If you want the icing to last longer and not crumble from your cookies, then add vinegar, and if you eat the cookies quickly, you can get by with lemon juice.

So, to prepare colored icing for cookies, take an egg, powdered sugar very good quality. I use Raspak powder. Food coloring gel, but water-based is also suitable.

We will need:

  • sugar - 500 g
  • boiling water - 200 ml
  • butter- 200 g
  • soda - 0.5 tsp
  • salt - 1 tsp
  • ginger - 1 tsp
  • cinnamon - 2 tsp
  • cloves, cardamom, nutmeg, allspice, anise - 1/4 tsp each
  • egg - 1 pc.
  • flour - 800-900 g
  • honey - 1 tbsp. l optional

Cooking method:

1. Take a saucepan with a thick bottom. Send it to the stove, make medium heat and start melting the granulated sugar.

It is important to note that you do not need to stir at first, wait until the bottom layer begins to melt.


2. Then start stirring with a spatula to evenly help the sugar dissolve.


3. After you should see such a consistency, be careful not to bring this mixture to the point of burning, otherwise your cookies will have a bitter taste.

Important! Before the next step, do not forget to check if there are grains of sugar left, it should completely dissolve.

Boil the caramel until a dark amber color, then remove the pan from the heat and pour in the boiling water in a thin stream. Be prepared for the mass to start bubbling and hissing, because the temperature is high.

Important! Do not forget to stir constantly when pouring boiling water.


4. The syrup will be dark in color, after the mass is homogeneous after pouring water, send the butter room temperature. And slowly stirring, put the pan on the fire so that the butter melts.


5. After dissolving the oil, add 1 tsp of soda, salt and spices. Take spices to your taste, but without them, keep in mind that the aroma of finished products will not be so pleasant. Stir.


The baking soda will cause the mixture to sizzle and expand slightly. At this stage, you can add a spoonful of honey, but remember that honey is a strong allergen and not everyone absorbs it, especially children. And if you cook gingerbread to order, then honey is better do not add, so that there are no problems.

6. Cool the mass, and the foam cap should fall off. When the mass becomes room temperature, add egg. Stir.

Important! If such proportions are large for you, then you want to make half as much, then it will be enough to add only the yolk.


In parts, add the sifted flour, slowly knead. Stir the dough first in the pan with a whisk or spatula, then, as it becomes impossible to do, transfer it to a table sprinkled with flour.

7. The dough should be soft and slightly sticky. After it lies in the refrigerator, it will become denser and easier to work with.


Put the dough in the refrigerator overnight, wrap it in a food bag.

8. Cut off the desired piece from the dough and roll it into a thin cake. The dough can be stored both in the refrigerator itself for about 1 month, and in the freezer for 3 months.


Roll out the mass on a Teflon mat so that the surface of the gingerbread cookies is even and smooth. For rolling out the dough, it is very convenient to use wooden rulers or planks so that the cake has the same thickness everywhere.


Then, using special molds or as they are also called cuttings, make the necessary figures.

You can use a special rolling pin, of course it is much more convenient with it, who often makes such goodies, also to order, I recommend purchasing it.


9. Bake cookies in a preheated oven to 180 degrees for 6-7 minutes on a Teflon mat. The advice is that the product does not turn out tough, you do not need to hammer the dough with flour, and secondly, you do not need to overexpose it in the oven.


If the dough after baking is too deformed, then this means you put a little flour, but if it bubbles, then a lot. If the surface is uneven, place a cutting board on the hot gingerbread.

10. Gingerbread cookies keep their shape well, but inside they should still be soft and porous. Smooth and very beautiful on the outside, but also tasty and fragrant. Good luck in the kitchen!
