To prepare it, you will need the following ingredients:

  • softened butter (or margarine) - 150 grams;
  • pork lard - 200 grams;
  • sour cream -100 grams;
  • 2 eggs;
  • sifted Wheat flour- 800 grams;
  • a glass of sugar;
  • soda - 0.5 teaspoon;
  • vinegar.

Melted butter, lard and half of the flour (400 grams) are mixed until a homogeneous mass is obtained and placed in the refrigerator for one hour or in the freezer for 20 minutes.

Meanwhile, beat the sugar and eggs with a mixer or immersion blender until fluffy and smooth. Sour cream and soda quenched with vinegar are added to it. The resulting egg-sour cream mixture is mixed with chilled dough and kneaded with the rest of the flour.


Such a dough on lard should turn out to be homogeneous, elastic and well retaining a given shape even 30 minutes after the formation of the figures.

The finished dough is rolled out into a layer 5-7 mm thick, from which figures are then cut out. Then they are placed in the oven for 10-15 minutes, after baking, the finished shortbreads are sprinkled hot powdered sugar.

If there are no molds

History of lard

Lard is a traditional product of rural cuisines of many peoples of the world. Lard is obtained by rendering from lard, interior and subcutaneous, as well as fat scraps. At the same time, interior fat is processed separately due to the specific smell. The process of melting lard is simple. To do this, the raw material is cleaned of blood, possible contaminants, meat residues, then soaked in lightly salted water for about 12 hours, while changing the water several times. Next, the product to be melted is cut into small pieces and melted over low heat. The resulting fat is filtered through gauze, poured into jars or pots, tightly closed and stored in a cold place.

Lard has long been used to prepare a variety of dishes, it can be used for frying something, and also as a snack, spreading it on a piece of bread. In the latter case, grated garlic, pepper, Bay leaf, coriander, salt and other spices. This dish was made by our grandmothers and great-grandmothers, but even today it is popular and in demand. Lard is practically indispensable for Transcarpathian and Hungarian cuisine: they cook Hungarian goulash, paprikash, fish soup Halasle. Also, from lard all over the world they make a lot of confectionery and flour products, including bread and cakes.

Today, lard can be found in almost any supermarket, but still, zealous hostesses are not too lazy to cook it in their kitchen - home product definitely tastier and healthier. Well, the question of when did people start baking with lard can be answered simply - in fact, when they started baking and learned how to melt lard, that is, a very, very long time ago.

The benefits of lard

The mass of useful elements contained in lard disintegrate in the process of rendering it. Therefore, somehow it is not necessary to draw the same parallels between lard and lard. So, after a long heat treatment of fat, only three valuable elements remain in it - vitamin E, choline (or vitamin B4) and selenium. Most of all, lard contains choline. As is known, this element can influence the course of fat and protein metabolism in human body. Choline also prevents the development of atherosclerosis and improves heart function. Vitamin B4 is extremely important for the condition of our liver, it improves the condition of this organ in various diseases. As for vitamin E, it strengthens the walls of capillaries and prevents the formation of blood clots. This vitamin is needed for better blood clotting and tissue regeneration.

True, it is worth remembering that in this lard recipe we will use relatively little, moreover, it will undergo additional heat treatment in the form of baking in the oven as part of a cookie dough. Therefore, the benefits of lard in a particular case are very conditional. In addition, lard cookies are very high in calories and contain a large number of carbohydrates. But it is lard that makes pastries incredibly crumbly and very tender.

Ingredients for lard cookies

  • Sugar - ½ cup;
  • Egg - 1 piece;
  • Flour - 2 cups;
  • Baking powder - 1.5 teaspoons;
  • Lard (in this case duck) - 6 tablespoons.

  1. In a deep bowl, combine the egg and sugar.
  2. Beat the egg and sugar until a thick white foam forms. The volume will increase by 2-3 times.

  3. Add flour and baking powder to the resulting beaten egg mass. Note that earlier in the villages they used not baking powder, since it was simply not available, but ordinary soda. So, if suddenly there is no baking powder in your kitchen, feel free to use soda to make these cookies.

