Interesting articles

It is not for nothing that cherries in their own juice are considered one of the most popular and sought-after sweet preparations for the winter. Appetizing berries in light syrup are bright and delicious dessert, as well as an excellent addition to ice cream. Such cherries can be safely used in baking - try pies and pies, cakes and pastries, puffs, dumplings and cheesecakes with canned berries!

It is not at all necessary to use exactly as many cherries as indicated in my recipe. It is enough to understand that 300 grams of granulated sugar is enough for 1 kilogram of prepared berries. Let this not be a classic cherry jam or jam - fragrant, pleasant sweet cherry with a characteristic sourness, you will also like it very much.

Ingredients:

Cooking step by step with photos:

We sort the berries and wash them in cold water. We recline on a sieve to glass the water.

We remove the bones in any convenient way. I strongly advise you to buy yourself a similar device for removing stones, although you can use a pin in the old fashioned way (my mother still does this).

The weight of cherries (2 kilograms) is indicated already prepared, that is, pitted (pitted weigh about 180 grams). You can take as much as you have, while adding the required amount of granulated sugar.

We fill the prepared berries with sugar (600 grams are enough for such a weight of cherries). By the way, the juice that is formed when the seeds are removed from the berries, also add directly to the pan.

Gently mix the berries with sugar with your hands, as if scooping up the contents of the dish from the bottom up. We cover the dishes with gauze and leave for several hours so that the berries release the juice. It is best to leave the cherries with sugar overnight if the berries fell asleep in the evening. If the room is too hot, the berries can turn sour, so put the dishes with cherries in the refrigerator for a while.

My cherry was very ripe, so the juice of the berry was given out in just 2 hours. There was almost no sugar left at the bottom.

While the berries were resting in sugar, we managed to prepare dishes for their preservation. For this recipe, you will need 4 jars (500 milliliters) with lids that need to be sterilized. Lately, I've stopped sterilizing jars in the microwave and switched to the oven. We shift the cherries into jars, pouring the resulting syrup. Everything that was in the pan completely fit into these 4 jars.

Since our berries are raw, the workpiece must certainly be warmed up (if you plan to store it in the basement or cellar). For storage in the refrigerator, the processes of heat treatment of dishes and cherries can be completely neglected - nylon caps help you. But in this case, the dessert will need to be eaten within a few days! For long-term storage we take a pan, put a flap of fabric on the bottom (so that the jar does not burst), place the blanks.

We cover the jars with sterile lids: if you have screw caps, just screw them on, but not completely. We put ordinary tins (as in the photo) on the banks. Fill the jars with water up to their shoulders (it can be cold, it can be warm, but not boiling water, so that the jar does not burst from the temperature difference). We put the pan on the fire, bring to a boil and, with a slight gurgling, sterilize the workpieces for 15 minutes.

Option 1: A classic recipe for cherries in their own juice for the winter

From different fruits and berries prepare different winter preparations. For example, it is better to make confiture from apples, and jam from blueberries. But the presented selection will be devoted to exquisite cherry in its own juice for the winter, which requires only two ingredients to create. Although we will consider other options.

Ingredients:

  • 2 kg of juicy ripe cherries;
  • 1.5 kg of regular white sugar.

Step-by-step recipe for cherries in their own juice for the winter

Cherry review. Remove rotten and damaged berries. Remove stems and discard.

Put the prepared berry in a bowl or a suitable basin. Pour in water. Wash each berry and transfer everything to a towel spread on the table.

After half an hour, when it dries, squeeze out the bones. At the same time, throw the prepared cherry into the basin.

At the current stage, pour the contents of the basin with white sugar. Shake the container gently a couple of times. Leave the berry overnight (from 12 hours) so that it releases a lot of juice.

The next day, put the basin on a large fire, where bring the mixture to a strong boil. Then immediately put the berries in the jars, filling them by two-thirds.

Now add hot sweet juice and cover with lids. Rearrange the jars of cherries in their own juice for the winter in a pot of boiling water. Sterilize for ten minutes without lowering the temperature.

