The word "carving" comes from the English carving, which means "carving". Carving is called different types carvings - for example, wood, stone or bone. The carving we are interested in uses as a material fresh vegetables and fruits. This art, which combines cooking and sculpture, is also called culinary carving.

Thailand is considered to be the birthplace of carving as a skill of figured cutting of vegetables and fruits - it was there that this skill originated about two thousand years ago. There is a legend according to which for the first time the table for the royal meal was decorated with skillfully cut fruits. Today, carving is a frequent element of ceremonial feasts: figured decorations made of fruits and vegetables add festivity and originality to dishes, being both a decoration and a treat at the same time. Experienced craftsmen create real sculptural masterpieces from ordinary watermelons, apples, cucumbers and pumpkins - but art education is not required to master the basics of carving. For work, professionals use large sets of various knives and other devices, but for beginners to comprehend this art, a small set of convenient tools may be enough.

What tools are needed?

Here is a set of basic carving tools that professional craftsmen use. The main working tool is the so-called Thai knife (a small knife with a sharp blade, shaped like a sickle). Next to it to the left are carb knives, they are V-shaped, oval or round. A device that looks like an ice cream scoop is a noisette. Plus - a small knife of the usual kind is used (in the photo it is below), scissors to cut leaves, for example, lettuce, and devices similar to vegetable peelers.

All these are special professional tools. If you are serious about carving, you might want to purchase a similar set. Beginners can limit themselves to small sharp knife, scalpel, scissors and a device for cleaning vegetables and fruits.

How to choose vegetables and fruits?

You should carefully choose vegetables and fruits for carving, because the result of your work and how long this work will look beautiful and fresh will depend on their quality (the latter is relevant for a feast lasting several hours).

Choose firm, ripe fruits and well-shaped vegetables;

The rind must not be damaged;

Peel vegetables and fruits, if necessary, immediately before work;

Some vegetables (beets, carrots) are well soaked for 15 minutes in cold water before work;

To prevent peeled and chopped apples, pears and eggplants from darkening, sprinkle them lemon juice or before working, soak for 15 minutes in water with salt and lemon juice;

Ready-made figures from vegetables and fruits can be stored in cold water before serving;

Sprinkle the figurines on the table well ice water from time to time, so they last longer.

The aesthetics of the food is just as important as its taste. That is why table decoration with carved figures of vegetables and fruits is used by chefs around the world. The technique by which products are made into real works of art is called carving. In fact, this is a primitive form of engraving that anyone can learn.

The history of carving began many centuries ago, when Asians tried to embellish their meager diet, saturated with predominantly vegetable dishes. To Europe carving from vegetables and fruits

came not so long ago, but, noticing how smart and unusual it becomes festive table, many chefs began to actively learn this art.

In addition to restaurant carving, there is a home direction in which the housewives independently arrange everyday or festive meals. In our article, we will teach you how to make elementary decorations from fruits and vegetables.

Carving tools

Creating vegetable and fruit decors requires patience and some skill, so be prepared that not everything will work out the first time. However, if you decide to seriously study carving in practice, stock up on a set of special tools:

  • Thai knife (the most important element of the set);
  • knives with different triangular sections;
  • oval knives;
  • spoon-noisette, with which hemispheres and balls are cut;
  • a long knife for the initial processing of large fruits;
  • knife for working with watermelon and pumpkin;
  • carbovochny groove knife;
  • scissors.

For the manufacture of simple jewelry, you can get by with 2-3 kitchen knives with different lengths and widths of blades, as well as scissors.

Fruit and vegetable carving: step by step photo for beginners

Let's start with the most basic vegetable decorations and tell you step by step how to do it. chrysanthemum from Chinese cabbage. The work steps are as follows:

  1. Buy a head of Beijing cabbage weighing 300-700 gr.
  2. Remove the top leaves and cut off the loose part of the cabbage head, leaving a piece about 150 mm long to work with.
  3. Take a knife with a triangular or oval section and make cuts along the thick white veins of the leaves (when making a cut, make sure that its beginning is thin, and deeper when approaching the stalk).
  4. Leave the tip of the stalk about 20 mm undercut.
  5. Now it's time to remove the large cut leaves (that is, you leave the dense white core of the leaf, and remove the unnecessary part).
  6. The chrysanthemum should consist of many rows, which are made inside the stalk in a similar way.
  7. Try to keep the tips of the cut petals thin: then, when interacting with cold water they easily bend or curl into rings.

