Although, in order to cook thin pancakes on kefir, a certain amount of knowledge and skills is needed, even a beginner in the culinary art can cope with this, at first glance, somewhat difficult task. To do this, pay attention to the following tips:

  • To prepare thin porous pancakes, you should not put too much flour in the dough, otherwise in this case they can turn out to be quite fluffy and thick.
  • Put eggs in the dough in an amount of no more than 2 pieces. The more eggs, the denser the pancakes.
  • To obtain porous pancakes, soda is often used in the dough. Please note that before putting it into the dough, it is by no means quenched with vinegar. As a rule, it is mixed with sifted flour or quenched in kefir, and vinegar (if provided in the recipe) is added later. You can get porous pancakes without adding baking soda.   • Thin porous pancakes are usually not cooked with yeast.
  • For the test, you should use kefir, the temperature of which is close to room temperature. It is advisable to leave it overnight somewhere in a warm place on the eve of cooking pancakes.
  • Store-bought kefir can be successfully replaced with self-made sour milk. To prepare it, you need to take 1 liter of whole milk and leave it warm for one to two days. To speed up the souring process, you can add a small amount of kefir, fermented baked milk or yogurt to milk. Pancakes with sour milk are incredibly tender.
  • After the dough is ready, you need to let it brew for 30 minutes. This will allow it to acquire the correct consistency. After that, it is necessary to mix it, as the flour settles and the dough becomes heterogeneous.
  • Vegetable oil is added only once - before heating the pan. You do not need to use it further, since it is usually already included in the test. With an excess of it, pancakes will turn out to be too fatty and oily.
  • If the pancakes come out dryish, after baking they must be greased with melted butter. This can be done with a silicone brush.
  • For frying, it is recommended to use a cast-iron skillet, as it retains heat well.
  • To make pancakes fragrant, you can add vanilla sugar, vanillin or a small amount of ground cinnamon to the dough.




In my family Maslenitsa is a year-round concept! Pancakes are frequent guests on our table. A universal, I must say, dish is Russian pancakes: you can use it with honey, and with caviar, and with salted salmon, and with all kinds of fillings ... Then your imagination is enough.

Pancake dough is a different story: someone prefers water, someone prefers milk, and someone prefers kefir, for example.

Personally, I rarely bake pancakes on kefir, but quite often I buy kefir, which "hangs" in the refrigerator for a long time. Today is just the case, so we bake pancakes on kefir :-)

Sugar in the dough - only 1 tbsp. For me, this is ideal, because. It was these pancakes that I stuffed with sweet filling and salty.

To prepare dough for pancakes on kefir, we will prepare the products according to the list.

Mix eggs, salt, sugar and baking soda in a bowl.

Whisk lightly.

Add kefir, mix.

Then the turn of flour. Mix with a whisk so that there are no lumps.

Let's let the dough stand for about 10 minutes. During this time, the dough will become thicker, and it will become clear to you whether you need to add more liquid.

Add sunflower oil, mix.

This is how the dough for pancakes on kefir should be: it flows relatively easily from a spoon. From such a dough, pancakes will be thinner.

We heat the pan to a hot state, pour the dough on it and fry the pancake over moderate heat on one side ...

Then turn over and fry on the other.

From this amount of ingredients, I got about 30 pancakes (pan diameter - 18 cm). I can’t say the exact number, because. my son is hunting for pancakes: he loves them piping hot.

But there is another important point: I bake thin pancakes, and if I bake them thicker, there will be fewer pancakes, respectively.

Pancakes made from kefir dough are obtained with a slight sourness, very strong, but at the same time tender, do not break. You can wrap any filling in them.

Pancakes on kefir - general principles of cooking

Many people prefer to cook pancakes with kefir, and not with milk, because such pancakes turn out to be airy, delicate and very tasty.

The dough for pancakes on kefir should not be as liquid as for pancakes on milk. But to make pancakes thin, you can add a small amount of boiled water or even mineral water to kefir. You can also cook custard pancakes on kefir - for this flour should be brewed with boiling water.

Soda is often added to the dough for pancakes on kefir. Soda reacts with the acid contained in kefir - as a result, carbon dioxide is released. Thanks to this, pancakes are especially porous and airy. For 1 liter of kefir, you need to take one or two teaspoons of soda. The main thing is not to overdo it, otherwise the pancakes will respond with soda. The amount of soda depends on the desired thickness and structure of the pancakes. Pancakes are fried like kefir, usually in vegetable oil.

