There seems to be nothing special in the recipe, but here technology matters! 4. Roll out the resulting dough on a floured surface. about 5-6 mm thick, cut out round, oval, square or rectangular cookies (you can use curly notches or rolling pins). The weight of one finished cookie is approximately 10-12 g.

I used a square notch with a wavy edge (6.5 cm) and another smaller one to make a light impression on the surface. True, because of this, the cookies were slightly swollen in the center during baking.

It may seem that the dough cannot be rolled out into a thin layer at all, so, for example, I did not take risks and gently rolled out literally piece by piece, cutting out 1-2 cookies.

I don't know what that kind of dough really should be. In addition, everyone understands that home opportunities differ from production ones. For example, I mixed everything with my hands, without mixers. If I had time to experiment, I would know and tell more about it.

5. These cookies are baked literally 3-6 minutes at a temperature of 190-230 C. If there is a pattern on the surface of the cookies, then the baking temperature should be higher and the time should be shorter.

  • If you plan to simply cut out figures from a layer of dough with molds or cut it, for example, into rectangles or rhombuses with a knife, then it will not be a big mistake to bake cookies and at the usual 180 degrees, only in the oven it will have to be held a little longer, 15-20 minutes.

And in the recipe, we see that 1 teaspoon of baking powder is indicated, in which, respectively, there is soda, citric acid and flour. This must be considered if you want to replace the baking powder with soda and acid.

From this it follows that to replace 1 teaspoon of baking soda, you need to take 2-3 times less and add citric acid at the tip of a teaspoon.

Vanilla sugar

Vanilla flavor can be given to the dough in three ways:

  • adding natural vanilla extract(a tincture of vanilla pods is made in an alcohol solution);
  • by adding artificial vanillin flavor (a concentrated component that is added in very small doses, because in large quantities gives the product bitterness);
  • adding vanilla sugar (produced from ordinary sugar with the addition of a small amount vanillin, so it would be more correct to call it vanillin sugar, but the manufacturers decided to cheat a little), which is already maximally adapted for adding to the product and is sold packaged in sachets of 10 g, i.e. already in the concentration and dose that you can safely pour into the product without fear of spoiling it.

From this we conclude: we put vanilla sugar or vanilla extract without fear, vanillin - a little, realizing that this is a concentrate.

Cooking sequence

We first take out margarine from the refrigerator and keep it at room temperature to make it melt.

  1. Put softened margarine in a bowl, add sugar and salt and grind well.

  2. Break the egg into the same bowl and pour in the milk. We mix everything until smooth.

  3. Add baking powder and vanilla sugar to the sifted flour, mix and introduce into the mixture in small portions, stirring it each time until the flour dissolves. Gradually the dough will become thicker. If you are using a mixer, then as soon as the whisk can no longer cope with a thick mixture, you can change it to a dough attachment. If you still wielded a hand whisk, then we connect cleanly washed hands and knead the dough further by hand.
  4. The end result should be elastic. elastic dough well out of hand.

  5. If we have time, it would be better to blind from ready dough round ball, wrap it in cling film and let it lie down for 15-20 minutes at room temperature so that it becomes more plastic. If this is not possible, then you can skip this step and immediately proceed to the next one.
  6. We sprinkle the desktop with flour, we also grease the usual smooth rolling pin with flour so that the dough does not stick to it. We spread a lump of dough on the table and, having given it the shape of a cake with our hands, we begin to roll it out with a rolling pin into a thin layer about 5 mm thick.

  7. If you have a figured rolling pin, then we easily pass it over the rolled out dough to give it a pattern. If there is a textured rug, lightly sprinkle it with flour, lay it on a rolled out layer and gently press the rug into the dough with an ordinary rolling pin, after which we carefully remove it from the dough. Thus, we got a blank for cookies with a pattern already applied to it.

  8. Next, we cut future cookies from the dough. This can be done with curly molds or a simple knife. It will be more convenient to do this with a roller knife, but you can get by with an ordinary table knife.
  9. If we have scraps of dough left, which always happens when using forms, then we collect them in a lump, knead well and roll them out again into a layer, repeating all the above manipulations.
  10. Turn on the oven to warm up to 250 degrees. In the meantime, using a silicone spatula, lay the blanks on a baking sheet. Well, if there is parchment paper, then you don’t have to grease anything and then it will be convenient to remove the finished cookies from it. But if it is not there, it does not matter either: lightly grease the baking sheet with oil and place the cookies directly on it. Ship to hot oven for 5-6 minutes.
