I dare to suggest that in Rus' a large number of pies were baked during the Apple Savior. This is a Christian holiday that is celebrated on August 19th and actually has pagan roots. The holiday is dedicated to the new apple harvest. On this day, all believers brought fruits and honey to the church for consecration. It was even believed that apples should not be eaten before the Apple Savior. Here's a micro-excursion into history for you.

There are no problems with apples these days. You can buy them in modern supermarkets all year round, and the product is presented in at least five types. And for thrifty gardeners, winter varieties are stored almost until the spring of next year. So if you want to bake an apple pie, there will be no problems.

The main thing that distinguishes apple pie is the RECIPE, which is very simple and even the most inexperienced cook can do it.
Now, with your permission, I will make the dough for the pie. As you know, it is the basis. No dough - no pie. The apple pie itself will not be purely apple; in addition to fresh apples, we will add apple jam and dried apricots (dried apricots) to the filling.

Remark: The pie that you see in all the photos and videos is made from ½ of all the ingredients needed for the dough. But I give the recipe itself in in its original form, i.e. full.

Pie dough: ingredients

For the test we will need:
- eggs – 2 pcs.;
- sugar - 2.5 tablespoons;
- salt – ½ teaspoon;
- flour - 3 cups (maybe a little less or more, depending on how much the dough takes);
- vegetable oil – 2 tablespoons;
- melted butter – 100 grams;
- warm milk – 1 glass (200 ml.);
- dry yeast – 3 teaspoons (without a slide);

Procedure for preparing the dough

Step 1. Pour some water into a glass and pour the yeast into it; while we mix the rest of the ingredients, the yeast will dissolve. I always dissolve them in water, even if the recipe doesn't call for it. Firstly, they dissolve faster in water than, for example, in milk. And secondly, kneading dough in which the yeast is evenly distributed throughout the entire volume is better than when it remains granules.

Step 2. Lightly heat the milk, melt the butter and combine everything in a bowl in which we will knead the dough.

Step 3. Break the eggs there and pour in vegetable oil.

Step 4. Then add sugar and salt.

Step 5. Mix everything properly with a whisk until foam forms and pour in the dissolved yeast.

Step 6. Sift the flour and gradually add it to our dough. There is no need to pour it all at once, there may be a lot and the dough will turn out very tough.

Step 7 Knead soft dough. Grease a clean bowl vegetable oil, place the dough in it and cover with cling film. In this state we put it in the refrigerator for an hour and a half. NOT IN THE FREEZER!!!

Meanwhile, while the pie dough is in the refrigerator, prepare the filling. I said above that I make my pie with a filling of fresh apples, apple jam and dried apricots. Therefore, pre-soaked in hot water I cut us into pieces with dried apricots. I also cut fresh apples and mix everything with apple jam. The proportions are completely arbitrary.

If you are making your pie with only apples, then cut them into slices and sprinkle with sugar. It is, of course, better to cut apples just before storing them. Otherwise they will turn black. There is another option: sprinkle the apples with lemon or orange juice, then they will not turn black and will calmly wait their turn.

Recipe: making a pie with dried apricots and apples

Meanwhile, an hour and a half has passed, the dough is ready, the filling is ready. Let's get started:
Step 1. Divide the dough into 2 parts. One is larger, the other is smaller. The one that is larger is the basis that will be smaller top part. Roll out the base so that there is enough for the sides of the pan in which we will bake. I have a round one. You can have a rectangular one or any other.

Step 2. We spread the filling on the base, cover with the second part of the dough, which was also previously rolled out. The diameter of the “lid”, let’s call it that way, is smaller than the base and approximately equal to the diameter of your mold.
We connect the edges of the two layers of dough (top and bottom) and braid the same braid as on. But before that, trim off the excess dough around the edges, it will be useful for decorations. Be sure to make a small hole or cut in the center of the cake. This is done so that it does not break during baking.

Cover the finished decorated apple pie with a napkin and leave in a warm place for 30 minutes to rise. Before baking, brush with egg, maybe only yolk, and place in the oven. Baking time is about 20 minutes at 180˚C. We check readiness with a toothpick by piercing the pie in the area of ​​​​the edges, where the dough is thicker.

Leave the finished apple pie in the mold to cool slightly and only then remove it from the mold. I hope the apple pie recipe I described will be an excellent decoration for your table.

