You don’t have to squeeze out the juice, then the dough will be more liquid and require more flour;

    This is interesting! Old, overripe zucchini releases much more juice than young ones. For old vegetables, removing liquid becomes a necessary step, as does removing seeds.

  • Half of the flour in the recipe can be safely replaced with semolina. It will absorb any remaining excess liquid. You can do this simultaneously with other ingredients, or you can first add semolina to the zucchini, and after a few minutes all the other ingredients;
  • To make the cake more fluffy, you can add a little baking powder or soda to the dough.

  • 1 medium zucchini;
  • 1 small carrot;
  • 1 onion;
  • 1 egg;
  • ground black pepper to taste;
  • flour.

Grate zucchini and carrots. If necessary, squeeze out excess juice from the zucchini. Finely chop the onion and add to the zucchini and carrots. Egg and flour are also added there. Advice! Instead of tomato paste or ketchup, you can use mayonnaise, sour cream, a mash of tomato paste, salt, sugar, vinegar and your favorite seasonings to lubricate the crust. If you have absolutely nothing on hand, you can even use regular vegetable oil or butter to make the cake juicy.

After the filling is placed on the crust, cover the pan with a lid and leave the pizza to bake until done. A few minutes before the end, remove the lid to drain excess water from the dough and filling.

Zucchini pizza without crust

You can prepare delicious zucchini pizza without the usual crust, using the casserole principle. This recipe requires the following ingredients:

  • 1-2 young zucchini;
  • 100 g hard cheese;
  • 3-4 sausages;
  • 2 eggs;
  • 1 tbsp. l. flour;
  • 0.5 tbsp. milk;
  • 2 tomatoes;
  • 1-2 cloves of garlic;
  • salt and pepper to taste.

In a heated frying pan, fry the zucchini cut into slices until tender (pre-wash them, peel them and add salt). It is important not to overcook them; it is better to remove them from the pan a minute before they are ready. Tomatoes and sausages are cut into circles, the garlic is finely chopped, and the cheese is grated on a coarse grater.

Place a layer of zucchini in a suitable baking dish, a layer of tomatoes on top of them, and then garlic and sausages. The last layer is grated cheese.

In a separate bowl, mix eggs with flour, then add milk there, stir everything until the lumps dissolve. Salt and pepper are also added there. Pizza in the oven turns out very tasty and low in calories, especially if you choose the right filling. For this recipe you will need:

  • 400 g zucchini;
  • 3 eggs;
  • 1 tbsp. flour (it is better to use coarse flour);
  • a bunch of greenery;
  • 2 tomatoes;
  • 50 g cheese;
  • spices to taste.

Zucchini pizza dough in the oven is prepared according to standard recipe: zucchini is grated on a coarse grater, mixed with eggs, chopped herbs, flour and spices. If you don’t have wholemeal flour on hand, you can add a couple of tablespoons of bran to the usual one.

Mix the dough well and spread it in an even layer on a greased baking sheet (or silicone baking mat). The layer thickness should be approximately the same everywhere and not exceed 1 cm, otherwise the dough will not bake well.

Place tomatoes cut into circles on the dough, salt and pepper them. In this form, the pizza is placed in an oven preheated to 180 degrees for about half an hour.

Once the dough has set, you can put the filling on top. There is complete scope for imagination here. To maintain the diet of the pizza, you can use a vegetable set. The first layer is laid out onion cut into half rings, mixed with pieces butter. All this is salted and peppered to taste.
