We completely combine the whites, yolks and other components. You can use a mixer. Without flour or other thickeners, the omelette will set safely and will not lose its tenderness, softness and plasticity.

Line a baking tray with a sheet of baking paper and cover with a thick layer of soft butter, which will saturate egg roll pleasant aroma and will not allow the paper to stick. Arrange the pieces evenly fresh dill and parsley, after washing, drying the greens and tearing off the hard stems.

Cover the green leaves with the omelette mixture, spreading them evenly around the entire perimeter. In our example, a baking sheet is 35 by 25 cm. We send the semi-finished product into the oven, which is hot by that time, and bake for about 7-10 minutes at a temperature of 200 degrees.

At the same time, we prepare a spicy filling from curd and cheese spread. Mix fine-grained cottage cheese with ground spices, sour cream, grated cheese durum varieties, a handful of greens, crushed garlic cloves.

Carefully separate the ripened layer from the parchment and turn it over.

Egg roll with melted cheese - excellent snack, which can be prepared in literally 30 minutes. Everything is simple, fast and very tasty. The filling of such a roll can be very diverse depending on tastes and the availability of food in the refrigerator: boiled meat or fish, liver paste, cottage cheese with herbs. I have this processed cheese With crab sticks and garlic. You can limit yourself to one processed cheese with garlic, it will also be delicious.

You will need the most simple products: eggs, sour cream, mayonnaise, processed cheese, garlic, salt and any greens.

First you need to prepare an omelette. Break the eggs into a bowl.

Pour the beaten eggs with sour cream into a baking dish, which must be lined with baking paper. Or do as I do. Make small edges on the paper and place it on a baking sheet, and then carefully pour in the eggs. The size of the omelette for this amount of ingredients should be approximately 20 cm x 25 centimeters.

Then put the pan in the oven, preheated to 170 degrees C. Bake the omelette until cooked for 15-20 minutes. It will swell first, and then settle and become even.

While the omelette is in the oven, prepare the filling. Grate the processed cheese, add chopped garlic and chopped parsley or dill.

When the omelette has cooled a little, spread the filling on it in an even layer.

Using paper, carefully roll the roll from the narrower side. Wrap in paper and place in the refrigerator for 30-40 minutes.

Cut the chilled roll into portions and serve as a snack. It's simple but tasty dish will delight you on weekdays and holidays.

  • 3 eggs,
  • 2 tablespoons of mayonnaise,
  • a mixture of peppers (I used peppercorns, ground in a mill).

For filling:

  • fresh mushrooms – 3-4 pcs.,
  • chicken – 100 gr.,
  • hard cheese – 200 gr.,
  • greens – 1 bunch,
  • garlic – 2 cloves,
  • tomatoes – 1 pc.,
  • mayonnaise – 1 tbsp. spoon,
  • mashed potatoes – 2-3 tbsp. spoons,
  • sauerkraut – 2 tbsp.

Preparation of “Stuffed Egg Rolls”:

First, we make an omelette for the rolls - beat the eggs with salt and pepper, then add mayonnaise and mix thoroughly. Now you can bake.

On hot frying pan pour a thin layer of the egg mixture and fry it on both sides. It is advisable to use a frying pan with a non-stick coating, then you can do without oil. In this way we bake thin egg cakes, approximately 4-5 pancakes should be obtained.

Now let's get to the fillings, we will have 4 types of filling:

  • chicken with mushrooms,
  • cheese with tomatoes,
  • spicy cheese filling and
  • potatoes with sauerkraut.

1. Fry finely chopped mushrooms on small quantity oil, then add boiled chicken meat to the mushrooms, cover with a lid and simmer for 5 minutes over low heat.

2. Grate the cheese on a fine grater, add diced tomato to it. If the cheese is not salty, you can lightly add salt.

3. Cutting sauerkraut into small pieces and immediately add to the puree. Cabbage should not be very sour.

4. Grate the remaining cheese on a fine grater, add finely chopped herbs, garlic and mayonnaise. Mix everything thoroughly. The filling should be spicy.

5. Next, spread the filling on each pancake in an even layer, retreating slightly from the edge, then wrap it in a roll. And so with every pancake. When everyone is ready, place the rolls, seam side down, in a frying pan and fry on one side so that the roll does not open - 4-5 minutes over medium heat.

After the rolls have cooled a little, cut them into pieces and serve. They are good both hot and cold.

Second pancake recipe:

Ingredients:

  • Chicken egg (5 raw for dough and 2 boiled for filling) - 7 pcs.
  • Potato starch - 2 tbsp. l.
  • Sausage cheese (smoked) - 200 g
  • Garlic (through a press) - 2 teeth.
  • Greens (parsley and dill, optional)
  • Salt (to taste)
  • Vegetable oil (for frying)
  • Mayonnaise (for filling)

Preparation:

  • Lightly beat 5 eggs and starch so that there are no lumps of starch, add salt. Fry in vegetable oil like pancakes.
  • Finely chop 2 eggs and combine with grated cheese and garlic, you can add if desired green onions and dill, salt and season with mayonnaise. Spread the filling onto the egg pancakes and roll them up. Place the finished rolls in the refrigerator.
  • When serving, cut into pieces.

Third recipe for spring rolls

Ingredients for “Stuffed Egg Rolls”

  • Ham (for filling) - 150 g
  • Egg (for pancakes) - 3 pcs.
  • Mayonnaise (for pancakes - 3 tbsp; for filling - 3 tbsp) - 6 tbsp. l.
  • Greens (dill and parsley, for pancakes)
  • Hard cheese (for filling) - 150 g
  • Mayonnaise (for filling) - 2-3 tbsp. l.
  • Garlic (for filling) - 1 tooth.

