How to make jelly from fresh berries. Vitamin cocktail: experimenting with different berries

Calories: Not specified
Time for preparing: Not specified

Even if in the summer you did not have time to fill the freezer with berries and fruits, it does not matter - now you can buy everything in the store. Frozen berry mixes, boxes with strawberries, cherries, black currants, raspberries - choose what you want! Of course, homemade is always better, but for compotes and drinks, selected berries are not needed, the main thing is that they are not frozen several times. Also I like to drink this one.
For jelly, it is better to make a mix of frozen berries, then the taste will be richer and the color brighter. For example, take raspberries and blackcurrants. You need to defrost the berries, just let them thaw a little so that you can grind them into a puree. What consistency to make jelly from frozen berries and starch is a matter of taste. Someone likes a very thick one that can be eaten with a spoon, while someone likes a liquid one. Density is adjusted by adding starch. If per liter of berry broth add 2-3 tbsp. l. starch, jelly will turn out liquid, if you put two tablespoons more - it will be thick.

Ingredients:

- frozen berries - 200 gr. (equally raspberries and black currants);
- sugar - an incomplete glass (to taste);
- water - 1 liter + 3 tbsp. for starch;
- potato starch- 3-5 tbsp.

How to cook with a photo step by step

We take the berries out of the freezer, pour them into a bowl and let them thaw a little to facilitate the work of the blender. We put on a strong fire a pan with a liter of water.

After about ten minutes, the berries will become softer. Pour them into a glass of a blender and grind into a puree. It is not necessary to make it homogeneous, if pieces of berries remain - this is not a problem, we will still filter the berry broth.

We shift the ground berries into a saucepan with boiled water. As soon as it boils again, reduce the heat and cook for about ten minutes.

We turn off the fire. We filter the berry broth through a fine sieve or colander. If the colander has large holes, we cover the bottom with gauze so that the berry pulp and seeds do not get into the broth.

We pour over the pan with water, pour the strained broth into it. Put on high heat again, add sugar to taste.

While the broth boils, dilute the starch. Pour into a deep bowl right amount potato starch, pour in a little water to moisten the powder. Whisk quickly to a smooth, lump-free mixture. Gradually add cold water, make the density of starch such that it pours from a spoon in a thin stream.

The berry broth has already boiled, now you need to pour in the starch. Spoon continuously stir the broth and pour in the starch in a thin stream, stirring vigorously all the time so that lumps do not turn out.

Pour cooled or warm jelly from frozen berries into glasses and serve. Very tasty with cheesecakes, casseroles, you can pour semolina or jelly rice porridge. Enjoy your meal!

Those. ready-made briquettes with jelly concentrate.

Kissel is a traditional Russian dish

In the oldest chronicle of the Tale of Bygone Years, as far back as 1113, there is a mention of Belgorod jelly. In those distant times, jelly was cooked without starch, the technology was completely different. Nevertheless, courage, resourcefulness and jelly prevailed over the Pecheneg nomads. And all thanks to its useful properties.

Kissel health benefits

I immediately recall a fairy-tale country with milky rivers and jelly banks. The benefits of jelly are confirmed not only by fairy tales, but also ethnoscience. Starch, on the basis of which jelly is usually boiled, is able to absorb harmful substances and salts. Kissel perfectly cleanses and strengthens the body. Children who drink jelly recover faster from illnesses. From which only jelly is not boiled: in addition to sweet fruit jelly, oatmeal, milk, honey jelly are famous.

The berries that make up the jelly also determine its healing properties. For example, viburnum and raspberry jelly is recommended for various SARS. For pulmonary diseases, cranberry jelly is good. In the season of colds, rowan jelly is recommended for prevention.

Bird cherry jelly perfectly strengthens the heart. Red and black currants will share their natural vitamins with us. And besides the benefits, jelly is also delicious.

The technology for making jelly from fresh, frozen and dry berries is somewhat different. But starch and sugar are used everywhere. For thick jelly, such that the spoon is standing, 50 g of starch is taken per liter of liquid. This is 3 tbsp. with a hill. For jelly of medium pleasant density, we take 2 tbsp. with a slide, for thin - 1 tbsp. spoon. Try which consistency is best for you and your child.

