Required Ingredients for Strudel

To make apple strudel, I buy ready-made puff yeast-free dough. I will not name any specific brands, since the manufacturers of this product in each city are different. I will only say one thing - I have not yet met a ready-made yeast-free dough that would not suit me. A bag of puff pastry usually weighs 0.5 kg and usually contains two 0.25 kg squares. I take:

  1. 250 grams of yeast-free puff pastry;
  2. Half a kilo of peeled apples;

  4. 4-5 tablespoons of breadcrumbs;
  5. Powdered sugar.

Since the dough is stored in the freezer, it must be well thawed. I usually do this in the microwave (3-5 minutes in the “defrost” mode is enough). At the same time, I turn on the oven so that it has time to warm up well.

When I didn't have a microwave, I took the dough out of the freezer and left it overnight in the fridge. In the morning, it was enough for the test to lie down on the table with room temperature 3-5 minutes and it was ready to use.

  • Filling

While the dough is “fitting”, I work on apples: I wash them well, peel them, cut them into thin, medium-sized slices. Then I add sugar, some raisins and cinnamon to them. So that the apples do not release the juice immediately, these components do not need to be mixed immediately. It is better to do this right before laying out on the dough.

The most difficult job in making strudel is proper rolling (if I may say so) puff test. The defrosted square must be rolled in one direction until it begins to shine through. Overdoing it is also dangerous! The approximate thickness of the layer should be 2-3 mm.

Having reached the desired thickness, I use a brush (you can also use your fingers, but not so conveniently) to lubricate the entire surface vegetable oil without touching the edges.



  • Stuffing

Next, I sprinkle the rolled layer with half of the cooked crackers so that they absorb the juice, which in in large numbers will release apples when cooked. And then I spread the prepared filling on one half of the puff pastry. Then I sprinkle the mixture of apples, cinnamon, sugar and raisins with the second part of the breadcrumbs, and carefully roll the rolled out layer with the filling into a roll. I snap the edges and lay out the future Apple strudel into a baking dish lined with parchment paper. You can lay out a twisted roll as you like: in a semicircle, circle, straight, it all depends on the shape or baking sheet.

  • Baking

While I'm doing the dough, my oven has time to warm up well. Apple strudel is baked at a temperature 200 degrees 35-40 minutes and then let it cool down a bit

At this stage, I need powdered sugar. In fact, it is a completely optional ingredient, but with its help, pastries become even more appetizing! Then I cut the roll into pieces about 2 cm.
