Culinary basics: Sorbet, sherbet and granite. Perfect sorbet or popsicles

Step 1: prepare strawberries and bananas.

To make real sorbet or popsicles, any fruits and berries of your choice are suitable. I prefer the strawberry-banana and peach flavors of the dish. Therefore, I will prepare sorbet from such fruits. First of all, prepare the strawberries and bananas. Since these components are already frozen, we take them out of the freezer and put them on a cutting board. Using a knife, if necessary, cut the fruit into small pieces and transfer to the blender bowl.

Step 2: Make the Perfect Strawberry Banana Sorbet or Popsicles.

So, pour yogurt, cream or milk into the blender if desired, and also add sugar or honey. Attention: if you are a sweet lover, then you can add and 2 tablespoons sweet ingredient as the dish tastes mildly sweet. Beat all ingredients on medium speed for 1 minute. Initially, pieces of fruit will float in the mixture separately, but after a few seconds we will have a homogeneous thick mass along appearance somewhat reminiscent of viscous slightly thawed ice cream. If the consistency of your sorbet does not match the description, and the mass is rather liquid, then you need to add a couple more pieces of banana and strawberries and continue to beat the ingredients for a few more seconds until smooth. If, on the contrary, the mixture is quite thick, then it can be diluted in 1-2 teaspoons of milk or yogurt and again mix everything in a blender.

Step 3: Serve the perfect sorbet or strawberry and banana popsicles.

After preparing sorbet or fruit ice cream, using a tablespoon or a special spoon for ice cream, we transfer the dish to a bowl and we can enjoy this heavenly taste and unforgettable aroma. You can decorate the sorbet with sprigs of mint or sprinkle with grated dark chocolate.

Step 4: Prepare the peach.

We repeat the procedure from the beginning. Since fruit components must be well frozen to make sorbet or ice cream, it is best to alternate our fruits and berries. Therefore, after we have prepared a dish of banana-strawberry mass, we wash the blender bowl under running water, wipe the container dry with kitchen paper towels and proceed to the preparation of peach ice cream. So, we take out the freshly frozen fruit from the freezer and put it on a cutting board. Using a knife, cut the component into small pieces and transfer it to the blender bowl.

Step 5: Make the perfect peach sorbet or popsicle.

In a blender, add purified water and sugar or honey to taste. At medium speed for 1 minute whisk all ingredients until homogeneous mass. We make sure that the mixture is viscous, like slightly thawed ice cream. Just as in the first case, dilute the thick mixture with water or add a couple of pieces of peach if the mixture is very liquid.

Step 6: Serve the perfect sorbet or peach popsicle.

After preparing peach sorbet or ice cream, using a tablespoon or ice cream spoon, transfer the dish to a bowl and treat all friends to this unusual and very delicious dish. You can decorate the sorbet with peach slices or the same mint leaves. Enjoy your meal!

- - If you still have sorbet or popsicles left after cooking (which is most likely unlikely), in no case throw it away, but simply transfer the dish to a plastic container and put it in the freezer for storage. Before serving the sorbet, remove it and leave it aside for 15 minutes to cool at room temperature. You can also use microwave oven and set the mode - defrosting for literally 30-60 seconds.

- - The perfect sorbet or popsicles can be made from fruits and berries such as: cherry, papaya, kiwi, orange with and without peel, gooseberries, apples, apricots and even melon. Just before preparing the dish, it is necessary to peel the ingredients from the peel, tails and bones, put them in a food bag and hide in the freezer until the fruit is covered with ice and becomes hard.

- - In addition to the liquid ingredients indicated in the recipe, you can also use kefir, fermented baked milk or syrup.

- - For a sharper taste, sorbet or popsicles can also be added with liquor or any other alcoholic drink to your taste.

- - Sugar or honey can be replaced with fructose. Thus, the sorbet is no less tasty.

Sweet cold dessert, prepared on the basis of fruit puree and sugar syrup - the oldest prototype of modern ice cream and many oriental sweets.

A cold drink made from fruits and honey was called sorbet, sherbet, and sherbet until the beginning of the 20th century. Wikipedia says sherbet is a misspelling. However, this word is widely used . Now sherbet called oriental sweetness - creamy fudge with large quantity peanuts and other nuts, as well as popsicles, other than fruits and berries, containing milk, cream or yogurt.