  4. Put the lard into a saucepan. The color of lard varies depending on the origin of the product. So, duck lard, which we use in this case, has a beige color. Pork lard is white. In any case, you can use pork, duck, and goose lard for cooking.

  5. We melt the lard on a small fire. Let it cool down a bit so it doesn't get too hot.

  6. Pour the lard into the bowl with the rest of the ingredients.

  7. We start kneading the dough. It turns out quite steep and loose, but holds its shape well.

  8. We form such a ball from the dough, as in the photo, put it in a bag for food products and send it to the refrigerator for half an hour.

  9. We take the dough out of the refrigerator, roll it out in small pieces, since the dough is quite loose and it is not very convenient to roll out the entire volume at once. Cut out shapes with cookie cutters. We, for example, will have a cookie in the shape of a flower. Note also that the dough should not be rolled out too thin.

  10. We spread the cookies on a baking sheet covered with parchment, and send them to the oven for 15-20 minutes. Baking temperature - 180C. It is important that the lard cookies, the photo of which you now see, have a thickness of at least 3-4 millimeters, no less.

  11. Cookies on lard are ready, they can already be served with tea or coffee.

Ingredients:

  • pork lard - 200 g;
  • wheat flour - 0.5 kg;
  • fresh eggs - 2 pcs.;
  • white crystalline sugar - 200 g;
  • baking soda - 1 tsp;
  • vanilla - 1.5 g.

Energy value per 100 g: 341 kcal.

Step by step description:

  1. Place softened pork lard, crystal sugar and chicken eggs in a bowl for making dough;
  2. Beat the mass until smooth. For these purposes, it is very convenient to use a mixer, it copes with this task in a matter of minutes;
  3. Next, add the sifted flour, vanilla and soda to the resulting mass. Replace loose dough that does not stick to your hands. If there is not enough flour, add a little more;
  4. Remove the prepared dough for half an hour in the refrigerator. Chilled dough is much easier to work with;
  5. After half an hour, proceed to the formation of cookies. To do this, simply tear off a piece of dough and roll a small ball out of it, and then flatten it slightly in your palms. Repeat the same steps with the rest of the test;
  6. Place the formed product on a baking sheet, leaving 1-1.5 cm of free space between them, as the cookies will increase in size during baking. Bake shortbread in the oven for 25 minutes, subject to temperature regime at 200 0 C;
  7. The finished cookies will acquire a beautiful golden hue. Transfer it to a dish and serve.

Cookies on lard and kefir

Components:

  • cooking oil(lard) - 0.5 kg;
  • kefir - 500 ml;
  • crystalline granulated sugar - 0.5 kg;
  • olive oil - ½ tbsp.;
  • sifted flour - 750 g;
  • vanilla sugar - 10 g;
  • baking powder food - 1 sachet.

Cooking time: 50 min.

Number of kcal per 100 g: 347.

Step-by-step description of preparation:

  1. Combine cooking oil (lard) with sugar, then add all dry ingredients and kefir to them. Stir, at the very last moment enter vegetable oil and knead, easily lagging behind the hands, the dough;
  2. Install the sausage attachment on the meat grinder. Put the prepared dough into the meat grinder and start twisting. Cookies are obtained in the form of an oblong sausage, which should be cut into pieces 5 cm long;
  3. Lay out the formed products on a baking sheet and bake at a temperature of 190 0 C. The readiness of the cookies is determined by the appearance of a characteristic golden hue, as soon as it begins to appear, remove the products from the oven;
  4. Cookies are incredibly tasty, tender and crumbly. Bon appetit!

