  1. Chop small onion. Pepper, large onion and carrot cut. Mix the pate with cheese, yolks, small onions and peppers. Salt, pepper and season with paprika.
  2. Cut the meat so that a layer is obtained. Salt and pepper. Put the filling on the meat, roll up and tie with a thread.
  3. Heat the oil in a frying pan and fry the resulting roll on each side for 7 minutes. Add chopped onions and carrots. Pour in the broth, dry white wine, reduce the heat and simmer covered for 40–50 minutes. Heat the oven to 180°C.

  1. Wash the squid carcasses, put in salted boiling water and cook for 4 minutes. Drain in a colander, cool and cut into cubes.
