I must say that until that moment I was quite skeptical about all the heh salads that could be bought at any point in the market, and I had never been an ardent fan of such salads. But this one captivated me literally from the first bite! It's just a celebration of taste! Moderately spicy, slightly sour, with ideal proportions of chicken and vegetables. Of course, the recipe ended up in my notebook that same day! Using this recipe, I was able to cook delicious Korean chicken heh the first time. I took a photo of the recipe so that you can see for yourself that the cooking process is not at all complicated. At least much easier than I thought. I want to warn you right away - chicken for heh is not boiled or fried, it is marinated raw, so be very careful when choosing chicken in the store. It must be absolutely fresh and from a trusted manufacturer.

  • chicken fillet– 500 g,
  • carrots – 200 g,
  • onions – 180 g,
  • vinegar essence - 1 tbsp. l.,
  • Korean carrot seasoning – 2 tbsp. l.,
  • vegetable oil – 4 tbsp. l.,
  • salt and ground black pepper - to taste,
  • sesame seeds – 1 tsp. (upon submission),
  • fresh cilantro – 10 g (when serving).

How to cook chicken heh in Korean

First of all, rinse the chicken fillet, dry it and cut it against the grain into fairly thin strips. If you have problems cutting the fillet (warm meat sometimes becomes capricious and literally falls apart under your fingers), you can keep it in the freezer for about 15 minutes.

Next are vegetables. We clean them, wash them, dry them and chop them. Chop the carrots into long, thin strips. A special Korean carrot grater copes with this task perfectly. If you don't have one, a regular grater with large teeth will do. Appearance the carrots will, in my opinion, not be so pretty, but this will in no way affect the taste.

We cut large onions into half rings or quarters (if the heads are quite huge), small ones can be cut into rings.

Place the prepared vegetables in a bowl with the chicken.

Seasoning vinegar essence.

Afterwards, heat the vegetable oil in a frying pan until it smokes slightly, then season the heh with this hot oil.

Mix the contents of the bowl thoroughly. We taste the heh, add salt and sourness if necessary. If you suddenly overdo it with acid, you can extinguish it a small amount Sahara.

Now the heh should marinate. To do this, cover the container with the salad with a flat bowl, place a weight on this bowl and load it in this form into the refrigerator, where it should stand for at least a day so that the raw chicken meat is certainly marinated. Recipe: Chicken Heh – with carrots and onions

chicken fillet – 500 gr. ;

onion – 1 pc. ;

vinegar essence 70% – 1 tbsp. ;

vegetable oil – 100 ml;

ground black pepper - to taste;

Wash the chicken breast and cut it into small pieces, about 1x2 cm, no more, it’s convenient to eat and they marinate better.

Boil the chicken pieces for 5-10 minutes beforehand. ordinary water without adding salt and spices. Some people skip this step, but I prefer to play it safe. Transfer the cooled chicken to a bowl.

We cut the carrots on a special Korean carrot grater, or using handy tools. It just takes a long time to cut with a knife, so I suggest this option. We make deep longitudinal cuts on the washed and peeled carrots.

Then we cut off the “chips” with a vegetable peeler.

These are the stripes you get. Mine came out a bit large, but they marinated well nonetheless.

Place the carrots in a bowl. Cut the onion into rings and also place in a bowl. You can add more onion; it turns out very tasty when marinated.

Next comes the turn of seasonings. Take salt, ground black pepper, paprika, hot peppers chili and, of course, the main seasoning for heh - coriander. It is this that gives the dish its characteristic Korean snack sweetish-spicy aroma. This is what the ready-made Korean carrot seasoning smells like first. You can safely use ready-made seasoning, in which case the appetizer will look more colorful).

Add seasonings to the chicken. Add vinegar essence. If you take diluted vinegar of 9% concentration, then you will need about 3-4 tbsp. l.

And finally, you need to heat the vegetable oil on the stove, pour it over the appetizer and stir quickly. You can tell that the oil is hot enough by the haze coming from it. Vegetable oil in this dish performs several functions at once: firstly, heat treatment of products, secondly, for taste, and thirdly, thanks to the oil, the rich aroma of seasonings is revealed.

Leave the chicken to marinate in this form for one day. The liquid released during the marinating process, as well as excess vegetable oil, should be drained.
