I sometimes pamper my family with delicious sweet dishes and cook curd balls fried in butter, a recipe with a photo of which I have prepared for you today. Curd balls that just melt in your mouth. Of course, to cook them, you need to make an effort and spend a little time, I will not say that this is a five-minute dish. But, and scare you complex processes I don't want to, especially since they don't exist.
In fact, the dough for balls is quite simple, if you know how to do it, then you will be able to cope with this dish, but if some difficulties arise, I am sure that they will be quite solvable. Although, it seems to me, it is enough to cook the balls once, and only then you will do everything automatically, without even thinking. It is clear that, even adhering to the recipe, each time you will get a dough of a different consistency, because eggs come in different sizes and cottage cheese of different fat content. That is why you should always focus on what good dough for such balls, it usually has a moderate consistency: neither liquid nor thick, but soft and viscous, so that balls can be easily stuck from it.
To taste, you can add vanilla essence or coffee extract to such a dough, or you can rub the zest from a lemon or orange, or add dried fruits, such as raisins, pitted prunes, or dried apricots.
Cooking balls in in large numbers fat, of course, a deep fryer is ideal for this. But, for example, I don’t have it, but I still cook such a dessert, because for these purposes it is quite possible to use a saucepan into which to pour refined oil.


Ingredients:
- cottage cheese (fat content not less than 15%) - 250 g,
- granulated sugar - 2 tablespoons,
- chicken table egg - 1 pc.,
- vanilla sugar- 2 tablespoons,
- baking soda - ½ tsp,
- table vinegar ( lemon juice) - 1 tsp,
- wheat flour (highest grade) - 2 tbsp.,
- fine-crystalline sea or table salt - a pinch,
- oil (deodorized) - 400 ml.

Separately break egg in a small bowl and add salt, granulated sugar and flavoring (vanillin, zest or coffee extract). Stir the mixture thoroughly with a whisk until smooth.




Then add the cottage cheese (in order for the balls to be more tender, the cottage cheese must be rubbed through a sieve or smashed with a blender).




Then add soda, quenched with vinegar.









Gradually knead a soft tender dough.




Pinch off small pieces of dough and roll into balls the size of nuts. To make it easier to do, we wet our hands with sunflower oil.

I take fresh cottage cheese for making balls, or one that has lain in the refrigerator for several days. It is unlikely that anyone will eat such a product, but the balls will go with a bang. I pour the curd into a deep bowl, rub it with a fork. If there is a great desire, then you can rub the cottage cheese through a sieve, but this is not necessary.

I add a little salt for taste, break a raw egg. I stir curd mass to homogeneity.


Because we are preparing sweet pastries be sure to add sugar to taste. Rub the cottage cheese with sugar with a spoon.


Separately, I mix flour with starch and baking powder. Sift the dry mixture and add to the main mass. If necessary, the baking powder can be replaced with baking soda.

Heat up in a saucepan or cauldron sunflower oil. I put the balls in boiling oil. I fry over medium heat until golden brown.

    10. We form and dip a few more balls into the deep-fryer. Their number should not be large, because, frying, they will increase in volume.
    11. Turn the cheese balls over with a fork so that they brown evenly on all sides.
    12. We take out the finished balls with a slotted spoon, holding it a little over the stewpan so that the excess oil drains, and put it on a paper towel.
    13. Fry other curd balls in the same way. From a towel that has absorbed excess oil, transfer them to an elegant dish, let cool and serve.