Cookies on lard through a meat grinder

Cooking Ingredients:

  • flour - 400 g;
  • chicken eggs - 2 pcs.;
  • sugar - 150 g;
  • baking soda - ½ tsp;
  • duck lard - 180 g;
  • finely ground salt - a pinch;
  • vanilla extract - ½ tsp

Cooking time: 1 hour

Cooking:

  2. Duck lard has a delicate texture, so it does not need to be softened beforehand. Just rub it with sugar and eggs;

  4. Line a baking sheet with parchment in advance. Pass the chilled dough through a meat grinder (with a grate), forming a product of the required size and shape;

Recipe for chocolate shortbread cookies with lard

Ingredients:

  • fresh eggs - 1 pc.;
  • lard - 5-6 tablespoons;
  • cocoa powder - 2 tablespoons;
  • premium flour - 500 g;
  • granulated sugar - ½ tbsp.;
  • baking soda - 1 tsp;
  • table 9% vinegar - 1 tbsp.

Cooking time: 60 min.

Energy value per 100 g: 340 kcal.

Step by step description:

  1. In a mixing bowl, mix cocoa powder and sugar thoroughly. Then enter to them fresh egg and whisk with a whisk;
  2. Add softened lard, soda quenched with vinegar to the prepared mass and mix thoroughly;
  3. Sift the flour first, and then add to the rest of the ingredients. Knead the dough, shape it into a ball, tie it in a bag and put it in the freezer for 15-20 minutes;
  4. After the dough has cooled properly, take it out freezer and roll out 5 mm thick. Then, using special molds for baking, cut out the figures and put them on a baking sheet;
  5. Bake fragrant chocolate chip cookie for 15 minutes at 190 0 C. Before serving, generously sprinkle the products with powdered sugar.

Pork lard should be kept warm for some time before making cookie dough so that it becomes soft.


How to make shortbread cookies on lard:

Combine the raw egg with sugar and cocoa powder, then beat vigorously with a whisk until homogeneous mass. In the resulting chocolate mixture gently fold in the slightly melted lard. Add vanillin.


Sift the flour and add to the dough along with soda slaked in vinegar.


Knead the dough first with a spoon and then with your hands on a floured table. The finished dough will be unusually plastic and soft.


Roll it into a thin layer with a thickness of 0.5 to 1 cm, then use special devices cut out curly cookies.


Distribute the cookies at some distance from each other on a baking sheet, and then put them in an oven preheated to 180 degrees for 25-30 minutes. It is not necessary to grease the baking sheet with oil, since the dough is very oily due to lard.


Allow the finished cookies to cool completely and serve. It is very tasty to eat it with warm milk.

Recipe for cookies through a meat grinder "Chrysanthemum"

Shortcrust pastry should be able to cook, perhaps, any housewife. There are a great many options for making pastries from this type of dough: grated pies, cakes, pastries, tartlets and much more. We will cook Chrysanthemum cookies, the recipe of which is known to our mothers and grandmothers.


Its peculiarity lies in the fact that ready dough passed through a meat grinder - this gives it a special shape. And this dough recipe is based on fat, and not on the usual margarine. It is fat / lard that helps the liver to become crumbly, tender.

Ingredients:

  • lard - 200 grams;
  • flour - about a kilogram;
  • butter or margarine - 200 grams;
  • eggs - 3-4 pcs.;
  • granulated sugar - 200 grams;
  • soda or baking powder - 1 tsp
  • a pinch of salt.

All ingredients can be reduced by half.

Cooking method:

Sift the flour beforehand and place in a deep container in which the dough will be kneaded. Chop the butter with a knife and put in flour, add lard. Mix everything well and add sugar, eggs and soda, which must be quenched with vinegar.

Knead the dough - it should turn out elastic, soft and not stick to your hands and the walls of the container.


Place the dough in cling film or bag and put in the freezer for 15-20 minutes. This is necessary to keep it apart.

After the dough has lain enough in the cold, we take it out and pass it through a meat grinder.


It is advisable to use special nozzles for this, but you can skip through the usual ones.

Measure the desired length of cookies and place on a baking sheet lined with parchment. Each dough sausage can be rolled up in the form of a flower, in a circle - this will be a chrysanthemum.


Bake cookies for 25-30 minutes at 180C.
