- 500 grams of beef liver,
- 500 grams of fat,
- garlic - a few cloves,

How to cook a liver roll?
1. Wash the liver and cut into small pieces.
2. Fat also needs to be cut into small pieces.

Clean the liver, wash and dry. Grind through a meat grinder along with lard. Add to the resulting mass semolina and 2 raw eggs. Mix well, season with salt and pepper and mix again.

Spread the resulting mass into two plastic bags, forming rolls. Wrap tightly in foil so that the roll holds its shape, tie up and carefully lower the rolls into a pot of boiling water.

Boil the rolls for 2 hours, then first completely cool and only then remove from the bags. Cool, cut into slices, put on a dish and garnish with fresh vegetables and herbs.

Chicken liver - 400 grams;
Eggs - 5 pcs.;
Semolina - 5 tablespoons;
Onions - 5 large pieces;

Wash chicken liver and pat dry on paper towel

  2. Meanwhile, prepare the lard. For this type of roll, I recommend taking the thinnest lard. If you bought it with the skin, then carefully cut it off with a fillet knife.

  3. Place the foil on the work surface, on it a layer of fat. Rub the whole surface with peeled garlic and salt, crushed in a garlic maker. Then sprinkle with ground pepper mixture.

  4. Fry the walnuts the day before in a dry frying pan and pass through a meat grinder or grind into crumbs in a mortar. Sprinkle the lard walnuts. Instead of walnuts you can take pistachios or hazelnuts for the recipe.

  5. Dip the chicken liver in boiling water for 3-5 minutes, then transfer to paper towels. Blanching the liver will help remove some of the blood from it.