How to cook jelly from fresh berries

When preparing jelly from fresh berries I would like to keep as many useful substances as possible. Therefore, from the prepared berries, we first outlive the juice, and it will not participate in boiling.
So,

  • Water - 1 liter
  • Any fresh berries - 200 g
  • Sugar - 4-5 tablespoons
  • Starch - 2 tbsp. with a slide

We wash the berries, wipe through a sieve. Fill the pomace with water, let it boil. Add sugar and boil for 15 minutes. Strain the broth through two layers of gauze. Pour about half a glass of broth into a separate bowl to dilute the starch in it. The rest is returned to the fire. Bring to a boil and, stirring, pour in the diluted starch. The liquid begins to thicken almost before our eyes. Turn off and let the berry broth cool. Pour berry juice into a warm broth (not hot), stir and you can enjoy fragrant jelly. So you can cook not only monokisel, from one of some seasonal berries, but also combine berries. Well, very tasty.

How to cook jelly from frozen berries

Here, too, everything is simple: the berries do not need to be defrosted before cooking. And cook them for a minimum time. And it’s better not to cook at all - raspberries, for example.

  • Water - 1 liter
  • Frozen berries - 200 g
  • Sugar - 4 tablespoons
  • Starch - 2 tablespoons with a slide

Boil water with sugar. Pour half a glass of syrup into a separate bowl, in which we then dilute the starch. Put the frozen berries into the boiling syrup. We cook for five minutes. At your discretion, the berries can be left or strained. Introduce diluted starch into the compote, boil for a minute and pour into glasses to cool.
If you use frozen strawberries for jelly, then it is better not to cook it with other berries. It is better to make jelly exclusively from strawberries. Boil strawberries for no more than two minutes and be sure to leave the berries. So jelly turns out even more fragrant and tastier.

Frozen raspberries are best not cooked at all. We lower the berries directly into a glass with hot jelly made from other berries. So raspberries will give us all their flavor and vitamins.

Kissel from dried berries

Kissel from dried berries is also very tasty and healthy.

  • Dried berries - 50 g
  • Water - 3 glasses
  • Sugar - ¾ cup
  • Starch - 2 tbsp.

Pour dry berries with 2 cups of cold water and set to boil for 15-20 minutes. We filter the broth, and knead the berries well. Pour the cake with a glass of water and bring to a boil. Strain again and pour into the broth. Add sugar, bring to a boil and add diluted starch. As soon as the jelly thickens, turn it off.

Kissel from fresh berries without cooking

Kissel without cooking is the most useful. And if berries allow, then it’s just ideal to make just such a kissel not only for children, but also for adults. Such a jelly from viburnum is excellent. First, we will dilute 1 tbsp. a spoonful of starch a small amount cold boiled water. We mix 50 g of viburnum juice with honey or sugar to taste and mood. Then pour the juice with two glasses of hot boiled water. Add diluted starch and mix well. Kissel from viburnum is ready.

Other juicy berries are also worth experimenting with. Involve the children in the cooking process, then they will enjoy them with great pleasure.

Naturally, neither their frozen version nor canned ones can compare with fresh berries and fruits. Nevertheless, they have one indisputable advantage. For example, from seasonal berries and fruits, you can cook kissels and compotes in long-known combinations. And these combinations are due to the ripening period of specific fruits. After all, by the time the plums ripen, the cherry is already coming off, and the strawberries will not wait for the same blackcurrant or gooseberry. And in places where you can pick fresh cranberries, you will never grow apricots. So it is very problematic to cook cranberry-apricot compote or strawberry-cherry jelly from fresh berries. But you can cook such jelly from frozen berries without any problems!

Of course, we are not pioneers. Our predecessors also prepared vitamins for the future, only they did it differently. They boiled more and more jam and dried apples, pears, cherries and plums. And what do we have? Yes, go to any supermarket! There you have cherries, and plums, and cranberries, and lingonberries, and currants, and strawberries ... And all this in a freshly frozen form. Or you can not go to the store, but prepare seasonal berries for the future, freezing them yourself. Then you will definitely be able to cook such jelly as you wish, having come up with your own own recipe. Or you can choose any of the recipes offered.

