    Prepare the filling for the rolls. Cut the salmon fillet into cubes. Sprinkle them with lemon juice. Mix with cream, add a teaspoon of honey, salt and season with white pepper.

    Place the filling on each marinated piece of sole and smooth it out with a spoon. Roll up and secure the edges with a toothpick.

    Place all the rolls in a baking dish, with pieces of butter on top. Place in the oven, preheated to 180C°. Bake for 15-20 minutes.

Fish broth can be replaced with the same amount of dry white wine.

Bake in an oven preheated to 200°C for about 15 minutes until the appetizing smell of fish appears - this is how it is ready. Leave the dish in the switched off oven for 10 minutes so that the sole fillet is saturated with juice.

Preparation of the sauce: carefully remove the fillet pieces onto a separate dish, and transfer the onion-basil sauce formed in the baking pan into a saucepan and simmer over low heat to a third of the volume. IN hot sauce pour in lemon juice and add butter.

Serve with sauce and boiled rice.

Sea sole with potatoes and tomatoes under a cheese crust

Required Products:

  • 0.5 kg fillet of sole;
  • 7 medium-sized potato tubers;
  • 3 large meaty tomatoes;

  • 150 g hard cheese;
  • 100 g mayonnaise (or full-fat sour cream);
  • 2 tbsp. spoons of refined vegetable oil;
  • salt to taste;
  • a little black ground pepper;
  • fresh dill.

Wash the thawed fillet and cut into portioned pieces. Peel the potatoes and onions and cut into 3 mm thick slices. Scald the tomatoes with boiling water, immerse for a minute in ice water, remove the skin and cut into 5 mm circles so that they retain their shape during heat treatment. Grate the cheese on a medium grater.

Place in layers in a deep baking tray, greased with oil: half the potatoes – add salt to taste, all the onions and fillets – salt and sprinkle with pepper, the other half of the potatoes – add a little more salt, tomatoes. Spread mayonnaise evenly over the surface.

If you replace mayonnaise with sour cream, the dish will have a slight sourness, which is very appropriate with fish. The taste will change dramatically, but both options are delicious in their own way.

Bake in an oven preheated to 220°C for 45 minutes. Remove from oven, sprinkle with cheese, increase the temperature and return back for 5 minutes until a golden cheese crust forms.

The recipe for sole in the oven with potatoes turns out similar to - good to serve hot, sprinkled with dill. When served cold, you can eat it like a pie with sweet tea or take it with you on a picnic.

Step 1: clean or defrost the fish.

You can purchase already cleaned and frozen fillets of this fish in department stores and supermarkets. And when you come home, all you have to do is put it in a deep bowl without removing it from the packaging. But if you are lucky and you bought fresh fish, you need to know how to clean it. First, wash the fish under running water to remove mucus and algae. Afterwards we place it on a cutting board and, holding the sole by the tail with our hand, we clean the fish from scales sharp knife. We start cleaning from the tail to the head. Then rinse the fish carcass under cold running water.
Place it back on the cutting board and use the tip of a knife to make an incision around the gills. With one deft movement of the hand, we remove the trimmed skin.
Then we turn the fish over to the other side, trim the skin on the other side and also remove it from the fish carcass.
Then we make a small longitudinal incision in the abdomen area and clean the fish from the insides. Be careful with the gallbladder, make sure that it does not burst, this small ball contains an incredibly bitter liquid, which, when it comes into contact with fish meat, makes it bitter.
Now carefully insert the tip of the knife behind the fish head above the dorsal bone and cut off the head. Then, using kitchen scissors, cut off the lower, upper and side fins of the fish, as well as the caudal fin. Regardless of the fish purchased, after cleaning or defrosting, rinse the carcasses under running water, dry them with paper kitchen towels and place them on a plate.

Step 2: prepare the fish for baking.


Now rub each fish one by one with salt to taste. Then sprinkle it on all sides with paprika and ground black pepper. And the last but not least important touch is to pour 1 teaspoon of refined vegetable oil over each fish. Leave the sole to marinate in this form for 10 – 15 minutes, and during this time turn on and preheat the oven to 200 degrees Celcius. Cover a non-stick baking sheet with a sheet of aluminum food foil.

Step 3: prepare the cheese.


The sole meat is very tender, so it is important not to dry it out during baking. To do this, we choose the simplest way to prepare this fish, bake it with cheese, it’s tasty and quick. Let's take it required amount cheese, cut off the paraffin crust from it and grate it on a medium grater directly into a deep plate. Then add to dairy product a little allspice, coriander, breadcrumbs and 1 teaspoon of lemon juice. Lightly mix the mixture with a tablespoon so that grains of spices evenly adhere to the pieces of cheese.

Step 4: bake the fish.


Place the marinated fish on a baking sheet prepared for baking and sprinkle it with an even layer of cheese. We check that the oven has warmed up to the required temperature and only after that we send the fish to bake, placing the baking sheet on the middle rack. Bake the sole for 10 – 12 minutes, During this time, the fish will reach full readiness and will be covered with browned cheese crust. Remove the pan from the oven, holding it kitchen towel. We lift the fish with a kitchen spatula, transfer it to a large flat dish and serve hot.

Step 5: serve the sole baked in the oven.


Like any a fish dish, it is preferable to savor such fish with white wines or juices from white grapes, apples, as well as citrus fruits. The best side dish for sole would be boiled vegetables, mashed potatoes, or boiled rice.
