Bagels with sour cream - general principles of preparation. Insanely delicious shortcrust pastry bagels for the whole family.

Remembering my childhood, I remember these bagels - my mother often made them. The recipe is simply unique, tested for more than a decade, and has never failed. This recipe makes amazing bagels, don't change anything about it. My kids constantly demand and wait for bagels, even though I often make some. But bagels are something for them! Give it a try. Although these baked goods, of course, are not healthy, sometimes you can pamper yourself and your family. You can't buy these bagels in the store.

Recipe: Delicious yeast bagels:

300 ml milk

65 g fresh yeast or 3 tsp. dry

200 g butter(or margarine)

1 tsp. salt

Vanilla sugar or vanilla

180 g sugar (in a bowl)

4-4.5 cups flour

2-3 tbsp. l. flour

180 g thick jam(strawberry tastes best) or grated apples (as a last resort)

How to cook yeast bagels:

1.Grate butter from the refrigerator onto coarse grater(although as a child my mother always cooked them with margarine). Add 2 eggs, lightly beaten with salt.

2.Dilute in warm milk fresh yeast If yours are dry, you need to mix them with flour. Add milk to butter, also vanilla. Lightly stir everything. Please note that we do not add sugar yet.

3. Now you can add the sifted flour. First, 3 cups gradually, then knead the remaining flour on the table or in a large bowl using vegetable oil. Knead moderately stiff dough, not too tight, so that the bagels come out tender and fluffy. Place the dough in the refrigerator for 1 hour. During this time it will fit there.

4. Divide the dough into 2 parts, roll each into big circle, 3-4 mm thick. Now we will use sugar when rolling out the dough, instead of flour. That is, they rolled it out a little - sprinkled the dough with sugar, lightly pressed it into the dough, rolled it out again. You can’t use flour here anymore, otherwise the sugar won’t stick.

5.Cut the circle into rays, put a little jam on the edge of each, pinch the edges and roll into a bagel.

Dip the top side into sugar. Place on the baking sheet with the side where there is no sugar. Lightly grease the baking tray vegetable oil, cover the top with baking paper (parchment). Place the bagels at a distance from each other. From this amount of food I got 23 bagels, and I baked the 24th one separately in a bowl - it didn’t fit.

6. Place the bagels in a preheated oven, bake for 40-45 minutes, immediately at 180 degrees for 20-25 minutes, then reduce the heat slightly. Immediately remove from the oven, let cool slightly for 10 minutes on the baking sheet, then transfer to a plate and cover.

Bagels with sour cream and margarine - a super recipe!

Required Products:

Yeast bagels with sour cream and margarine

I used to think that if a recipe specifies yeast, then the dough must be “suitable.” And this, as everyone knows, takes up a little free time. But I really want to make something sweet with yeast and quickly. This bagel recipe is just that. We bake bagels with sour cream, with yeast, simply and without any fermentation or proofing.

And you can see the result for yourself in the photo. Fluffy, rosy bagels for the whole family and more! No need to be greedy!

First of all, I advise you to deal with the yeast. In order for our dough to come out not only flaky, but also fluffy, the yeast needs to be dissolved. And warm milk will help us with this. Instead of milk, you can take plain water.

So, add 1 teaspoon of sugar to warm milk (the process will speed up) and crumble the yeast. Cover with a saucer and set aside. In the meantime, we will do the following.

While the dough is cooling, there is time to remove unnecessary utensils from the table and prepare the necessary equipment (rolling pin, sharp knife, teaspoon). Well, and, of course, sweet filling to your taste. Dust the work surface with flour. Remove the plate of dough from the freezer and move it to the shelf in the refrigerator. We take out one ball of dough, and the rest remain in the refrigerator.

Tip: send any dough only to a preheated oven to the desired temperature.

There are a lot of bagels, but for my gluttons, as always, it didn’t last long. Until the morning at the latest.

