Pancakes with caviar are a doubly representative of Russian national cuisine. Unless, of course, this fish caviar is red or black (and not “overseas, squash”). Red caviar - a gift from Pacific and Atlantic salmon - seems to emphasize the breadth of the Russian soul. In general, pancakes with any fish roe are a truly Russian treat, generous, bright, rich.

Wikipedia states: “Cooking pancakes is a special skill that approaches art.”

Caviar, of course, can be any kind, including artificial, including not only fish. But basically, the filling will not be sweet, which requires a special approach to serving the dish, it temperature conditions And additional ingredients. Let's focus on the most popular pancakes - with red caviar.

Recipe for pancakes served with caviar

First, let's prepare the pancakes ourselves. Here are a couple of secrets for making pancakes spread better (thinner) and turn over easier:

  • For better spreading and subsequent unsticking of pancakes, it is better to dilute milk or kefir boiled water up to the total volume.
  • It is better to warm up the liquid a little, a little higher room temperature so that the components are better dissolved and distributed.

Universal pancake recipe:

  • water (milk, whey, kefir) – 0.5 liters;
  • flour – 2 cups (320 grams);
  • eggs - 3 eggs;
  • vegetable oil 2 tablespoons;
  • sugar – 2 tablespoons;
  • salt – 1 teaspoon
  • soda (baking powder) - 1 tsp.

Secret: for pancakes with caviar, you can add finely chopped dill or parsley to the dough.

6. Bake pancakes in a frying pan. Should be observed carefully. At the moment when the pancake is completely warmed up ( batter as if it sets and stops spreading) and starts to turn golden along the edge, it’s time to turn the pancake over.

  1. It is best to use a special pancake pan and only for baking pancakes.
  2. It should be well warmed up.
  3. To prevent the pancake from sticking, grease the pan with butter or a drop of vegetable oil. To reduce the temperature of an overheated frying pan, it is convenient to apply vegetable oil and rub it with the cut of half an onion. This is especially true for unsweetened pancakes, as it will give them light onion aroma.
  4. To prevent the pancakes from cooling down, they need to be covered with a clean kitchen towel or a plate.

How to beautifully wrap pancakes with caviar

The method of filling a pancake with caviar itself is not complicated. We simply put the caviar on the unrolled pancake and fold it or onto an already rolled pancake (possibly with some other filling). It is the brightness of the color of red caviar that requires the chef to search special ways wrapping and serving pancakes. I will list the most spectacular of them.

Snail

The pancake first rolls into a strip, and then rolls tightly from one edge to the other, like a snail. Secure with a skewer.

Sector or triangle

The pancake is simply bent along the middle line of symmetry - in half, a quarter, an octagonal sector.

Envelope

The pancake bends from four sides towards the middle.

tube

The tube can be open or closed. Then it can be cut into “stumps” or “rolls” at any angle.

Pouch

The edges gathered on four sides are tied together with something on top.

Pancakes for a buffet table

For a buffet, it is better to use this method so that the caviar does not fall off the fork. Here it is most suitable to serve pancakes cut into tubes, when the pieces are small and easy to prick. The envelope method is also suitable. It must also be taken into account that buffet table must be effective. And “snails” with caviar on top will look very beautiful on it. But you can also be original by serving pancakes with caviar in several layers, cutting the puff pastry pancake pie into pieces in the form of canapés.

Pancakes with caviar and sour cream

If you have already made pancakes with caviar, then, most likely, you are convinced that the friability of caviar is an obstacle to the uniform distribution of the filling. To overcome this irritating property, it will be convenient to use it as a filling with other ingredients, for example, sour cream.

You need to take thick sour cream, add red caviar to it and carefully move it evenly. You can also add finely chopped dill, parsley or young onions. There is no need to add salt - after all, the caviar is already salted. This is the filling we use for our pancakes. We fold them in any way you like, which are given above.

Pancakes with caviar and cream cheese

Spicy and tender pancakes you will get if you use cream cheese instead of sour cream. The cheese can be anything from Philadelphia to mascarpone. Almette and Hochland are also suitable.

Curd cream cheese with herbs seems to be specially created for pancakes with caviar.

Pancake tubes and rolls are also more suitable here. But, since cheese is still denser than sour cream, you should not mix it with caviar, it is not so easy to do. The cheese is usually spread evenly over the surface of the pancake first. Then the pancake is rolled into a tube, but not very tightly, so that this tube can be pressed into a strip. And the strip already obtained from the tube is rolled up in the form of “snails”, “stumps” or “barrels”, and a solid portion of red caviar is placed on top of the barrel, so to speak - with all your heart.

Before cutting, it is better to cool pancakes filled with caviar with cheese or sour cream in the refrigerator for at least 20 minutes.

With caviar and red fish

Is it possible to make it even tastier? As much as possible! To do this you need to give even more filling! For example, red fish meat - salmon, pink salmon, sockeye salmon, trout, chum salmon. So, you need to take lightly salted red fish fillet, slice it thinly and spread it evenly over the pancake. But before that, don’t forget to spread the pancake with cream cheese! Then you need to roll it up and put a tasty portion of red caviar on top.

This is what will happen in the end.

Pancake appetizer for the holiday table

Look another one nice option serving pancakes with caviar.

