Simmer for a few more minutes, add the zucchini, cover with a lid and simmer for 5-7 minutes. Chop the potatoes coarsely, add to the vegetables and pour boiling water over them. The water should cover the vegetables by two fingers, don’t forget to add salt. Cook until done. Open the lid, let cool and puree all the vegetables in a blender. Add the yushka gradually to bring the soup to your desired consistency. At the end, add spices, serve, sprinkle with green onions and add croutons if desired.