Frozen raspberry and cranberry kissel

Marvelous nice combination sour cranberries and sweet fragrant raspberries. By the way, this recipe for making jelly from frozen berries can be used as a base. In the same way, you can then cook jelly from cherries, lingonberries or plums.

Ingredients:

  • Cranberries - 1 cup;
  • Raspberries - 1 glass;
  • Potato starch - 3 tablespoons;
  • Water - 4 liters;
  • Sugar - at your discretion.

Cooking:

Pour water into a saucepan, put it on the stove and let it boil. Pour frozen berries into boiling water and cook for ten to fifteen minutes. After that, we filter the resulting berry compote and put sugar in it. Berries can be thrown in - we will no longer need them. Put the broth on the fire again, and while it boils, dilute the starch cold water.

And now the most interesting. As soon as the broth boils, reduce the heat and begin to stir the contents of the pan with a spoon in a circle. At the same time, pour the diluted starch into the pan in a thin stream. Before your eyes, the broth will begin to turn into a viscous transparent jelly. Cook it for another two minutes and turn off the fire. Our beautiful, fragrant and delicious jelly from frozen berries is ready!

Kissel from frozen sea buckthorn

We offer you a recipe for an original Russian drink made from sea buckthorn. This drink is brewed very simply, although the recipe for its preparation is somewhat different from the previous one.

Ingredients:

  • 1 glass of sea buckthorn berries;
  • An incomplete glass of sugar;
  • 2 tablespoons of potato starch.
  • 3 or 2.5 glasses of water.

Cooking:

We wash the berries and slightly defrost. They should not melt completely, but should be soft enough to be crushed. So, put the sea buckthorn in a bowl and crush them with an ordinary crush for mashed potatoes. You can grind the berries in a blender.

Now we take a saucepan of a suitable volume, pour water into it and put sugar. We put the water on the fire and let it boil. Put crushed berries into boiling water, and then add starch diluted in cold water. Stir and cook the jelly for three minutes. That's all. Our jelly is ready!

Vitamin jelly from frozen berries

Another recipe for sea buckthorn jelly, but this time we will supplement it with other healthy berries.

Ingredients:

  • Half a glass of cranberries;
  • Half a glass of cranberries;
  • 1 glass of sea buckthorn;
  • 1 glass of granulated sugar;
  • 3 tablespoons of potato starch.
  • 4 liters of water.

Cooking:

Pour water into a saucepan and put it on fire. While the water is boiling, rinse the frozen berries. We leave the cranberries and lingonberries whole, and grind the sea buckthorn into a puree. Dilute starch with cold water. When the water boils, put the lingonberries and cranberries into the pan and cook the berries for about ten minutes. After that, we filter the broth, discard the berries, and put the pan on the fire again and put sugar and sea buckthorn puree in the broth. Again we wait for the broth to boil and, stirring it, we introduce the starch diluted with water. Boiled jelly cook no longer than five minutes. Cool down and take a sample.

Frozen strawberry jelly

Recipe from the classic series. And given that we will cook jelly from frozen strawberries, this is also its simplified version.

Ingredients:

  • 400 grams of frozen strawberries;
  • 6 tablespoons of granulated sugar;
  • 2 tablespoons of potato starch;
  • 2 liters (approximately) of water.

Cooking:

Preparing this jelly is very, very simple. First, pour water into a saucepan and put it on the stove. Add sugar and wait for the water to boil. After that, put all the berries in the pan, again wait for the water to boil and immediately take out the strawberries. Now we transfer the strawberries to a blender and turn it into a puree, and dilute the starch with cold water. In a boiling broth, stirring it continuously, we first introduce diluted starch, and then add strawberry puree. Stir, let the jelly boil and turn off the fire. Serve completely cooled.

  1. If you cook jelly only from sweet berries, then add a little citric acid to it. Kissel will taste better.
  2. The density of jelly depends on the amount of starch. The more you put it in, the thicker the jelly will turn out.
  3. Kissel from frozen berries does not like prolonged boiling. After adding starch, jelly can be boiled for no longer than five minutes, otherwise it will turn out to be very liquid.

It's so easy and quick to cook delicious berry kissel. And frozen berries give us the opportunity to experiment with flavors and enjoy this pleasant and healthy drink even after the berry season. Just do not forget that you need to cook with pleasure. Bon appetit and success in the culinary field!
