Fry the minced cabbage, stirring it with a spoon, for several minutes until it becomes soft and light beige in color. The fillet is washed, cut into small pieces and put into cabbage. After five minutes, salt the cabbage and fillet, add spices to taste (for example, ground black pepper). Cover the cabbage and meat with a lid for two minutes, reducing the heat. Transfer the finished filling to a bowl to cool.
  2. Prepare a baking dish and knead the dough. It will be runny. At all batter no need to do it. If there is not enough flour, add a little so that the dough resembles thick sour cream. Mix kefir with soda and set aside for a few minutes. Sift the flour. Mayonnaise, a pinch of salt, eggs and flour are added to kefir. Knead the dough. Pour half the dough into the mold, put the filling on top, then pour the dough again. Bake in the oven for about 40 minutes. The finished delicious kefir pie can be greased with butter, or five minutes before it is ready, apply the yolk mixed with a spoonful of milk to its surface. Baked goods are served as independent dish or for first courses instead of bread.

Recipe

  1. Dry yeast is diluted in a glass of warm milk with two teaspoons of sugar and flour. After ten or twenty minutes, when the yeast in the milk has dispersed and a slight foam appears, begin kneading the dough.
  2. Milk with yeast, warm kefir, sour cream, melted but not hot butter, egg and salt are poured into a large bowl for kneading dough. After mixing the liquid ingredients, add flour and make a soft dough, like bread. It should not stick to your hands. The dough will rise in a warm place for 2 hours.
  3. The beef is ground in a meat grinder, chopped herbs and a pinch of red and black are added. ground pepper and salt.
  4. Ready yeast dough divided into three equal parts. Roll out each part into a circle and place the filling in the middle. The edges of the circle are stretched and pinched over the filling, resulting in three round cakes with meat filling inside. Bake the pies in the oven for twenty or twenty-five minutes at a temperature of 200 degrees. Golden crust will appear on the cake when it is ready.
  5. The dough from which Ossetian baked goods are baked yeast pies on kefir, suitable for other fillings. Thanks to kefir, it does not go stale for a long time. These pies can be made with cabbage, potatoes, mushrooms, herbs and cheese.
