Step-by-step recipe for salad with mushrooms and ham:

Cook the mushrooms first to give them more time to cool. Wash the mushrooms well, dry a little, cut into small segments. Place them in a frying pan with a small amount of vegetable oil. Do not fry the mushrooms too much; sauté only until soft over medium heat. Then transfer the champignons to a napkin to cool, which will instantly remove excess oil.

At the same time, boil the potatoes in their skins, cool, then chop them using a grater with large holes.

Cut the ham into medium-sized cubes. You can also use another type of cutting, for example, into strips.

Some time before cooking, boil the eggs, after they have cooled completely, scrape off the top layer from them, then slice them in any way you like.

Lightly squeeze the cucumbers with your hands, removing excess brine so that the dish is not watery. If you wish, you can peel the cucumbers, then the salad will turn out more tender.

Step 1: prepare the ingredients.

So, let's start making this wonderful European snack, first of all, using a sharp kitchen knife, peel onion, and remove the roots of each mushroom. We wash these products together with fresh herbs under streams of cold running water, dry them with paper kitchen towels, take turns sending them to the cutting board and continuing preparation. We remove the stems from the champignons, but do not throw them away; we immediately cut them into rings, quarters, or simply chop them into small pieces of arbitrary shape measuring from 5 to 7 millimeters, and put the mushroom caps aside, they will be needed a little later. Cut the onion into cubes about one centimeter in size.

Dill or parsley, although you can do both, just finely chop. Then use a new knife to remove hard cheese paraffin crust and grind it into fine, medium or coarse grater into clean dishes. Remove the food casing from the ham and cut it into plastics, cubes or pieces of arbitrary shape up to 1 centimeter thick on a clean board. Then we lay out the remaining ingredients that will be needed for the dish on the countertop and move on.

Step 2: prepare the filling.


Turn on the oven to heat up 200 degrees Celsius and place a frying pan with vegetable oil on medium heat. After a few minutes, place the chopped mushrooms in well-heated fat and simmer them in their own juice, constantly stirring with a wooden or silicone kitchen spatula. In about 9–10 minutes all the moisture will evaporate and the champignons will begin to fry. As soon as this happens, add the onions and ham to the pan, and cook them together for about 5 minutes, constantly loosening. Then fill the almost finished filling with sour cream, fresh finely chopped herbs, salt and ground black pepper to taste. Mix everything again until homogeneous consistency, warm up on the stove 3–4 minutes, remove from heat and move aside briefly.

Step 3: form stuffed champignons with ham.


Now take a large non-stick baking sheet, grease it with a thin layer of any fat and pour in half a glass of purified water or cover it with baking paper or aluminum food foil, having previously treated them with vegetable oil. Then we put the champignon caps there, using a tablespoon, fill each with a generous portion of the filling so that it lies in a small mound, crush the half-ready dish with grated cheese and proceed to the next, almost final step.

Step 4: bake stuffed champignons with ham.


Check the oven, if it has warmed up to the desired temperature, put it there stuffed mushrooms and bake them for 25–30 minutes, during which all the components of the already aromatic dish will reach full readiness.
