But no, without certain rules, you may end up with a hard dough with unpleasantly crunchy grains of sugar on your teeth. Of course, if you are friends with baking and know everything or almost everything about it, then all my advice can be skipped. Well, if you are a beginner, then for you I will try to put everything on the shelves.

Of course, the kitchens of kindergartens are equipped with special equipment for kneading dough, therefore, in technological map just write - knead everything until smooth. But if we only have hands and a regular mixer? This is what we will deviate from.

Remove all ingredients for cooking from the refrigerator in advance, before kneading they should be at room temperature.



Instead of the usual one, you need to take fine sugar or powdered sugar, since the dough is quite dry and the usual one will not dissolve well, as a result - a crunch on the teeth, which is not very pleasant. No powder? Just pour sugar into a coffee grinder and after five to ten seconds the powder is ready.

In a bowl with a mixer, mix the butter with sugar, egg and sour cream. Please note in kindergarten take sour cream no more than 15% fat. For the test, this is not important, but the fat content will decrease a little.



Sift flour. This is not necessary at all to saturate the air, it seems like it has already been proven that nothing is particularly saturated, but so that there are no lumps and debris that sometimes comes across in flour.

Add flour, baking soda to the bowl and mix again until crumbs. Next, quickly, with your hands, collect the dough in a lump. The longer you knead the dough with your hands, the more the butter melts, and the firmer the dough will be.

The dough is ready, but for now we will clean everything up, wash the dishes and make the filling, let our dough lie in the refrigerator. In order not to dry out, wrap it in a regular plastic bag.



According to the technology, the cottage cheese is first whipped, until smooth, it should become smooth, without lumps. This can be achieved in two ways - grind in a blender or grind through a sieve and then mix with all the other ingredients. In a blender, it’s generally simple, with a minimum of body movements - just put all the ingredients there and beat well. Half a minute and we have a smooth curd mass.

If you see that the cottage cheese is dry, add a spoon or two of kefir or low-fat sour cream. I added 2 tablespoons of kefir. I did not add soda at all, as a result, the filling turned out to be quite tender. Moreover, the filling already increases in size during baking and can break the dough, which is undesirable.



The oven needs to be preheated, so it's time to turn it on. For shortcrust pastry it is important.

Take the dough out of the fridge and divide it into 10 equal pieces. The easiest way is to weigh the whole dough, divide by 10 and then weigh right amount. If there are no scales - everything is by eye.

According to technology, these 10 parts must be divided into two more parts, each of which is rolled into round cakes. Next, put a spoon in the middle of one curd mass, and cover with a second circle, overlapping the edges.

I decided to make it a little simpler: roll it into a wide oval (the thickness of the dough is a couple of millimeters), and from one edge the filling is a slide.



Gently cover with the second half (see that the cottage cheese does not “creep”) and lightly press the edges. Next, I pressed along the edge with a fork, making a kind of Christmas tree.



Line a baking sheet with baking paper and lay out our shortbread curds. 12 pieces is just a whole baking sheet. In theory, you don’t need to lubricate them with anything on top, we immediately put them in an oven preheated to 200 degrees.



We bake for 10, maximum 15 minutes, because even a slightly burnt shortcrust pastry is a tasteless pastry. Let it remain light. My edges turned brown, and I cut them off a bit in some places.

Curds turned out delicious, tender, with large quantity curd filling, not particularly sweet. I sprinkled them on top. powdered sugar. If you want sweeter ones, add an additional half tablespoon of sugar to both the dough and the filling.

  • flour - 2 tbsp.;
  • butter - 50 g;

  • egg - 2 pcs.;
  • sugar - 0.5 tbsp.;
  • semolina - 2 tbsp. spoons.

Beat the egg with sugar, put the melted butter, sour cream and gradually add flour with baking powder, kneading homogeneous dough. We post it in detachable form and distribute so that we get the sides. For the filling, combine cottage cheese, eggs, granulated sugar and semolina in a bowl.   • sugar - 120 g;

  • apples - 500 g;
  • sour cream - 180 g;
  • sugar - 120 g;
  • cottage cheese - 230 g;
  • egg - 3 pcs.;
  • vanillin - to taste.

Cooking

Put the pieces of frozen butter in a bowl, add wheat flour and sugar. Rub these ingredients well with a wooden spatula, drive in the egg and knead a homogeneous dough. After that we put it in plastic bag and send to the refrigerator for 40 minutes.

We chop the peeled apples into thin plates. Pour fat sour cream into the blender bowl, put cottage cheese, add sugar, vanillin and beat everything. After that, we introduce separately beaten eggs and mix.

Pre-chilled (let it soak for a couple of hours in the refrigerator or half an hour in freezer) cut the butter into small pieces. Hand kneading the dough is done very quickly and preferably with cold hands (hold them under cold running water) so that the butter does not have time to melt.


Sift 200 grams into a container (in a bowl if you make the dough with your hands, or a bowl if you use a food processor) sift 200 grams wheat flour. It’s better not to use all the flour at once, but add it as needed, since the moisture content of this bulk product is different for everyone, so it may not be 225 grams, but more or less. We also add a pinch of salt there (preferably fine, so that it combines with flour more efficiently).



And add cottage cheese. I use medium fat cottage cheese - 5%. You can take any of your choice, just remember that the drier it is, the less flour will be needed and vice versa.


Nozzle - a metal knife. We pierce everything in a food processor for about 30 seconds, no longer is needed. In the process, you must adjust the consistency of the dough yourself. If you see that the dough is too wet and spreads too much on the bowl, add more flour.