Carefully, using a mitten, take out the cans and immediately roll up the blanks. At the end, cool on the kitchen table and put in the pantry.

To get a lot of juice, choose ripe fruits. The main thing is to prevent rotten fruits from getting in, which will definitely spoil the jam, fermenting after a few days. And if you are embarrassed that the cherry will turn out too sweet, include a little citric acid.

Option 2: A quick recipe for cherries in their own juice for the winter with seeds

To close the berries in their juice quickly, we recommend that you do not waste time removing the seeds and close the cherry in its entirety without sterilization.

Ingredients:

  • 2 kg fresh ripe cherries;
  • 3-4 grams of citric acid;
  • 1.5 kg of white (regular) sugar.

How to quickly cook cherries in your own juice for the winter

Pour water into a large basin. Now pour fresh cherries into the sink. Removing thin strong branches, throw the berries into the water.

At the next stage, add regular sugar and mix the ingredients together with two spatulas. Place the bowl on the middle burner.

Simmer the cherries in their own juice for the winter at an average temperature, and ten minutes later add all the citric acid.

When the last ingredient is dissolved, pour the berries along with the juice into sterilized jars. Screw on scalded lids immediately.

Since we quickly close a whole pitted cherry, it is very important to pierce (not through) each berry. It is thanks to this procedure that the berries will be able to release enough juice for our sweet preservation.

Option 3: Cherries with blackcurrants in their own juice for the winter

What can be added to today's jam to improve the taste characteristics? In this recipe, we suggest using blackcurrant.

Ingredients:

  • 1 kg of juicy blackcurrant;
  • 2 kg of ripe fresh cherries;
  • 2 kg of white regular sugar.

How to cook

Carefully review both cherries and currants, then remove the excess (leaves, twigs, ponytails) and rinse in a bowl of cold artesian water.

Put both berries on a large canvas. While the currants are drying, squeeze the pits out of the cherries, transferring them to an enameled basin.

At the next stage, I add blackcurrant to the indicated berry. Immediately enter all the planned sugar.

After shaking a couple of times, leave under the film on the refrigerator shelf. After 10-12 hours, return the container and place on the stove.

Turn on the middle burner. Bring the cherry in its own juice for the winter to a boil. Immediately after that, pour the jam into the jars washed with soda.

Sterilize the sweet mass for ten minutes in strongly boiling water. Then roll up very quickly, using a towel so as not to burn your hands.

Thanks to the addition of blackcurrant, we do not have to include citric acid in the recipe. After all, this berry is already sour, which means that it will not only balance the taste of the sweet preparation, but also play the role of a preservative.

Option 4: Grated cherries in their own juice for the winter

We will make the next jam by grinding ripe pitted cherries in a meat grinder or using a blender.

Ingredients:

  • 3 kg of fresh juicy cherries;
  • 5-6 grams of granular acid;
  • 2 kg of regular sugar.

Step by step recipe

Rinse the cherries in a large bowl of water. At the same time, remove the branches. Also shake off the moisture from the berries and squeeze out the seeds one by one.

Grind the resulting fruits for a few seconds in a stationary blender. Place the mass in an enameled basin.

Now sprinkle the grated cherries with regular sugar. Mix with a long spoon or spatula. Forget about the berry for a few hours (up to 5).

At the next stage, put the cherry in its own juice for the winter on a big fire. Boil, removing the foam that appears on the sweet surface.

After turning off the stove after six minutes, add citric acid granules. Mix the contents of the pelvis in a circular motion.

Immediately pour the crushed berries into jars. Sterilize, which will take about ten minutes. Then cool down.

Thanks to the fact that we chop the cherry in a blender, it will release the juice much faster. Especially considering that it will be sprinkled with sugar. But adding acid is important, as for other sweet berry jam recipes.

Option 5: Cherries with raspberries in their own juice for the winter

Another berry that goes well with cherries is raspberries. That's exactly what we will add to the fifth recipe of our sweet preparation.