Cooking method:

  • 4 red apples
  • 1 glass of water
  • 4 tbsp. Sahara
  1. The dough is very easy to prepare. Take one and a half glasses of flour (250 gr.), sift. Cut the cold butter into pieces and combine with flour. Using your fingertips, rub the butter and flour together to form crumbs (you don't need to rub the butter completely). Add sugar, a pinch of salt and egg yolk.
  2. Adding a little bit at a time ice water, start kneading the dough. The result should be a not very tight dough. We form the dough into a flat cake, wrap it in food plastic, and hide it in the refrigerator for an hour. Refrigerate the dough to make it easier to work with.
  3. On a floured table, roll out the dough so that the cake is much larger than the size of the pan.
  4. Grease the apple pie pan well with butter. Place the cake in the mold. The cake should lie on the bottom and sides of the mold so that you get a dough shape.
  5. Cut the dough that goes beyond the boundaries of the mold with kitchen scissors. This way we will get a beautiful and even pie basket.
  6. We prick our crust with a fork so that it does not rise during baking.

  10. First, let's make the syrup. Take a wide saucepan, pour a glass of water into it, put 4 tbsp. Sahara. Bring to a boil.
  11. For this apple pie with roses, we buy red apples, preferably those whose flesh is even slightly reddish. Wash the apples, cut them in half, remove the cores. We cut each half into slices approximately 1-2 millimeters thick.
  12. Place apple slices in hot syrup. We place them so that they do not stick to each other. If there are a lot of apples and too little syrup, you can add a little water.
  13. Cook the plates in syrup over low heat. The apple slices should become translucent. Depending on the type and thickness of the plates, this may take 2-5 minutes. Ready apple slices carefully remove from the syrup and place on a plate to drain the syrup.

  15. Now that the petals for the roses are prepared, let’s quickly prepare the custard. So, we separate the yolks from the whites. Add two heaped spoons of flour.
  16. Pour 50 gr. sugar, add vanilla.
  17. Add 3 tbsp. cognac or water, mix with a broom.
  18. Since the mixture turns out to be quite thick, add a little more milk and whisk thoroughly with a broom so that there are no lumps left.
  19. Pour the remaining milk into a saucepan, add 50 g. sugar, put the pan on the fire. Pour the egg mixture into warm milk. Don't forget to stir with a broom to avoid the formation of lumps.
  20. Without ceasing to stir, bring the cream to a boil, cook for 2-3 minutes until thickened. To give the cream a special taste, you can add lemon zest.

It is amazingly easy and quick to prepare, for which it is sometimes called a “five-minute pie.” Let's bake a magnificent and delicate delicacy with apples - one of my favorite types homemade baked goods!

Ingredients:

  • 3 eggs;
  • half a glass of sugar;
  • an incomplete glass of flour;
  • 1 teaspoon of soda;
  • 1 tablespoon vinegar;
  • 5 – 7 – 10 apples (depending on their size).

That's all, as you can see, the set of products is minimal, and the pie is enough for the whole family, because it is very fluffy!

How to bake:

The most time-consuming task in this recipe is peeling the apples, which we will do first. After washing them, cut them into quarters and remove the cores and peel.

Well, this time I decided to try baking in cast iron frying pan- to find out how it will turn out, because not everyone has springforms. I’ll say right away: if not, it’s worth buying - for such pies and biscuits. The pie stuck to the bottom, despite being greased with oil, and it took a lot of pain to get it out by prying it up with a spatula :)

Cut the apples into thin small slices and scatter them evenly over the bottom of the pan. Now you can cook thick crust, without fear that it will settle while we are fiddling with the apples.

Beat the eggs with sugar using a mixer; there is no need to separate the yolks from the whites, as for a sponge cake!

Beat for a minute - one and a half, this is enough to get a fluffy thick mass with bubbles.

Pour flour into a bowl, soda into the flour, quench with vinegar and mix thoroughly, but carefully, so as not to knock down the foam.

Pour the dough onto the apples, distribute it evenly with a spoon, and place the mold in a preheated oven.

It bakes for five minutes, although not 5 minutes, but still quite quickly - 20 - 25 minutes, over medium heat, closer to high. Just check from time to time with a stick so that it doesn’t turn out that the top is already burnt and the middle is still runny. In this case, the heat needs to be reduced a little, not sharply, so that the cake does not “shrink”.

After tasting the pie with a skewer again and making sure that it is dry, we take the pastry out of the oven.

We wait until it cools down a little and remove the cake from the mold. It is convenient to turn it over onto the lid of the pan, and then from the lid onto the dish.

Cut the pie into portions - look how fluffy and fluffy it is! Sweet dough perfectly complements the sour taste of tender baked apples. Just what you need for a soulful tea party!