The most important thing is that you need to approach the preparation of pancakes with caviar with soul, experimenting with proportions and quantities of ingredients. And you will definitely find a formula that expresses the entire breadth of the Russian soul!

Even ingredients like caviar, which arouses the interest of consumers even in pure form, it’s always better to serve it beautifully. Nobody has yet canceled standard sandwiches or sandwiches with caviar filling, but we propose returning to even more classic recipe, which involves wrapping a portion of caviar before serving. The recipe itself is completely simple, but we’ll look at how to wrap pancakes with caviar in more detail.

Pancakes with caviar - design options

Beautiful design of pancakes with caviar plays important role in case you want to highlight an appetizer from others at a banquet or buffet table. But before you beautifully serve pancakes with caviar, think several times about how comfortable it will be for your guests to eat them. You should not give preference to a pile of complex designs because it will eat great amount time required for molding.

Perhaps we should start with the simplest variation of how to serve pancakes with red caviar - these are simple pancake triangles. To make one such triangle, simply fold the pancake in half, and then tuck both of its side thirds towards the middle. A generous portion of caviar is placed on top of the triangle, and we complement everything with greenery as decoration. Next to it you can place a container with sour cream or cream cheese, portions of which guests can spread on top themselves.

Pancake rolls with caviar can also be considered one of the simplest forming methods. There are two variations here: in the first one, you can roll the pancake into a tube, and then wrap it around its axis in the manner of a snail and secure it with a green onion feather, or roll the pancake into a tube, cut into portions, place it cut side down, and put a portion of caviar on top.

Another way to beautifully wrap pancakes with caviar is a simple bag, the edges of which are secured together with a feather of green onion. You can place just caviar in the center of the pancake or put a portion of sour cream or herbs next to it. Gather all the edges of the pancake together and tie them together with a feather of green onion.

There are also more clever ways to shape pancakes, like rolling the pancakes into buds and laying the eggs on top. If you don’t know how to wrap pancakes with caviar in a rosette, then there is nothing simpler: fold the pancake and cut it in half, each half will be a triangle that will need to be wrapped in a tube. Turn the narrow part of the base of the bud up, this way it will fix the “petals” together and prevent the bud from falling apart. All that remains is to add a portion of caviar and you can serve.

A little bit more in a simple way rolling the pancake and giving it the shape of a flower bud is this one. Here we form a lily bud from a pancake, for which you should also first fold the pancake in half, then cut it and place a portion of caviar on top of each triangle. Next, cover the caviar filling with the free side edges of the pancake and secure the narrow base of the bud with an onion feather. Before serving pancakes with caviar, you can put a small portion of sour cream or whipped soft butter with herbs and zest on top.

Another way of wrapping involves preparing small thick pancakes, which are fried on only one side under the lid so that the top remains slightly sticky (but not raw!). Caviar is placed in the center of such a pancake, and the three edges are stuck together so that you end up with a triangle. Of course, in in this case you can also add butter, sour cream, processed cheese or cream cheese like Philadelphia.

Very beautiful, very unusual and very delicious snack– that’s what I can say about today’s recipe. It’s unlikely that I will surprise you with spring rolls as such, but specifically with these pancakes, stuffed with caviar- exactly. The most important thing here is not even the filling, but the design of the pancakes with caviar: they turn out very small, neat and very impressive. Although you shouldn’t beg the merits of the filling - the delicate curd mass goes well with red caviar, looks appetizing and definitely won’t disappoint you with its taste.

In general, everything matters: the composition, the cooking process, and the serving of pancakes with caviar. But don’t let all this scare you: I will be happy to tell you and show you how to do delicious filling and how to wrap pancakes with caviar so that they turn out so beautiful and tasty. Everything is actually not as complicated as it might seem at first glance.

Ingredients:

  • 80 g red caviar;
  • 4-6 pancakes (diameter 22 cm);
  • 100 g cottage cheese;
  • 1-2 tbsp. l. sour cream;
  • dill greens;
  • salt.

How to cook pancakes with caviar:

Let's fry thin pancakes(regular, but not sweet). Cool.

Wash the dill thoroughly, dry it, and chop it finely. Mash the cottage cheese into a paste using a blender or rub through a sieve. Add sour cream and dill, mix. The mass should not be too liquid, hold its shape well and look like thick cream. We add a little salt, but don’t get carried away - remember that this is part of the filling, which also includes caviar, which is also quite salty.

We cut each pancake crosswise into 4 equal parts.

On each piece of pancake (closer to its wide part), spread the cottage cheese in a strip, retreating 1.5 - 2 cm from the sharp edges.

We put caviar on top.

And now we come to the main point: how to wrap pancakes with caviar. We need to get an envelope: first we bend the sides, and then we wrap it from the wide side to the sharp end. Place the folded envelope edge down. But in this form, pancakes stuffed with curd mass and caviar are not very impressive.

So we have to decide how to serve pancakes with caviar so that they look festive. The answer is very simple: put a little caviar on top of the pancake envelope and garnish with a small sprig of dill.

You see, the appetizer immediately changed, became brighter and more appetizing.

Now you know how to cook pancakes with caviar so that it turns out beautiful dish worthy of any, most important, celebration.
