  • Walnuts – 100 g.
  • Jelly (marmalade) balls – 5-6 pcs.

Cooking method:

  1. Grind the eggs until white with sugar, sift in the semolina, cocoa powder, wheat flour, flavorings and baking powder.
  2. Knead into a thick but pourable dough. Bake two biscuits from it, preheating the oven to 190 degrees.
  3. The biscuits must cool completely. Cut one of them into two cake layers.
  4. Cut the bottom cake into a hedgehog shape, chop the rest of the biscuit into coarse crumbs (small cubes).
  5. Make two types of cream. For sour cream, you need to dry the sour cream in advance by hanging it in a piece of gauze over a bowl for two or three hours. Beat the resulting curd mass together with powdered sugar until fluffy.
  6. For the chocolate cream, first beat the slightly soft butter. Then add thick condensed milk to it in small parts and mix each time with a mixer. Cocoa powder is poured in last. This cream must be cooled before use.
  7. Pour boiling water over the walnuts and wait until the bitter husks come off. Dry them in a dry frying pan or paper towels. Chop coarsely.
  8. Mix biscuit cubes with sour cream, cherry jam and chopped nuts. For more sweetness, you can add condensed milk. Place on the main crust in a hedgehog shape.
  9. Cover the entire surface of the cake with chocolate cream. Make the muzzle matte using cocoa powder mixed with powdered sugar. Make the nose and mouth from marmalade balls. The eyes are made of large yellow or black raisins.
  10. Cool the rest of the chocolate cream further and place it in a pastry syringe with a special attachment.
  11. Make “needles” from chocolate cream on the hedgehog’s body.
  12. Decorate the needles with jam cherries or more decorative cocktail cherries.
  13. Cool the cake in the refrigerator for an hour and a half and serve.

Cake "Hedgehog" with poppy seeds

A “bald” animal without needles, generously sprinkled with poppy seeds instead. You can complicate your task and decorate the cake with sunflower seeds on top of the poppy sprinkles, but this is a long and painstaking job. And without the seeds, the cake turns out pretty cute.

From the specified amount of products, approximately 1.5-2 kilogram cake is obtained.

Dough:

  • Chicken egg – 4 pcs.
  • Semolina – 250 g.
  • Wheat flour – 250 g.
  • Full-fat sour cream – 350 g.
  • Vanillin in sugar - 1 pack.
  • Baking powder – 1.5 pack.
  • Butter – 200 g.
  • Poppy beans – 50 g.
  • Sugar – 150 g.
  • Salt.

Custard cream:

  • Milk – 1 l.
  • Sugar – 100 g.
  • Cocoa powder – 30 g.
  • Butter – 200 g.
  • Chicken egg – 1 pc.
  • Wheat flour – 70 g.
  • Semolina – 50 g.

Decoration and fillers:

  • Prunes – 50 g.
  • Other dried fruits for decoration.
  • Sunflower seeds.
  • Poppy beans – 100g.
  • Cocoa powder – 30 g.
  • Powdered sugar – 50 g.

Cooking method:

  1. Grind the eggs white with sugar and mix with fat sour cream and part of the poppy seeds.
  2. Add semolina, baking powder, flavoring, and salt to the flour. Gradually add the resulting dry mixture to the eggs and sugar.
  3. The dough should be thick but pourable. It needs to be divided into two equal parts.
  4. Grease a baking dish with butter and bake two cakes. Each cake requires 20 to 30 minutes at a temperature of 170-180 degrees.
  5. While the dough is baking, you can prepare the custard. To do this, beat into a fluffy mass. egg, 200 ml. milk and sugar.
  6. Using a whisk, mix into this mixture wheat flour and semolina.
  7. Dilute the entire cream base with the remaining milk and place on low heat.
  8. Stirring constantly, cook thick cream with the consistency of liquid semolina porridge. Pour about a fifth of it into a separate bowl, add cocoa powder to most of it.
  9. The cream should not be allowed to boil; after the first bubbles appear, it must be removed from the stove.
  10. Cool the white and chocolate mass to room temperature and beat them separately with a mixer along with butter. Cool.
  11. Cut one of the biscuits lengthwise into two layers. Cut the bottom one so that you get a drop shape, where the narrow part will be the face of a hedgehog.
  12. Coat this “drop” generously with chocolate custard.
  13. Soak prunes in warm water and sort through. Leave two pieces for decoration, cut the rest into strips.
  14. Crumble the remaining one and a half biscuits into large pieces and mix with 2/3 custard and prunes.
  15. Place the sweet mass on the base, giving it the appearance of a hedgehog.
  16. Grease everything with cream on top. The muzzle is white, and the body is chocolate.
  17. The muzzle can be additionally sprinkled with powdered sugar. You also need to make button eyes and pointed ears from prunes.
  18. Sprinkle the chocolate part of the hedgehog generously with poppy seeds and, if desired, decorate with “needles” of sunflower seeds.
  19. The assembled cake needs to sit for about an hour or two and cool in the refrigerator. After this, you can safely serve it to the table.

Lazy hedgehog cake with assorted nuts and fruits

The name speaks for itself. The most technologically simplified cake recipe, which includes a real scattering of nuts and dried fruits. The base of the cake is a sweet mass made from shortbread cookies and butter. It doesn't require baking. To reduce the calorie content of the “dough”, you can take equal parts shortbread and Lenten cookies like "Crocket", "Maria".

  • Raisins – 100 g.
  • Dates – 50 g.
  • Roasted peanuts – 50 g.
  • Hazelnuts – 50 g.
  • Figs or dried apricots – 50 g.
  • Almonds – 50 g.
  • Walnut – 50 g.

Decoration:

  • Whipped cream in a container – 100 g.
  • Condensed milk – 50 g.
  • Cold water – 20-30 ml.
  • Ready-made decorations from mastic or marmalade (apples, flowers, butterflies).
  • Cocoa powder – 20 g.
  • Sublimated coffee – 20 g.
  • Powdered sugar – 20 g.
  • Black raisins – 3 pcs.

Cooking method:

  1. Mix the broken cookies in the bowl of a food processor into a dense crumbly mass along with butter, sugar and flavoring. Three four shortbread cookies leave for sprinkling the cake.
  2. Divide the resulting lump into two unequal parts (30 to 70%). Wrap most of it in plastic cling film and cool in the refrigerator.
  3. Place a small piece on a cake plate in the shape of the future hedgehog.
  4. Pass the frozen dough through a meat grinder, immediately cutting the ribbons into smaller pieces with a knife.
  5. Chop and fry all the nuts, pre-soaking them in boiling water if necessary to remove the bitter skin. Soak dried fruits in hot water, sort and chop finely.
  6. Combine the dough “crumbs” with chopped nuts and dried fruits.
  7. Make the cream by whipping soft butter with condensed milk and cooling the mixture.
  8. Carefully mix the nut-fruit mixture with caramel cream (leave a little for the top) and spread it over the surface of the base, molding the body of the hedgehog.
  9. Coat the top of the hedgehog with the remainder caramel cream and sprinkle with fine crushed shortbread cookies.
  10. Highlight the face using powdered sugar mixed with cocoa powder.
  11. Make eyes and a mouth from dried fruits (raisins, dried apricots), securing them with cream.
  12. In a blender bowl, combine a thick coffee solution (powder and cold water), whipped cream and condensed milk. The result will be coffee cream.
  13. Pipe the needles with coffee cream from a pastry syringe with a special attachment.
  14. If desired, decorate with ready-made mastic or marmalade decorations.
  15. Place in the refrigerator for an hour and a half to infuse and cool.