Sorbet (sorbet) - came to us from french cuisine. At first, sorbet was served only in liquid form. It was cold and sweet fruit drink prepared according to oriental recipe. Then they began to mix it with ice, and then they invented many delicious frozen desserts: ice cream, melorin, sorbet, sherbet, popsicles, granita. Fruit ice, granita and sorbet do not contain milk and vegetable fats. They differ only in the method of preparation and consistency. Sherbet and melorin recipes include fats. In sherbet - milk fats, and in melorin - vegetable.

sorbet occupied a separate niche among the varieties of ice cream. In fact, this ice cream that does not contain any milk or cream. In the manufacture of dessert, berry and fruit puree, juices, sugar syrup and many other additives, including alcohol, egg white, honey and herbs.

Sorbet contains quite a lot of carbohydrates, but does not contain fat at all. This makes him low-calorie product, if you do not use a large amount of sugar, chocolate and nuts when cooking. The calorie content of sorbet depends on its composition and ranges between 50 and 180 kcal per 100 g.

Composition and basic cooking rules

To obtain a delicate, light and airy texture, the sorbet must be properly prepared.

First, sugar syrup is boiled and fruits and berries are pureed. All components are refrigerated. Some fruits (apples, pears) are recommended to be cut into pieces, frozen, and then smashed with a blender. Products are mixed and cooled like ice cream. It is necessary to periodically look into the freezer and mix the sorbet as soon as the layer at the edges of the form freezes. As a rule, this should be done every 30-40 minutes. Stirring prevents the formation of large ice crystals, makes the consistency homogeneous and fluffy.

Of great importance is the ability to correctly use natural ingredients in the recipe, which help to maintain the texture and shape of the finished product. These include:

  • natural preservatives;
  • natural stabilizers.

main preservative for sweet foods sugar. Sugar syrup helps to keep the product longer and keep its shape. Sorbet contains about twice as much sugar as ice cream. Dessert, which is based on sweet fruits and berries, needs less sugar syrup. But if there is too little sugar, then the fruit mixture will freeze into ice, lose airiness and softness. If there is too much sugar, then the mass may not freeze properly.

It is necessary to strictly observe the proportions of the proven recipe. A smoother and more delicate texture of the product can be achieved by replacing part of the sugar (about 10 percent) with invert sugar syrup.

Stabilizers are required when using a large number liquids in the recipe. For example, when the base of the dessert is not puree, but juice or compote. Natural stabilizer - egg white. Protein must be whipped into a soft foam and added to the mixture in the middle of the freezing process. Whipped protein not only prevents delamination, but also gives volume and splendor finished product. For one kilogram of the base, one whipped protein is enough.

Pectins help maintain the consistency of the sorbet. Many fruits and berries, such as apples, bananas, apricots, currants and cherries, contain a lot of natural pectin. In puree, its amount is enough to maintain the desired structure of a cold treat.

Sorbet with alcohol is a treat for adults. When adding alcohol, the freezing time increases, and the product becomes softer and more aromatic. Any recipe can serve as the basis, only part of the juice or sugar syrup is replaced with alcohol. Sweet liqueurs are added to the syrup when preparing sorbets from sour berries or citrus fruits. sparkling wine replace part of the juice in sorbets from sweet fruits and berries: pear, banana, raspberry and grapes. Cognac, brandy and others strong alcohol Pairs well with apple, plum and cherry.

Do you think that the difference in the words sherbet and sorbet is only in pronunciation? Is gelato an Italian inspired ice cream?

With the advent of summer, when a cold dessert becomes a salvation from hot weather, it will be useful to know the types of “ice cream” ...

1 sorbet

This frozen delight is made entirely of fresh berries/fruits and sugar. No hint of dairy. Often sorbet is kneaded in an ice cream maker, due to which it is easy to form a portion into a ball using a special spoon. Some establishments even serve sorbet between main courses. It is believed that the bright fruity aroma is refreshing. taste buds. Making sorbet at home is not difficult at all.

2 Sherbet

Ice cream sherbet - the same as the sorbet mentioned above, but with a small amount milk.

In this case, the main part should also be berry or fruit puree.

3 Granites

Like sorbet, Italian granita is made from berry puree, sugar and water.

The difference is in the resulting texture. In contrast to the smooth and slightly viscous consistency of sorbet, granite is scraped off the walls several times during freezing. Due to this, ice flakes are formed.