Preparation of “Egg Spring Pancakes”:

  1. Beat eggs with mayonnaise and finely chopped herbs.
  2. Bake pancakes.
  3. Make the filling: mix finely chopped ham with grated cheese coarse grater, mayonnaise and garlic.
  4. Spread the filling onto the prepared pancake.
  5. Roll up.
  6. Cut each roll into 3 parts.

How to make egg roll pancakes

  1. Before use, wash homemade eggs thoroughly. Then we break them into a bowl, add sifted flour, mayonnaise, salt, soda, finely chopped herbs and water.
  2. Beat everything thoroughly with a mixer or whisk (so that there are no lumps) until smooth.
  3. Afterwards, let the “dough” stand for 10 minutes, then add vegetable oil. At this point, the preparation of the egg mass is completed, taste it, and if there is not enough salt, add as much as needed.
  4. Grease a well-heated pancake pan (if you don’t have one, take one with a thick bottom) vegetable oil before placing the first pancake. We will not need this procedure later.


5. In the ladle, type required amount“dough” and spread it over the pan in a circular motion. Don't be alarmed when the pancake starts to rise in the pan. After you lift the lid, it will go down.

Cooking time depends on the heat of the pan - from about 20 seconds to a minute. We will fry the egg pancake for rolls only on one side, but under the lid.

The pancake is considered ready only when there is no wet dough left on it. After that ready pancake remove from heat and repeat the procedure again with the next batch of egg mixture. And so on until the “dough” is over.

Egg pancake rolls: filling options

Filling No. 1: Hard cheese with garlic and mayonnaise

Ingredients

  • Processed cheese - 300 g;
  • Mayonnaise -100 g;
  • Garlic - 2 cloves.

Preparing cheese filling for rolls

We grate the processed cheese, peel the garlic and pass it through a special press. Finely chop the greens and add mayonnaise. Mix everything well - the filling is ready.

Place the egg pancake on a flat plate, stepping back a little from the edge, carefully place a strip of filling along its entire length on it and carefully roll it into a roll.


Filling No. 2: Crab sticks with onions

Ingredients

  • Crab sticks - 200 g;
  • Mayonnaise – 100 g;
  • Green onions - to taste.

  • Sour cream -150 g;
  • Hard cheese -100 g.

How to Make Egg Spring Rolls

  1. Wash fresh mushrooms well, then finely chop the onion.
  2. Place the onion in a heated frying pan, fry it until translucent, then add the mushrooms and cook until done. Finally, add salt and pepper to taste to the dish - the filling is ready.
  3. Place the filling on the egg roll pancakes, then wrap them in a roll and place them in a baking dish.
  4. Preheat the oven to 180-200 degrees.
  5. Pour sour cream over the rolls, sprinkle them (over the entire surface) with grated hard cheese and put in the oven for 15 minutes.
  6. After 15 minutes, we take out the rolls and begin the long-awaited tasting.

The filling in egg rolls can be very varied - mushroom, meat, vegetable, cheese, with crab sticks or just with herbs. You don’t have to limit your imagination, because the taste of your snack will depend on it.

Breakfast at the checkpoint is a separate article! It should be satisfying and beautiful, rich in proteins to fill you up for longer. I think the flaky egg roll is the way to go. And yet, it is so wonderful that your loved ones will definitely like it and you won’t have to prepare food separately for yourself, separately for those who do not support PP. And since you can sandwich the roll in the most various fillings, then the most demanding eater will find an option to suit his taste. You can even use Susanna’s recipe from “The Most Charming and Attractive”, namely: “The way to a man’s heart is through his stomach. But the main thing is that in no case should you say how, what and from what it is prepared,” and more..” We’ll call this cookie something romantic... “Maestro.” That is, we will never tell our man. that this is just a puff omelette, and for greater importance we will give it a name, for example: Frittata in Sicilian style. A frittata is an Italian omelette, so we didn’t lie here, so if we meet with a culinary connoisseur, he won’t catch us lying. And in Sicilian - this is pure fantasy, but, you see, it sounds very representative!

So, let's start cooking:

What do we need? For an omelet - 4 eggs, there are options here. if you have problems with cholesterol, take only proteins. And again, the portion can be reduced or increased, depending on how much Sicilian omelette (hee hee) we want to cook!


Beat with a fork, at this stage you can add salt and pepper, I didn’t do this because I generally don’t add enough salt, besides, I planned to put cheese and hoped that it would be salty (spoiler alert! The cheese turned out to be completely bland!).


We will fry a pancake from a beaten egg. To do this, take a non-stick frying pan and pour approximately 1/3 of the resulting whipped mixture onto it. Like this:


Let's wait until the pancake has set a little and start filling it. I first sprinkled it with grated cheese and started rolling it into a tube:


I know it's not very clear in the photo, but! If you look closely, you will see melted white cheese on the yellow pancake! This is my completely bland cheese, as it turned out it was mozzarella.
Using a spatula, carefully twist the pancake into a tube shape:


It turned out surprisingly neat. Move the pancake to the side and add half of the remaining beaten egg to the remaining space:

This is how plump and fluffy our “Sicilian Frittata” turned out to be. Of course, I didn’t get the richest taste, but that’s what I wanted. But you can add salted fish, shrimp, capers or olives and then there will be a completely different taste! And there can be many more layers. Can I water it? mushroom sauce...