P.S. Since everyone in my family loves bagels, I bake them quite often. And that's what I noticed. If you prepare the dough from cold margarine, the dough will be flaky and fluffy. And if you put soft margarine - finished goods The results are not so fluffy, but also completely different in structure - more crumbly, and melt in your mouth. In general, sandy ones.

At home, many housewives prefer to bake bagels. A margarine recipe is best suited for this.

The simplest way

Homemade baking is a great way to please your loved ones. Children especially love her. A soft bun prepared by mother’s hands is much tastier than store-bought buns. A wonderful option for such a delicacy is bagels. The margarine recipe allows you to do everything without much difficulty.

As an example, we can consider the simplest option, for which you will need: 4 cups of wheat flour, a glass of kefir, a pack of margarine (or butter), a teaspoon of soda and a little jam.

Everything is prepared in one go:

  1. Pour the flour into a spacious container in the form of a slide.
  2. Place margarine on top, and then use a knife to chop the food into fine crumbs.
  3. Add kefir and soda and knead the dough. It should be quite elastic.
  4. Roll out the mixture into a pancake ½ centimeter thick, and then cut it into four equal parts.
  5. Carefully place a little jam on each piece.
  6. After this, roll them into a roll and place them on a baking sheet greased with vegetable oil.
  7. Send the semi-finished products to the oven, and then bake there until golden brown.

They turn out very delicious bagels. The margarine recipe is quite simple and convenient.

To the New Year's table

Previously, baking was present in every home. Not a single celebration could take place without her. And even now you can bring back the old traditions and make, for example, wonderful New Year’s bagels. The margarine recipe will allow you to cook universal dish without any problems. You only need: 2 cups flour, 1 a raw egg, ½ cup sugar, the same coconut flakes, 200 grams of margarine and a teaspoon of baking powder. Among other things, you will need parchment.

Now you can start cooking:

  1. Pour all the dry ingredients (flour, sugar and baking powder) into a bowl and mix them well.
  2. Grind the margarine on a coarse grater and add it to the rest of the products.
  3. Add the egg, shavings and knead the dough, rolling it into a ball.
  4. After this, it needs to be rolled out into a layer, the thickness of which is no more than 5 millimeters, and cut with a knife into arbitrary triangles.
  5. Roll the blanks into a tube and place them on a prepared baking sheet, previously lined with parchment.

In the oven, this dish is prepared in just 15 minutes. After all this, the still warm buns can be sprinkled with the same shavings or powdered sugar.

Lush delicacy

In this case, the food set will look like this: a pack of any margarine, 4 teaspoons egg, two glasses boiled water, a pinch of salt, 125 grams of sugar and something for the filling.

In this case, the process will begin slightly differently:

  1. In a plate, combine water, yeast and 50 grams of sugar. Then put it where it is warm and wait for the dough to rise.
  2. Melt the margarine and pour into a separate container. Add an egg, 50 grams of sugar and salt there. Mix everything slowly.
  3. Without stopping the process, introduce the dough.
  4. Add flour and make final kneading. It doesn't take much time.
  5. Pour the remaining sugar into a separate plate.
  6. Tear off a piece of the dough and then roll it out into a flat cake with a rolling pin.
  7. Cut with a knife into 8 equal sectors. Place the filling on the wide side of each of them, and then roll the bagel.
  8. Dip each piece in sugar, place on a baking sheet, and then put in the oven.

In just half an hour they can be removed and served.

Alternative option

There's another pretty one interesting recipe and margarine. Its secret is that fluffy dough It turns out even without adding soda. In addition, there is no sugar in the recipe. This makes the bagel a little bland, but that gap can easily be filled with a sweet filling.

Products needed: 600 grams of flour, a glass of sour cream, a pack creamy margarine, a pinch of salt, 40 grams of grated lemon zest, 2 eggs, a bag vanilla sugar and 100 grams of powder.