4 Ice cream

Proper ice cream according to GOST must contain at least 10% milk fat, which is obtained from cow's milk. At the same time, the whipping process is integral in cooking. This helps the ice cream not only freeze, but also acquire a sweet taste.

5 Gelato

I wrote about before, but I repeat. Firstly, this is how “ice cream” is translated from Italian. However, these two desserts are not at all similar to each other. Secondly, the basis of gelato is not milk, but custard. Due to which the proportion of milk fat in it is less, but during cooking it absorbs air worse, so a rather dense texture is obtained. Another difference is the serving temperature, which is slightly higher than regular ice cream, so gelato has a shiny and soft texture.

6 Frozen Custard

This super creamy dessert same as ice cream except for the addition of egg yolk. Thanks to such a slight change in the recipe, a thicker and, at the same time, softer consistency is acquired.

Frozen cream is popular in the southern and midwestern regions of the United States.

7 frozen yogurt

Today, this type of ice cream can be increasingly found in our stores. The main difference, as the name implies, is the use of yogurt, which replaces milk or cream, while the cooking process remains identical to ice cream.

Would need:

  • Sweets "Korovka" (I use Samara sweets) - 500 gr.
  • Butter - 90 gr.
  • Condensed milk - about 1/2 can (130-150 ml.)
  • Nuts - I have cashews - 150 gr.

How to make sherbet with nuts at home:

  1. Optionally, in addition to nuts and cookies, you can add raisins to homemade sorbet, in general, add everything you like, this will only make it tastier. I originally wanted to prepare my sherbet with roasted peanuts, but having come to a trusted department on the market, it just didn’t turn out to be roasted peanuts ... At home, frying peanuts is a dirty business, so my preference was given to delicious nuts - cashews. For fun, I counted the number of sweets in 500 grams - there were 34 of them. And one more important point, probably the most important, to get homemade sorbet of the consistency that they offer us in stores.
  2. It is important to use Korovka sweets, which do not have a liquid core when broken. They should be, I would say, lying down, having acquired a single consistency. To prepare sherbet, we take a deep, but not large saucepan, put our Korovka sweets in it, add condensed milk and butter here.
  3. Now we just have to subject the ingredients to the firebox. Of course, for a faster result, you can break the candies with your hands, but my candies melted very well - it only took about 5-7 minutes. When the mass has melted, you need to add nuts to it. The cashew is a large nut, so I wanted to break it a little.
  4. We mix everything thoroughly ... The smell goes through the kitchen, stunning, caramel, and you want to eat this mass ... In advance, for the sherbet, I prepared a form in which I lined a regular plastic bag. It can be lightly greased vegetable oil. This is to make it easier to remove the hardened mass from the mold. Pour the melted sweet mass into the prepared form, let it cool slightly and send it to the refrigerator overnight.
  5. In the morning, we are waiting for a delicious, sweet, hand-made Oriental dessert, a sweetness that can turn the head of many. Take it out of the mold and cut into pieces.
  6. Gorgeous, I can say that if I did not know .... that she cooked this sherbet with her own hands, she would have thought that he was from the store. A delicious, delicate, fabulous dessert is the best thing that can be served at home for tea and, of course, to treat guests who have come to the house. At the same time, surprise them that it is cooked at home. Dear housewives, do not be afraid to experiment and surprise yourself and your household first of all.

  4. Place the sherbet in a mold lined with cling film. Cool and put in a cool place for several hours until completely solidified.

We will need:

  • 1 kg of sugar;
  • 4 glasses of water;
  • 50 grams of chocolate (cocoa);
  • vanillin (to taste).

Cooking:

  1. Pour water into a saucepan, add sugar and cook over low heat until the sugar is completely dissolved.
  2. Then add vanillin and chocolate, put on a strong fire and cook the syrup, stirring constantly and removing scale. The syrup should be thicker than other types of sherbet.

  4. First, swirl the frozen bananas several times until small lumps form.
  5. We continue processing. Mix bananas on medium speed. As soon as we notice the sticking of the banana mixture, we use a spatula so that the resulting mixture is evenly mixed and whipped.
  6. Continue to mix the bananas in the food processor, stirring occasionally with a spatula, until the mixture resembles soft ice cream in consistency.
  7. Beat the banana mixture for another 2-3 minutes.
