1. Dissolve sugar, yeast and a spoonful of flour in heated milk. Stir and let it brew until a lush head of foam appears. Grind the margarine with flour, add fine salt to it, then pour in the dough and knead the elastic dough. Place in a bag and place in the refrigerator for 2 hours.

2. For the filling, chop the cabbage and fry in a frying pan.

3. Cut the fish into any pieces, fry separately with onions.

4. Combine both fillings, add spices, knead.

5. Take the dough out of the refrigerator and divide it into two different parts. Roll out the larger one and place it in a greased pan, distribute the filling and cover with a flat cake made from the remaining dough. We make cuts.

6. Brush the pie with egg and bake for half an hour at 180 degrees.

You can’t spoil the pink salmon filling with onions! On the contrary, it will make the pie juicier and more aromatic. And so that the onion does not crunch on your teeth and does not taste bitter, you can fry it in advance or at least pour boiling water over it. It turns out no less tasty with pickled onions; the filling is best made from vinegar and sugar.

To prevent the layers of dough from coming apart during baking and rising, the edges should be lubricated with water. This method is especially good for gluing puff pastry.

Instead of fresh pink salmon, you can use salted or lightly salted salmon for the filling. Or mix several types, you can also use canned food. Therefore, if the fish is left over from the holiday table, you can always put it in a bag and freeze it.

Whatever dough is used to make the pie, you must sift the flour. This is done not only to get rid of impurities, but also to saturate the product with oxygen. The dough will be more tender, airy, and when kneading the products will mix more easily.

To make the yeast cake rise faster, it can be formed on a heated baking sheet. But not hot! You can also place the mold on a pan of warm water.

Like all the recipes I use, this pie recipe is very simple. But this does not affect its taste at all) Your family will like this very juicy and tender pie)

I make it with pink salmon, but you can use any other fish that your family likes or, as an option, a couple of cans canned fish)

INGREDIENTS NEEDED:

Kefir or spoiled milk– 0.5 liters

Egg – 1 pc.

Yeast Saf moment – ​​1 pack (11 grams)

Salt - half a teaspoon

Sugar – 2-3 teaspoons

Vegetable oil – 2 tablespoons

Flour – 800 gr - 1 kg

Filling

Fresh pink salmon- medium, up to 1.5 kg

Onions - 2-3 pcs (you can put more, this will make the pie even juicier)

Salt, pepper - to taste

Butter - 50 grams

Fill

Mayonnaise or sour cream - 4 tablespoons

Egg - 4 eggs

Flour - 1 tablespoon

Dill, green onion - optional (I don’t add it, I think it takes away the taste of the fish)

COOKING METHOD:

Dough

Let's make the dough. We dilute the yeast in small quantity warm water. You can add a little sugar for better fermentation.

Stir, cover and let stand for 15-20 minutes.

During this time, the dough will increase in volume and a cap of bubbles will appear on the surface - this indicates that you are doing everything correctly and the dough is ready.

Stir sugar, salt in kefir at room temperature and add our dough. Mix everything, pour out the vegetable oil, add flour and knead soft dough. The amount of flour included is approximate, because... It's hard to say how much flour you'll need. See by appearance– the dough should be soft and light.

Add flour gradually, knead and see if it is not enough, add more.

This way you will definitely not spoil the dough and make it too thick, and your finished pie will be tough and heavy.

The dough was kneaded, kneaded well, put in a bowl, covered with a clean towel or bag and set to rise in a warm place.

After 40 minutes my dough was ready. But it can be a little less or more, it depends on the temperature in your kitchen, and on the freshness of the yeast, and on the flour itself.

Pie filling

While our dough is rising, let's make fish.

I won’t describe this process completely; I think everyone knows how to fillet fish and cut it into small pieces, about 2 cm.

We cut the onion into pieces or rings - it doesn’t matter.

Combine fish with onion, add salt and pepper and mix gently.

Fill

Here everything is even simpler - beat eggs with mayonnaise and flour. If you use sour cream instead of mayonnaise, add salt. That's it, our filling is ready.

Let's start making the pie

Grease the mold or frying pan with oil. I line the mold with paper and then grease it with vegetable oil, so the dough does not stick to the mold and it is very easy to clean).

We distribute the dough according to the form, not forgetting to form the sides. The sides must be high, because As you and I have quite a lot of filling.

From the indicated amount of dough products, it turns out a bit too much, but look at the size of your mold, I used a little more than half of the entire dough for the pie, the rest went to the buns.

Place the fish in an even layer on the dough.

Place cheese cut into thin slices on top of the fish. IN original recipe there was no cheese, but I adjusted it a little and added cheese. With cheese, the filling turns out to be more aromatic, but if you don’t have it, feel free to make the pie without cheese)

And cut the butter into the same slices and place it on top of the cheese. Why is this needed: everyone knows that pink salmon is a bit dry and oil will give it tenderness and juiciness.

And the last stage of preparation - fill our pie with filling and, if necessary, distribute it evenly throughout the pie.