The finished “flower” must be put in a container with cool water for 30 minutes so that the petals take on an elegant shape. The product is ready! It remains to put the chrysanthemum on a dish and decorate with greenery.

cucumber flower

Few would believe that out of the ordinary fresh cucumber you can carve a stunning lily, but we will prove that it is possible! Stock up on a pair of standard carving knives and get started:

  1. Trim the very tip of the cucumber and leave a piece of vegetable 8 cm long for work.
  2. Using a flat knife, cut the peel in the form of a petal, without leading to the edge.
  3. Similarly, cut out the other petals in a circle, maintaining equal distances between them.
  4. Using an oval knife, make the next circle of petals (inner), following a checkerboard pattern (make as many circles of petals as the size of the workpiece allows).
  5. Carefully remove the core of the cucumber with a knife.
  6. Take your scissors and cut the tip of each petal into a triangular shape.
  7. Dip the flower in ice water to open the petals beautifully.
  8. Now we make a core of carrots or radishes, supplementing it with decorative cuts.
  9. Carefully put the core on a toothpick and insert it into the center of the flower.

You can also take the peel of a cucumber as leaves for a lily. You will see: your family will be shocked by the extraordinary creative abilities of the mother-cook, and children will start eating vegetables and fruits without whims, because it is much more interesting to eat a cabbage flower than standardly cut products. We have mastered the simplest cucumber carving, and now we will consider what can be made from carrots.

Carrot carving

Carrots are known for their useful properties, but many children refuse it. Having made a beautiful bright flower out of a vegetable, you will interest your child and surprise your family. So, take a Thai knife and a medium-sized carrot for work. If there is no special knife, feel free to take an ordinary kitchen knife, but always with a sharp and thin blade.

Cut out a rounded shape from a carrot up to 4 cm in diameter, which will be the core of the flower, and make a mesh-shaped pattern on it. In the remaining cylindrical part, cut grooves in a circle, trying to keep equal intervals. From the blank with beards, cut thin rings with corrugated edges that will act as petals.

On all sides of the core in its lower part, make deep cuts, adhering to a checkerboard pattern. Insert the petals, trimming if necessary. The carrot flower is ready, it remains only to decorate it with green petals from the peel of a cucumber.

watermelon basket

You can beautifully serve fruits on the table with the help of a basket carved from a watermelon or melon. To do this, first draw a line in the center of the watermelon, which will be considered the beginning of the base of the basket. Then you need to cut out a template for a future pen from paper.

To beautifully cut a lemon or orange, make grooves in the peel with a knife, and then cut the fruit into thin rings. Also, citrus fruits are cut in the center in the form of a crown, as a result of which we get 2 flowers with sharp teeth from one fruit. The remaining pieces of zest can not be thrown away, but used for cooking healing decoction For .

apple carving

Take a large hard apple and cut off the top of it in the form of a cap. Then, with a thin knife, draw a rim inside the pulp, stepping back 5-7 mm from the edge, and cut the peel into large teeth. The base of the flower is ready. In the same way, you need to cut out the petals in the middle of the apple, but do not forget that it is important to stick to a checkerboard pattern.

On average, a large fruit produces a flower with 4 rows of petals from apple pulp. As a rule, when making decorative figures from fruits, there are leftovers that are a pity to throw away. For example, an apple can be crushed and used as a face mask.

Tip: since the apple quickly oxidizes, and its flesh loses its presentation, cut out the decor just before serving!

Carving is an art for dreamers. With it, you can unforgettably decorate tables for children's parties by composing hedgehogs from pears, and butterflies from kiwi or apples. Together with a child, you can lay out a palm tree from bananas and kiwi right on a plate or make a ship out of a melon. Try, experiment, and enjoy your meal!