The technique for making pancakes on kefir differs little from baking pancakes according to other recipes. The finished dough is poured with a ladle or ladle into a frying pan heated with oil and baked on both sides until golden brown. The edges should be moderately dry and well fried.

Do not pour too much dough - the pancakes should turn out thin and the same thickness. To evenly distribute the dough on the surface of the pan, when pouring, you need to make rotational movements. At the same time, the pan is always kept at a slight slope.

You can turn the pancake over with a special spatula or a long knife. In extreme cases, you can use a fork. Experienced cooks flip pancakes without any additional devices - they just throw the pancake up, where it turns over in the air.

Hot pancakes on kefir are served with honey, jam, condensed milk, whipped cream or sour cream. Kefir pancakes go well with salty and sweet fillings. Cooled pancakes on kefir strongly stick to each other, so the entire stack can be sent to be heated in the microwave. After that, the pancakes will again lag well behind each other.

Pancakes on kefir - preparation of food and dishes

Before you start cooking pancakes on kefir, you need to measure the right amount of flour, sugar, salt and soda. The flour must be sifted - this helps to saturate the dough with oxygen and make the pancakes more fluffy and airy.

You also need to melt the butter and warm the kefir a little. If plain water is used in the recipe, it must be boiled. Eggs should be at room temperature, so they should be removed from the refrigerator in advance.

From the dishes you will need a cast-iron pan or a pan with a non-stick or Teflon coating. You can also use a special pan for baking pancakes, you do not need to lubricate it with oil. You also need to prepare a clean enamel bowl for the dough, a whisk, a glass for determining the amount of ingredients, a spatula, scoop or ladle and a brush for greasing the pan. Ready pancakes are laid out on a wide flat dish, greased with butter.

Such pancakes on kefir are very soft and tasty. A treat is prepared from a minimum of ingredients and does not require a lot of time.

Break the eggs, separate the yolks from the whites. Rub the yolks with sugar. Pour in two cups of kefir and mix until smooth. Gradually add flour, stirring constantly. Beat egg whites with salt until fluffy. Then pour the remaining glass of kefir into the dough and add whipped proteins. We heat the pan, grease it with oil and start baking pancakes. Fry each side until golden brown.

Recipe 2: Pancakes on kefir "Thin"

In thin pancakes on kefir, you can put any filling. You can also serve hot pancakes with honey, sour cream or jam. Such pancakes can be served for breakfast or for a festive table with delicious fillings.

  • Flour - 150 g;
  • Kefir - 120 ml;
  • Sugar - 80 g;
  • Water - 75 ml;
  • Butter - 50 g;
  • Eggs - 3 pieces;
  • One third teaspoon of salt.

Sift flour, mix with salt and sugar. Mix water with kefir and gradually add flour. Knead the dough, break the eggs into it. Beat the mixture with a whisk and pour in the melted butter. We mix everything thoroughly.

Recipe 3: Pancakes on kefir "Custard"

Such pancakes on kefir differ from previous recipes in the technique of preparation. To prepare custard pancakes on kefir, the same ingredients are used, and boiling water is also added to the dough.

Required Ingredients:

  • Kefir - 200 ml;
  • 2.1 egg;
  • A glass of flour;
  • Half a cup of boiling water;
  • Sugar - 2 tablespoons;
  • Vegetable oil - 15 ml;
  • A quarter teaspoon of soda;
  • A little salt.

Cooking method:

Sift flour and mix with sugar and salt. Beat kefir with egg. Pour the kefir-egg mixture into the flour. Beat with a whisk until smooth. Pour soda into boiling water. Then pour boiling water into the dough, mix everything and leave for 5 minutes. At the very end, pour in vegetable oil and begin to fry the pancakes in a frying pan heated with vegetable oil. If the dough is too thick, you can pour a little water.

Such pancakes on kefir are openwork, light and airy. For cooking, a standard set of products is used: flour, eggs, kefir, vegetable oil, sugar and salt with soda.

1. 0.5 liters of kefir and milk;

  • Kefir - 1 liter;
  • Eggs - 2 pcs.;
  • Sugar - 4 tbsp. l.;
  • Half a teaspoon of salt;
  • Vanillin - 1 pinch;
  • Cognac - 6 tbsp. l.;
  • One third of a teaspoon of soda;
  • Flour - on the eye.

