I don't like a recipe with yolks because the separated egg whites usually stay in the fridge until I have to regret throwing them away, so shortbread baking I make either no eggs at all, or with whole eggs and baking powder.

I cut cold butter, mix with eggs and sugar and beat until this mixture turns white on top.

Then I add flour with baking powder to get a smooth dense lump. The dough quickly stops sticking due to oil.

The bottom of the mold can be oiled, but in any case, you need to prepare for the fact that some of the apples will stick. This is nothing - then we collect them with a spatula and return them to the pie. Sliced ​​apples without peel should be mixed with sugar and put on the bottom of the mold.


We cover the apples with rolled out dough (I roll it out to a thickness of 0.5-0.7 cm).

If desired, you can add cloves. In a mortar or in a separate bowl, crush 4-5 clove buds (or you can grind in a coffee grinder or a spice grinder) and throw in the rest of the spices and flour. Let's extinguish 1 tsp. soda with bite (9%). Mix all the ingredients together with a spoon. To be honest, this is the best combination of spices for me: bright, spring-like exciting and with a pleasant aftertaste.

Pour 80 ml of sunflower oil into a separate bowl and grate the zest of one lemon. Citrus flavor will come in handy in the spring!

And here are our apples. Grate them first on a coarse grater and add to the oil. Mix everything thoroughly and add to the dry mixture. Let's mix again.

Now the nuts are on the way. Let's chop them into small pieces. It took me about 50 g, but 30-40 g is also possible. By the way, use any nuts, walnuts are just very friendly with apples, but almonds or peanuts are also great. Or maybe even a mixture of nuts! Experiment!

Add nuts to our dough and mix everything well again.

Now add 50-100 ml of water and mix. The dough should not be runny and run down a spoon or spatula, it is more like cookie dough. At first, it may seem to you that the dough is very dry and unlikely to rise. I had a similar feeling, but everything is different - it turned out exactly the way I wanted to see it: airy, delicate and spicy!

Let's make caramel

To make caramel, we need 30 g of lean margarine / lean butter / butter (for those who do not fast). Add margarine and 180-200 g of sugar to the saucepan. If you want a more caramel flavor, use cane sugar. We turn on the stove and, stirring occasionally, wait for the complete dissolution of the ingredients. After we reduce the heat and squeeze the juice of half a lemon. Stir again and over medium heat, wait until the caramel seizes and becomes golden in color. Do not forget to stir constantly: this is the only way you can control the whole process. It took me no more than 7 minutes to prepare caramel.