Ingredients:

  • kilogram of ripe raspberries;
  • two kilograms of juicy cherries;
  • 5-6 grams of acid (citric);
  • 2 kg sugar (regular).

How to cook

Sort and wash raspberries and cherries thoroughly. Put the first berry in the basin. After that, remove the bones from the second with a pin.

Add cherries to raspberries and sprinkle with sugar. Shake gently so that the crystals are evenly distributed among the berries.

Leave, covered with foil, for 12-14 hours. During this time, do not touch the contents of the basin so that the raspberries and cherries release juice, but do not turn into porridge.

After the specified time, put a basin with cherries in their own juice for the winter on the middle burner. Boil.

Cook after bubbles appear for about three to four minutes, skimming off the foam as you go. At the end, dissolve the acid, lay the sweet Cherry jam into sterilized jars and roll up immediately.

Raspberry will add to sweet preparation unique aroma and delicate notes that will be appropriate when it comes to the bright tart taste of cherries. But it is necessary to mix the berries as carefully as possible so as not to damage their surface.

Option 6: Cherries in their own juice with gelatin for the winter

In order for the liquid component of the jam to be more like jelly than simple juice, we advise you to supplement this version of the preparation with granulated gelatin.

Ingredients:

  • 2.5 kg of ripe cherries;
  • a sachet (15 g) of gelatin;
  • 110 grams of filtered water for gelatin;
  • 2 kg of sugar.

Step by step recipe

Sort and process ripe cherries. Wash. Remove the seeds with a scalded pin and transfer the berries to a clean basin of a suitable size.

Top with plain white sugar. Gently but firmly shake the cherry. Cover up. Let her start the juice, which will take about 5-6 hours.

When the set infusion time is running out, steam the gelatin. After ten minutes in a water bath, slightly warm it up and, stirring with a spoon, achieve uniformity (but do not boil!).

Place a basin with cherries and sweet juice that has formed on a large burner. Boil.

Pour a few tablespoons of hot cherry juice into a container with a jelly mixture. Mix and pour into jam. Mix gently.

Immediately pour cherries in their own juice for the winter into sterilized jars, immediately roll up and cool. Keep refrigerated.

Having decided to create a similar version of a berry blank, be prepared for the fact that it must be stored in the cold (cellar, basement or refrigerator). As soon as this jam is exposed to direct sunlight or is warm, the gelatin will begin to melt, which will undoubtedly spoil the characteristics of the jam.

Option 7: Cherry in own juice with vodka for the winter

Lastly, we left unusual recipe cherry blank, which we will prepare with the addition of pure white vodka. It will turn out very delicious drink that are definitely worth your attention.

Ingredients:

  • 1 liter of white vodka (without additional flavor);
  • 3 kg of cherries;
  • 1 kg of regular sugar.

How to cook

Process the cherries, then carefully wash and dry them in a basin with artesian water, spreading them out on a clean large canvas.

When the berry dries, squeeze out the seeds. Place prepared cherries in a dry bowl. Top with regular white sugar.

Leave the ripe berry to release some juice for a couple of hours. During this time, scald a few glass bottles.

Now put a cherry in each container, filling it one-third. Having finished this process pour the remaining sweet juice in equal parts.

Now enter (also in the same volume) pure white vodka. Screw or cork bottles. Shake lightly.

Leave the cherry in its own juice for the winter in vodka for 15-17 days in a dark, cool place.

Depending on how strong the degree of the drink you want to get, adjust the ratio of vodka and cherry. Although it should be noted that the longer the drink is stored, the weaker it becomes. But in addition to berries, it is permissible to add a small chili pod to such a preparation, which will make it quite piquant.

By canning cherries in their own juice, you will gain strategic reserve for the winter for the preparation of drinks - compote and jelly. Berries are useful for various pastries, go to the filling, to decorate cakes and pastries. I offer a few good recipes blanks, with and without sugar.
