Sweet rolls, homemade, with cream cheese and fruit - a delicious and trendy dessert, the taste of which you can vary using different fresh or canned fruits or berries.

Both children and adults love these creamy rolls. You can make them more or less sweet by changing the amount of powdered sugar or using fruits with a pronounced sour taste for the filling. We took the photos for this recipe in the winter and we had bananas and canned peaches. At different times we tried making rolls at home with strawberries, kiwi, raspberries, pitted cherries in various combinations. The dessert always went off with a bang. Cream cheese can be replaced with soft curd cheese. For cooking fruit rolls you will need a rolling mat and cling film. From the specified amount of products we get 3-4 rolls (depending on the diameter).

Need to:

  • Rice paper for spring rolls
  • Cream cheese – 400 grams
  • Powdered sugar – 120-130 grams (about 0.75 cups)
  • Fruits and berries of your choice (preferably 2-3 types)
  • Cold boiled water– just a little to moisten rice paper
  • Dessert sauce (optional)

Preparation:

We wrap the mat for preparing rolls with cling film.

Fruits and berries need to be washed and dried. Cut large fruits into cubes or long slices (this also applies to strawberries); do not cut only small berries such as raspberries.

Let's say it again: you can use not only fresh, but also canned fruits, you can use berries, it is better to use 2-3 types of fruits or berries in one roll.

Mix cream cheese with powdered sugar.

Mix thoroughly until homogeneous mass.

Place 1 sheet of rice paper on a mat wrapped in cling film (if anyone doesn’t know, this is EDIBLE paper). Wet the paper with water: sprinkle a few drops and spread it over the entire sheet with your palm ( watch our video recipe!). When folded, the paper should not break, but it should not become soggy either.

Place the cream mixture in the middle of the rice paper and spread it into a rectangle.

On cream cheese lay out fruits and berries.

Using a mat, roll the roll, pressing it lightly with your fingers; before the last “turn”, you can add another drop of water to the edge of the rice paper. You can leave the roll round, or you can use the same mat to give it a triangular or square shape in cross-section ( watch our video recipe!). We repeat the operation and roll the remaining rolls. Ready rolls It’s good to put them in the freezer for 15 minutes, so that later it’s easier to cut them into pieces.

We cut each roll lengthwise into 8 pieces, place it on a plate, you can decorate the plate with the remaining pieces of fruit. Now sweet rolls ready to serve. If desired, pour over your favorite dessert sauce (we used chocolate this time) and enjoy.

A couple more useful tips for those who read to the end: rice paper can be replaced with wheat paper. You can even wrap cream cheese and fruit in thin pancakes or thin pita bread(in this case, spread the cheese over the entire surface, otherwise your rolls will unravel), but the taste will be different. And in any case, you can twist the closed tubes (first we fold the rice paper / pancake / pita bread over the filling along its narrow side, from the future end of the roll, and only then roll it up).

SWEET ROLLS WITH BANANA AND CHERRY

To give the rice paper a beautiful pink color, instead of the usual water, soak it in slightly diluted warm water cherry syrup.

We prepare rice using sushi technology, but instead of vinegar and soy dressing add sugar and vanilla, instead of water - cream or milk. For 1 cup of rice, take about 3 tablespoons of sugar and half a bag of vanilla.

Place the sweet rice on the prepared rectangular sheet of rice paper. Place a whole peeled banana and cottage cheese, grated with powdered sugar or syrup, in the center of the sheet with rice. We can also add cherries inside or decorate the roll before serving.

Using a bamboo mat, wrap the roll and press tightly on top. Cut the roll into 6 portions, sprinkle with coconut flakes and pour over cherry syrup.

CHOCOLATE ROLL

In separate containers, mix dry and liquid ingredients for pancake dough. Then gradually add the liquid mixture to the dry mixture and stir the dough until smooth using a whisk. Fry pancakes in a heated frying pan greased with vegetable oil.

Soak gelatin in cold water. Mix cream cheese with yogurt and sugar. Combine honey with gelatin and heat in the microwave for 20 seconds. Pour the resulting mixture into curd mass and mix thoroughly. Place the filling in the refrigerator for three hours.

For the sauce, heat the cream and melt the chopped White chocolate. Let the sauce cool and place in the refrigerator for 2 hours.

Peel the fruits and chop them finely. Grease each pancake with creamy chocolate sauce, then spread the curd filling and chopped fruit. Wrap the roll with a bamboo mat and place it in the refrigerator for 30 minutes.

Before serving, cut the roll into 6 servings, decorate with chocolate sauce and chopped nuts.

CREAM ROLL WITH SYRUP

  • pancakes
  • mascarpone cheese – 100 g
  • powdered sugar – 1 tsp.
  • frozen pitted cherries – 100-150 g
  • pear – 1-2 pcs.
  • strawberries – 3-4 pcs.
  • water
  • sugar
  • mint leaves

We prepare pancakes for rolls according to the previous recipe (chocolate rolls), but do not add cocoa powder.

To prepare cherry syrup, place frozen cherries in a saucepan, add sugar and water to taste. Use water to adjust the consistency of the syrup and cook the liquid until it thickens completely.

Mix cream cheese and powdered sugar thoroughly. Spread cheese filling on pancakes in a thin layer. Finely chop the fruit and place it on a pancake with cheese. Drizzle the filling with cherry syrup and sprinkle with chopped mint leaves.

