Cooking

Rinse the tomatoes well, remove, if any, damage and cut them into slices. Peel the onion and cut it into thin rings.

In jars with dill and garlic, lay in dense layers, alternating, onion and tomato slices for the winter, pour a tablespoon of oil into each jar and pour marinade (boil water with salt and sugar). After that, cover the jars with metal lids, sterilize them in a container with boiling water for 17-20 minutes and roll them up. Turn the sealed jars upside down, cover with a blanket and leave to cool.

Tomato slices with garlic

Required Ingredients:

tomatoes;

dill and parsley (greens);

peppercorns;

vinegar (9%);

The amount of ingredients depends on how many cans of tomatoes you get.

And again, first prepare the jars (sterilize liter for 5 minutes, 3-liter for 15 minutes). Fold in them the washed greens, pepper and garlic, cut into halves.

Washed and peeled tomatoes cut into slices and put in jars to the very top, leaving room only for salt and sugar. They should not be too tight.

On top of each jar, add a tablespoon of sugar, vinegar and 1 teaspoon of salt (proportions are indicated for jars of 3 liters). Then pour boiling water over the vegetables, cover with clean metal lids and sterilize for 30 minutes. At the end of sterilization, the jars are quickly rolled up, turned over, covered and left in this position until they have completely cooled down.

Tomato slices for the winter with vegetables

Required Ingredients:

Bulgarian pepper (better than different colors) - 3-4 pieces;

water - 1 l;

sugar - 3 tablespoons;

peppercorns (allspice) - to taste;

salt - 1 tablespoon (table);

vinegar (apple) - 1 tbsp. spoon;

Bay leaf- taste;

garlic, dill or parsley, hot pepper- all according to your taste.

Sterilize the jars in advance in the microwave or over steam. Wash the tomatoes and cut them into slices. It is better if the tomatoes are well ripe.

Cut the peeled onion into half rings.

First, put the bottom of the jar with spices, put a few chopped rings, then lay the tomatoes and onions in layers.

Ingredients: Medium-sized tomatoes - 2-3 kg.
Honey - 100-150 gr.
Red wine (preferably dry) - 1 bottle

How to cook:

Put the tomatoes washed under water and cut into slices into a jar. Prepare the brine - pour water, wine, salt and honey into a saucepan, bring to a boil and pour over the cooked tomatoes.

Recipe 4. Tomato slices with celery

Ingredients:
Tomatoes 2-3 kg.
Celery with leaves - 1 pc.
Salt - 1 tbsp. spoon
Sugar - 1 teaspoon
Peppercorns - 3 pcs.
Garlic - 3 cloves
Vinegar 5% - 1 teaspoon

How to do:

Put a stalk of celery on the bottom of the jar, put tomatoes cut into slices on top of it. Pour boiling water over, leave for 10 minutes. Drain the water and refill with new water.

Products: tomatoes, onions, a liter of water, 3 tablespoons of granulated sugar, allspice, salt - 1 tablespoon, vinegar (apple) - 1 tablespoon, bay leaf. To taste: garlic, herbs, hot pepper.

Cooking:

1. The first step is to prepare jars with lids. Sterilization at this stage can be done in any way, even using a microwave.

2. Rinse the tomatoes, let them dry a little and cut into four equal parts. In the case when the tomato is large, it can be cut into 6-8 slices. Choose good ripe tomatoes.

3. Peel the onion, rinse and cut into rings, which, in turn, are divided into 2 parts.

5. We spread the vegetables as follows: a layer of tomato - a layer of onions - tomatoes again and so on.

6. We make pickle-marinade: bring water to a boil and pour sugar and edible salt into it. Pour in apple cider vinegar.

7. Completely fill the jars with marinade. Cover with a lid and put on water bath, sterilize for about 10 minutes.

8. We roll up the cans and wrap them up, waiting for them to cool completely.


Tomato slices (recipe for 7 liter jars)

To prepare tomato slices, we take only ripe mature tight tomatoes, onions, herbs (dill, celery and parsley) and garlic. Ingredients for the marinade: water - 3 liters, a tablespoon of vinegar, 2-3 tablespoons edible salt, 6-7 tablespoons of sugar and a tablespoon sunflower oil for each liter jar.

How to do:

1. Prepare jars and lids: wash, dry in the microwave or boil in a saucepan.

2. At the bottom of each liter jar, put a sprig of dill and parsley, a couple of cloves of garlic.

3. Now add clean and sliced ​​\u200b\u200btomatoes, alternating with half rings onion(a layer of tomatoes - a layer of onions). It is important that the vegetables are dense enough, but do not exude juice. In other words, try to stack carefully so as not to crush the tomatoes.

4. Add vegetable oil to each jar.

5. Making the marinade: after boiling the water, add salt, sugar and a spoonful of vinegar to it.

6. Pour boiling marinade into jars, cover with lids and place jars to sterilize in large saucepan or enamel basin. Fill the pot with water so that the jars are two-thirds hidden in the water. You need to put banks in hot water. Sterilize for about 20 minutes and then roll up the jars and wrap. Store upside down until cool.

Cooking such tomatoes with slices with onions and butter for the winter is, in principle, not difficult, especially if you are not afraid of the sterilization process. Despite the simplicity of this canning method, many hostesses try to do without it. But I, on the contrary, think that it is much simpler and, most importantly, more reliable. I keep all my preparations for the whole winter in an apartment on a shelf in the pantry and it never happened that the banks were blown up.

400 g tomatoes (dense, not overripe),
1-2 bulbs

Marinade: per 1 liter of water
2 tbsp. spoons of salt, sugar, 9% vinegar.

Put chopped onion, parsley and chopped garlic at the bottom of the jars.

Lay onion rings on top.

Add calcined vegetable oil - 2 tablespoons per liter jar.

Prepare the marinade by boiling water with salt and sugar. Turn off. Add vinegar.

Fill jars with hot marinade, cover with sterilized lids, sterilize tomatoes for 10-20 minutes. Roll up. We put on the lid, wrap and leave to cool.

Pieces of tomatoes remain intact. It turns out a delicious fortified salad for the winter. Another tomato salad can be marinated with bell pepper:

Ingredients for Canning Tomatoes:

3kg. tomatoes
1 kg. onion
1 kg. bell pepper
5 heads of garlic
5 allspice peas

Marinade: 2 liters of water,
3 tbsp salt
6 tablespoons of sugar,
1 tablespoon of vinegar essence,
2 tbsp vegetable oil

Tomato Canning Recipe:

Cut strong red tomatoes into four parts, onion and bell pepper rings, chop the garlic. Sterilize jars.
Spread in layers - tomatoes, then peppers, onions, the last layer - garlic.
Pour hot marinade over vegetables.
Sterilize: 0.5-liter jars - 10min; liter jars - 15 min.
After rolling up, turn the lids down, wrap until completely cool.
From this amount of products, 7 cans of 1 liter are obtained.