Cooking method:

Beat eggs into kefir, add sugar and salt, mix everything thoroughly. Then add vanilla and soda. Gradually add flour. The consistency of the dough should be similar to liquid sour cream. Such pancakes on kefir are cooked quickly, but they turn out very tasty. Red caviar filling turns ordinary pancakes into an original holiday treat.

Required Ingredients:

  • 0.8 cups of flour;
  • Half a glass of cream;
  • Half a glass of kefir;
  • Half a teaspoon of soda;
  • Lemon juice - 3 ml;
  • 1 egg;
  • 1 tsp Sahara;
  • Salt - a pinch;
  • 30 ml sunflower oil;
  • A jar of red caviar;
  • 50 g butter.

Cooking method:

Beat the protein with sugar. Then add cream and yolk. We extinguish the soda with lemon juice and add to the mixture. We add kefir. Pour flour and add salt. Stir everything until the consistency of sour cream. We heat the pan, grease with vegetable oil and start baking pancakes.

We spread the finished pancakes in a pile on a plate greased with butter. Put a piece of butter on each pancake. Caviar can be put into each pancake with a teaspoon or served in a separate bowl.

  • So that there is no abundance of vegetable oil in the pan, you can take a small piece of gauze and coat the surface of the pan with it;
  • Ready pancakes are stacked, and a piece of butter is placed on each pancake. Cover the entire pile with a napkin or towel so that the pancakes will breathe, but will not cool down;
  • In the process of making pancakes on kefir, slaked soda is added to the dough before flour;
  • Vegetable or ghee is always added last;

Compound:
Kefir - 500 ml
Eggs - 3 pcs.
Wheat flour - 120-150 gr
Soda - 0.5 tsp
Salt - 0.5 tsp
Sugar - 1 tbsp. l.
Sunflower oil - 2 tbsp. l.

Cooking:


In a bowl, beat the eggs with a whisk, add sugar, salt and soda and mix well again.



Pour in sunflower oil and add the sifted flour. You may need more or less flour, you need to look at the consistency of the dough.


Stir the flour so that there are no lumps and then pour in the kefir. Mix the dough well and let it rest for about 20 minutes. Then you can start frying.



Before the first pancake, grease the pan with oil, remove excess oil. You can chop a piece of raw potato on a fork, dip it in oil and thus grease the pan. Pour a portion of the dough into the center of the pan and tilt to distribute the dough evenly.

In a large bowl, beat the eggs with salt with a whisk and then pour in boiling water, constantly stirring the contents of the bowl with a whisk. Work intensively with a whisk to get a homogeneous mixture.



Now let's pour kefir.



Add soda and sugar. Mix the dough. Bubbles will appear on the surface of the dough - this is kefir reacting with soda.



Pour in any vegetable oil, it is better if the oil is odorless.



Gradually add the flour and mix the dough thoroughly with a whisk so that no lumps form.



In the end, we should get such a pancake dough. Let's let it sit for ten to twenty minutes.



We put the pan on a strong fire, grease the surface of the pan with vegetable oil, pour a small portion of the dough into the pan. Turn the pan in a circular motion so that the dough is evenly distributed over the surface of the pan.



As soon as bubbles appear on the surface of the pancake, and we see a brown border around the edges of the pancake, turn the pancake over to the other side.



Bake pancakes on both sides until golden brown. We bake the next pancake, no longer greasing the pan with oil.



Ready-made pancakes are served hot with your favorite jams, honey, butter, sour cream. We serve thin pancakes with holes on kefir with orange jelly. Enjoy your meal!

Compound:
Kefir - 1 glass
Water - 0.5 cups
Eggs - 1 pc.
Sugar - 1 tbsp. l.
Salt - 1 pinch
Soda - 1/5 tsp

Wheat flour - 1 cup

Cooking:



Kefir for pancakes slightly warm or use warm water. Pour the kefir and water into a bowl, add the egg, salt and sugar. Whisk with a whisk until smooth.



Add flour and stir the dough. Leave it for 5 minutes and put the pan on the stove, let it heat up.



Add vegetable oil to the dough and mix the dough well with a whisk.



Lubricate the pan with vegetable oil and on a fire a little more than average, we begin to bake pancakes. The dough should turn out to be liquid, because our pancakes will be thin.



