or vegetable oil. Pour half a ladle of the prepared dough into the heated pan. Ingredients:

  • milk - 800 ml;
  • flour - 360 g;
  • egg - 4 pcs.;
  • cocoa - 80 g;
  • dark chocolate - 100 g;
  • granulated sugar - 100 g;
  • salt - a pinch.

Cooking

Break the chocolate into small pieces. Melt in a water bath, add 400 ml of milk, wait until the chocolate is completely dissolved in milk. It is advisable not to bring this mixture to a boil.

Beat the eggs with sugar and salt, pour out the cocoa powder, pour the remaining milk, mix well with a whisk or mixer.

Pour the milk-chocolate mixture to the eggs, stir, add the pre-sifted flour. Thoroughly mix all the ingredients until a not too liquid consistency is formed. We send the dough to the refrigerator for a couple of hours.

We take out the dough, pour sunflower oil into it, proceed to fry the pancakes.

"Rampant" - the fourth day

Here comes the fun part. Spring was greeted with buns in the form of larks. Comic fistfights were arranged on the streets, they rode a hill, danced and were treated to pancakes until late in the evening. Let's cook delicious pancakes on kefir.


Ingredients:

  • kefir - 1 liter;
  • boiled water - 1 cup;
  • eggs - 4 pcs.;
  • wheat flour - 2 cups;
  • butter - 1 tbsp. a spoon;
  • sour cream 15% - 1 tbsp. a spoon;
  • granulated sugar - 1⁄2 cups;
  • salt - 1 teaspoon;
  • soda - 1/3 teaspoon.

The dough for pancakes "approached". Let's start frying. We cool the finished pancakes, grease with a sour cream-cheese mixture, put strips of fish in the center and wrap them in a roll. We cut into three parts. Decorate with fresh herbs.

And so the Masleny week came to an end. On this Sunday, everyone asks each other for forgiveness for their misdeeds, they burn an effigy and see off the winter. Let's surprise the guests and cook a pancake cake with cottage cheese.

Add melted butter, eggs, soda, granulated sugar, salt, vanillin and wheat flour to the milk. Knead a slightly thick dough with a whisk. Set aside for an hour.

Let's deal with the filling, for this you need: rub the cottage cheese through a sieve, mix with 1⁄2 part of the powdered sugar. Whip cream until stiff peaks, add remaining powdered sugar, beat again until the sugar grains are completely dissolved. Mix cottage cheese and cream, rub with a fork until smooth.

We fry pancakes.

We connect the cake. We shift one pancake on a flat dish, grease with a tablespoon of cream, evenly distributing the curd-creamy mass over the entire pancake. Cover with the next pancake and do the same procedure.

We coat the fourth and eighth pancake with 3 tbsp. jam spoons. We coat the pancakes until the cream runs out. pancake cake ready with cottage cheese. We send it to the refrigerator for a couple of hours so that it has time to soak.

Put the dough in a warm place for 40 minutes. It should rise 2 times. While the dough is rising, separate the yolks from the proteins from the eggs. Rub the yolks with salt and vegetable oil, and beat the whites with a mixer into a strong foam.

Add the rest of the flour and yolks to the dough and let the dough rise again. Then add egg whites and mix gently. If necessary, add flour.

Bake pancakes for Maslenitsa in a preheated pan on both sides. Lubricate with butter.

Pancake recipe for Maslenitsa 2 - Russian yeast pancakes

  • flour - 300 g,
  • milk - 3 cups
  • eggs - 2-3 pieces,
  • butter - 3-4 tablespoons,
  • sugar - 1-2 tablespoons,
  • yeast - 20-25 g,
  • water - 1 glass
  • salt - 1 teaspoon

Pour into a bowl warm water add sugar (1 teaspoon) and mix. Crumble the yeast into a bowl and stir well until the yeast is completely dissolved. Gradually add flour sifted through a sieve (1 cup) and mix well. Cover the bowl with the dough with a napkin or towel and leave to come up in a warm place.

Melt the butter or margarine and cool slightly (the butter should not be hot so as not to burn the yeast). Grind egg yolks with sugar. Add yolks mashed with sugar, salt, butter (you can use margarine or vegetable oil) to the dough that has come up - mix well.

Then, in small portions, alternately, sifted flour and milk are introduced into the dough: adding 0.5 cups of flour and pouring half a cup of a glass of milk. Each time you add flour, you need to stir the dough well, and then pour in the milk and mix well again - so that lumps do not form in the dough. Thus, add the remaining flour and milk. Cover the dough with a towel and let it rise again in a warm place.

When the dough rises, you need to mix it and put it up again. When the dough rises again, add the egg whites whipped with salt, mix gently and let the dough rise again. Do not mix the risen dough anymore, but immediately bake the pancakes, lifting the dough with a ladle from the bottom to the very top.
