We divide the cauliflower into small inflorescences, blanch in slightly salted water for about 5 minutes. Then we drain the boiling water, and let the cabbage cool a little. The cabbage is already half cooked, but we will still bake it in the oven. If it is not blanched in advance, then it will take twice as long to cook it in the oven.




Lubricate the baking dish with butter, then lay out the cauliflower inflorescences. You can lay out even with a small slide.




For the pouring sauce, we will use cream and eggs: shake in a deep plate chicken eggs with cream, add some salt. There is no need to beat strongly, you can mix lightly with either a spoon or a fork.




Add the grated cheese to the cream. The cheese will melt during the baking process and combine the entire dish into a single composition.






Pour the cabbage with sauce and put in the oven for 15-20 minutes, and set the temperature to medium power, about 180 °.

I usually do not remove hard "stems", I add them along with inflorescences, but without them, of course, the dish looks neater and more elegant. Cauliflower must be boiled in boiling salted water for 6-7 minutes so that it retains its shape, but becomes a little softer. You can also steam the cabbage, but it will take a little more time, about 10 minutes.


Then you need to drain the water and spread the cabbage inflorescences on a towel to dry them as much as possible.


While the cabbage is cooking, you can grate the cheese. We rub all the amount of cheese on a coarse grater.


To prepare the sauce, melt the butter over medium to high heat.


Then we prepare the whisk and add the flour (I use a strainer, since I have all the lumps of flour, but this is not necessary), immediately stir with a whisk and fry for one minute. The flour will take on a brownish tint.