Roll up the rolls and place in the refrigerator for 10 minutes. Before serving, cut the dessert into equal portions, pour over cherry syrup and garnish with mint leaves.

SWEET ROLLS WITH MARMALADE

Prepare milky sweet rice for rolls using the technology indicated in the first recipe. As a curd mass we use a mixture of soft cottage cheese with sour cream and vanilla sugar or mascarpone with powdered sugar. Soak a sheet of rice paper in lightly warm water and give it a rectangular shape.

Place the sweet rice filling on the rice sheet, leaving the edge of the sheet 2 cm free. Place a peeled banana and curd mass in the center of the sheet, add marmalade cut into small pieces (you can use jelly bears).

Ingredients:

Cottage cheese – 200 g
Sour cream - 1 tbsp. l.
Fructose - 2 tsp.
Sesame - 2 tbsp. l.
Banana - 1 pc.
Kiwi - 1 pc.
Nuts
Milk chocolate – 1 bar
Powdered sugar - 1 tbsp. l.

1. Mash the cottage cheese with a fork. Add a tablespoon of sour cream and two teaspoons of fructose (powdered sugar is possible). Mix well.
2. Roll out the mat and place cling film on it. Sprinkle the film with sesame seeds.
3. Pour in the curd mass and smooth with a spoon. To prevent the cottage cheese from sticking to the spoon, moisten it with water.
4. Place fruit on cottage cheese.
5. Carefully roll the roll and put it in the refrigerator for 20 minutes.
6. Cut with a wet knife. Decorate each slice with a nut, sprinkle with grated chocolate and powdered sugar. It will be very tasty with coffee or cocoa.

Everything is mixed and very carefully (an important moment!) the whipped whites (of course, into foam) are introduced into the resulting mass. Well, everything is carefully mixed, poured vegetable oil. Now let's start baking. 1 teaspoon of vegetable oil is poured into the frying pan, the frying pan is heated, and the dough is poured. This is how very thin pancakes are baked.

Then already ready-made pancakes cut into strips. At the same time, cottage cheese, previously mashed with sugar, is placed on the edge of the strip. If desired, you can add kiwi, bananas or mangoes cut into strips.

Making Japanese fruit rolls for children is as easy as shelling pears, and the idea itself is striking in its simplicity and accessibility. In the proposed recipe refined taste is created by combining fruit and special cheese, but in principle some ingredients are completely replaceable. A minute before the rice is ready, add a tablespoon of sugar, and when the rice is completely ready, add vanillin and stir the resulting mass thoroughly. Next, let the rice cool.

While the rice is cooling, you need to cut the fruit into strips. Mangoes need to be peeled and pitted. For one sweet roll you will need a quarter or even less of the whole fruit (depending on the size of the mango). Cut the mango slice into strips. We do the same with kiwi - separate from the peel and cut half of the fruit into strips. Peel the banana and cut one half in half and also into strips.

Before placing rice on rice paper, lightly moisten it with water to soften and make the paper more elastic. Otherwise it will break, as it is very fragile. Next, place a sushi mat on the table, having previously wrapped it cling film, and place one sheet of rice paper on it. Place the cooled rice on rice paper in a thin layer so that the paper is slightly visible through the rice. Also leave a 1-1.5 cm border on the paper for further rolling of the roll. Afterwards, turn everything over with the rice facing down and place the chopped pieces of fruit in the middle. Next, we roll the sushi into rolls using a mat. Before cutting sweet sushi, you need to roll the roll in coconut flakes. Finally, cut the roll into eight equal pieces.

Important! When you start slicing, always wet your knife with water. This will help the knife slide along the roll and prevent the rice from sticking to the blade itself.

So, cut the resulting roll into eight parts: cut the roll in half, then the halves in half again, and all the halves in half again. You should have 8 even pieces.

  1. Cut a rectangular piece of melon. It should be slightly longer than the radish. Make an oblique cut at one end.

  4. To make a tail, cut a triangle from the thin side of a piece of melon so large that it completely hangs over the piece of radish.
  5. To add texture, score the top side of the melon. A small cut at an angle, then a vertical one and then remove the excess part.
  6. Place the resulting piece of “fish” on top of the radish. All is ready.

  1. Cut the bananas into small slices.
  2. Take a plastic cap of suitable diameter and remove the core of the banana. It might be convenient to place it inside the cap plastic film or stretch - it will be easier to remove the remaining banana from the inside of the cap.
  3. Remove the banana peel and dip the banana in lemon juice to prevent it from browning.
  4. Dip the banana thoroughly in honey.
  5. Roll the banana over the chia (or sesame) seeds.
  6. Use a toothpick to remove or reposition any seeds that are out of place.

Stage 7: Rolls - Innards

  1. Cut round pieces of kiwi and melon to fill the center of the roll. If your rolls turn out to be high enough, you can place a piece of the inside of the banana inside the shell, which you cut out at the previous stage, and place a kiwi or melon on top.
  2. Grapefruit can simply be placed in small pieces inside the roll until it is completely filled.
  3. Try different combinations of fruits to create colorful rolls with an original taste.

This is how you can make fruit sushi at home relatively easily. This is a great idea, for example, for a child's birthday. Our children were delighted.
