    First of all, let's prepare the dough. To do this, sift all the flour into a deep bowl and mix it with salt. Break the egg into a bowl, mix, then pour water in portions. Knead the dough on a clean, dry worktop. You don’t need to make it too steep, but at the same time it should easily lag behind your fingers. Roll the resulting product into a ball.

    Wrap the dough in cling film or wet wipes. The dough should be infused at room temperature within 20-30 minutes.

    Rinse the brisket, along with the fat pass through a meat grinder twice so that the meat and fat are crushed as much as possible. Pass the onion through a meat grinder or chop it in a blender. Mix onion with meat, add spices. Thoroughly mix the minced meat until smooth.

    We divide the dough into 2 equal parts and roll it out alternately on the countertop, which must be sprinkled with flour. The rolled out layer of dough should not exceed 2 millimeters in thickness.

    Form dumplings using a manual dumpling maker. To do this, lay out a rolled sheet of dough on the form, put teaspoons of minced meat in the recesses and cover with a second sheet of dough on top. In order for the dumplings to stick together well, go through the shape with a rolling pin. If there is no dumplings, you need to make dumplings with your hands.

    Before throwing the dumplings into the pan, bring the water in it to a boil and salt it. Lower a portion of dumplings and cook for 5-7 minutes. I confess that I cooked dumplings with chicken for the first time, and they turned out incredibly tender, tasty and juicy, and also beautiful. From the declared amount of ingredients, I got an impressive amount of dumplings with minced chicken, which is enough to feed a family of four at least three times.

Ingredients:

  • 5 tablespoons sour cream
  • 250 ml milk
  • 400 g flour
  • 1 tsp salt in the dough (without a slide) + 0.5 tbsp. l. in minced meat
  • 0.3 tsp ground pepper

Dumpling dough is very easy to prepare and requires a minimum of ingredients. In a bowl, mix 400 g of flour and 250 ml of cold milk. Add a teaspoon of salt, but without a slide. First with a spoon, then knead with your hands homogeneous dough. You won’t need to add more flour, except to sprinkle the work surface when rolling out the dough, but that will be later. In order for the dough to acquire a uniform structure, it should be vigorously kneaded and rolled on the table for at least 3-4 minutes. And in the end you will get a beautiful smooth ball.


But the dough is not yet ready to be molded. He needs a little time to acquire greater plasticity. Put the ball of dough in a bag, close tightly and leave at room temperature for 15 minutes.


In the meantime, prepare the minced chicken for dumplings. Peel the onion and chop finely. For convenience, you can use a blender. My blender did an excellent job with this task and in 30 seconds chopped an onion into small pieces.


Add onion, 5 tablespoons of sour cream, half a tablespoon of salt and a third of a teaspoon of ground pepper to the minced chicken.


We knead the mince with our hands. Knead the minced chicken for 2-3 minutes, after which it becomes homogeneous and keeps its shape perfectly.


Back to test for future chicken dumplings. Take it out of the bag and cut it into 4 pieces. Let's deal with the first part for now, and return the rest to the package.

Roll out the dough on a lightly floured work surface. The thickness of the dough is 2 mm. Cut out circles using a glass. The dough remaining after cutting out the circles is collected in a pile and sent to the bag for the rest of the dough.

Place a half teaspoon in the center of each circle. minced chicken. We make dumplings and put them on a board powdered with flour.