Fry pancakes on both sides. From this portion of the dough, 10-12 pancakes with a diameter of 20 cm are obtained.



In such pancakes you can wrap any sweet filling. You can just serve them to the table with sour cream, jam, condensed milk. Enjoy your meal!

Pancakes are thin, tender and very tasty. They go great with honey or berry sauce. The amount of flour for such pancakes must be adjusted - if the eggs are large enough, you may need to add another tablespoon of flour to the dough. Allow dough to rest for 15 minutes before cooking.


Compound:
Kefir - 500 ml
Refined sunflower oil - 20 ml
Wheat flour - 5 tbsp. l.
Sugar - 1 tbsp. l.
Soda - 0.5 tsp
Salt - 0.5 tsp
Chicken eggs - 3 pcs.

Cooking:



Beat the eggs well with a whisk.



Add soda, salt, sugar.



Stir in sunflower oil and sifted flour - 5 tablespoons with a slide.



Add half the amount of kefir. Beat well.



Add the rest of the kefir. Leave the dough for 15 minutes.



Pour a small amount of dough into a lightly greased hot frying pan. Spread it evenly throughout the pan. Bake on both sides until done. It is better to turn the pancakes by hand.

Recipe for pancakes without eggs on kefir

If you're craving pancakes but find there aren't any eggs in the fridge, don't fret! Pancakes can be baked without eggs.

Compound:
Kefir - 1.5 cups
Wheat flour - 100-120 gr
Soda - 0.5 tsp
Salt - a pinch
Sugar - 2 tbsp. l.
Sunflower oil - 2 tbsp. l. (in the dough) + for frying

How to cook pancakes on kefir without eggs


Heat half of the yogurt and pour into a bowl, add soda, flour, sugar and salt. Stir so that there are no lumps.



Pour in the remaining kefir and stir again.



Then pour in sunflower oil. Leave the dough for 15 minutes and you can fry the pancakes.



Lubricate the pan with sunflower oil, pour half a ladleful of dough and evenly distribute. Fry until the surface of the pancake is tightened and not sticky.


It is more convenient to turn the pancake with both hands, prying the edge with a spatula. Grease the pan before each pancake.



Pancakes after frying put briefly in a plastic bag.


Pancakes on kefir without eggs are ready. Serve pancakes for tea, coffee.

Ingredients for 3 servings:
Ryazhenka - 500 ml
Kefir - 200 ml
Eggs - 2 pcs.
Sugar - 2 tbsp. l.
Salt - 1 pinch
Flour - 1.5 cups

Cooking:
Mix eggs, salt, sugar, kefir, fermented baked milk. Mix until the spices dissolve and bubbles appear on the surface. Then add a little more flour. Mix everything thoroughly until a homogeneous mass without lumps.
We remove the dough in the refrigerator for about 30 minutes.

Usually, in order for kefir pancakes to turn out lush and ruddy, they are prepared with the addition of soda, or, of course, you can not add it. Instead, use yeast. And it will be better if you let the dough rise several times.

Compound:
Kefir or curdled milk - half a liter
Yeast - 10 gr
Sugar - 1 tbsp. l.
Salt - 1 pinch
1 glass of boiling water
Flour - 1.5 cups
Eggs - 3 pcs.
Vegetable oil - 1/4 cup (50 ml)

How to cook thick yeast pancakes on kefir

Whisk the eggs with a pinch of salt and sugar. In a mug with 50 ml. warm water to dissolve the yeast. Pour warm kefir or yogurt into the egg mass.



Bring to a homogeneous consistency and sift flour into a bowl. Add flour little by little, stirring constantly. Knead the dough until the state of thick sour cream.



Dissolved yeast is introduced into the bowl with the dough. Then, in a thin stream, pour in one glass of boiling water, and stir continuously. Thanks to boiling water, our pancakes are custard, openwork.
It is better to knead the dough in a large bowl, because during the rise it will double in size. Cover the dish with the dough for pancakes with a light napkin or cover with a lid. Leave in a warm place for about one hour.



Then, when the dough is ripe, these bubbles should appear on the surface. Add vegetable oil and mix. Now you can start frying pancakes. To make the frying process faster, use two frying pans.



We bake yeast pancakes in a well-heated pan, on both sides. The pan does not need to be lubricated with oil, as the right amount of oil is in the dough. You can watch the holes appear on the dough when it is in the pan.