Preparation is carried out in the usual way:

  1. Grind the heated margarine in a bowl with sour cream.
  2. Add eggs, salt and zest.
  3. With constant stirring, add flour until a plastic dough forms.
  4. Divide the mass into parts, roll each of them into a round layer.
  5. Cut the resulting cakes into triangles with a knife.
  6. Place a spoonful of jam on each of them, and then carefully roll into a tube.
  7. Place the blanks on a tray lined with oiled parchment and place in the oven for 30 minutes at 150 degrees.

Before serving, sprinkle hot bagels with powder. But you don’t have to do this.

Favorite filling

The recipe for margarine is not at all similar to the previous version. In this case, the technology is slightly different.

And the set of products is also somewhat different: 350 grams of flour, 200 grams of sour cream and margarine, 3 tablespoons of sugar, 6 grams of soda, a little powdered sugar and 150 grams of jam.

Cooking method:

  1. Melt margarine in a saucepan, and then add sugar and sour cream to it. By stirring, turn the products into a homogeneous mass.
  2. Gradually add flour and finally knead the dough. It shouldn't be completely cool.
  3. Shape it into a ball and wrap it in cling film and refrigerate for about 60 minutes.
  4. After an hour, divide the ripened mass into 6 parts, then roll each into a pancake 3 millimeters thick.
  5. Place jam on the workpieces in a circle. After that, roll them up and place them on a baking sheet lightly greased with oil.
  6. Bake in the oven for half an hour, and it is better to set the temperature to 180 degrees.

Sprinkle the finished bagels with powder. After this, you can start eating them immediately.

Unusual pleasure

You can try a not quite familiar recipe for bagels made with margarine and milk. The effect is that the dough is prepared mixed (sand and yeast). After baking, the product is both fluffy and crumbly.

The advantage is that you only need very few ingredients: 25 grams of fresh yeast, 3.5 cups of flour, an egg, cinnamon, a tablespoon of sugar, a pack of margarine and half a glass of whole milk.

The cooking process is also a little different:

  1. First, you need to grind the yeast well with sugar.
  2. After that, pour warm milk over them and set aside.
  3. At this time, chop the flour with margarine.
  4. Beat the egg into the resulting crumbs, pour in the yeast mixture and prepare the dough. It shouldn't stick. Otherwise, you can add a little more flour.
  5. Place the dough ball in a cold place, as usual, for an hour.
  6. For the filling, mix sugar with cinnamon.
  7. Divide the dough into 3-4 parts. Roll each into a pancake, sprinkle with filling and divide into sectors with a knife.
  8. Roll the triangles in the usual way and place on a baking sheet. First you need to sprinkle it with flour or cover it with baking paper.
  9. At 200 degrees, 30 minutes is enough for baking.

It is better to eat bagels after they have cooled completely.

Curd fairy tale

They are no less tasty without yeast - on margarine, with fermented milk products, at home - allows you to prepare baked goods very quickly.

All you need to do is buy in advance: 300 grams of flour, 200 grams of margarine and low-fat cottage cheese, 1 tablespoons regular and 1 vanilla sugar, 3 grams salt, half a teaspoon baking powder. For the filling, use any marmalade.

The cooking process itself is very similar to all previous ones:

  1. Add to flour vanilla sugar, baking powder and salt.
  2. Chop the resulting mixture together with margarine into crumbs.
  3. Add regular sugar, cottage cheese and prepare the dough. Place it in the refrigerator for half an hour.
  4. At this time, cut the marmalade plate into small cubes.
  5. Divide the chilled dough into 3 parts.
  6. Roll out each of them on the table and cut with a knife into even triangular pieces.
  7. Place a piece of marmalade on each of them on the wide side, and then roll them into tubes.
  8. Bake the resulting semi-finished products for 25 minutes in the oven at 185 degrees.

Before eating, the bagels must be thoroughly cooled, since the marmalade inside remains hot for a long time.

If you don’t have any time at all, but want something tasty for tea, then we suggest you prepare bagels with margarine. You can use any filling, or you can even bake buns without it.