The world of modern cooking is full of innovation. In the era of the availability of various cuisines of the world, it becomes quite difficult to surprise sophisticated gourmets. But what if, apart from palatability food, one would be amazed by the amazing appearance?! You can surprise, create edible masterpieces, give unimaginable shapes to the usual forms of products with the help of carving from vegetables and fruits.

History of carving

It's no secret that everything ingenious is simple. This is how you can characterize the amazing art of carving, which arose many millennia ago in the expanses of the eastern lands of Asia.
Carving owes its appearance to attempts to somehow diversify the meager diet, which has always been in short supply among the poor inhabitants of East Asia. However, in contrast, they had an abundance of intelligence and ingenuity, which allowed carving to be born into the world. There is one legend, according to which once a rich gentleman came to visit a poor family. He demanded to set the table, but the hostess had nothing but a few fruits and vegetables in stock. Fearing the wrath of the master, the hostess decided to deceive him. She created strange birds and animals from fruits and vegetables, which impressed the rich gentleman so much that he did not dare to try these creations - they were so beautiful. Since then, all the inhabitants of the country, as well as those nearby, began to decorate their tables, creating incredible compositions from simple products.
Modern fruit and vegetable carving is still one of the interesting arts Asian countries. However, it is worth noting that his techniques have made significant progress. If earlier there was not even a good knife in service, today the field of possibilities is expanding, thanks to modern tools. However, many masters adhere to the classics - they try to follow ancient methods, avoiding newfangled devices.

Is it possible to carve at home?

The answer to this question is of course yes! Not only possible, but absolutely necessary! This art will allow you to incredibly diversify the long-familiar homemade food. It is generally accepted in the world that carving is a lot of creativity, and has no special relation to the world of food, as such. However, we dare to resist such speculation. Thanks to carving, food can be not only tasty and healthy, but also beautiful. An example would be classic dishmashed potatoes with meatballs. Speaking about the composition, it is quite difficult to give a twist to this dish. The lack of the possibility of creating forms, as well as the consistency unsuitable for design, keep the dish within certain limits. However, the decoration with vegetables, which acquire their new forms in the carving technique, can add brightness and novelty to it. Having learned all the subtleties of art, you will be surprised by all the facets that will open before you.

Modern types of carving

Nowadays, actual carving from vegetables and fruits is usually divided into several areas. These include:

  • Chinese
  • Japanese
  • Thai
  • European

1) Chinese carving represents wonderful world where food is transformed with stencils. Although it is also customary in Chinese carving to create compositions with a knife, a stencil takes the place of the classics.
The difference in this direction is the choice in favor of vegetables. The only exceptions are watermelon and melon. The explanation is very logical - the art of stencil carving requires a larger area than other subspecies. In addition, the creation of stencil carving implies the maximum rigidity of the surface, which most fruits cannot boast of.

2) Japanese carving from vegetables and fruits - a real immersion in history. Taking in best traditions fellow (China and its carving techniques), the Japanese decided to bring a feature. She became the traditional carving of hieroglyphs, as well as the creation of complex paintings, which are based on martial arts. Apple and watermelon became classic objects for Japanese technology.

3) European type of carving- a combination of the traditions of the East with the classics of the North. This species stands out in a special direction, since Europe, unlike Asian countries, is much richer in terms of products. European-style techniques are concise and focus on geometry. The flight of oriental fantasy in this genre is not so pronounced. The emphasis is on ease of use.

4) Thai carving of vegetables and fruits- the quintessence of this art. It is the Thai version that has gained wide popularity around the world. The reasons for this phenomenon are simple - Thais create the most complex compositions. In their work, they strive for perfection, because for them carving from vegetables and fruits is not just an art, but a real lifestyle.
It should be noted that most of the famous schools and even carving academies focus their attention on the Thai version.

There are several reasons for this:

  • in the Thai version, there are many techniques that are available to beginners;
  • there are no restrictions on art - the creator can turn off fantasy control and create their own masterpieces;
  • combinatoriality, which is expressed in the possibility of combining various techniques;
  • no need to purchase a wide range of equipment for creating compositions.

Based on this, as part of our lesson, it would be wise to focus on the Thai method.

Tools for creating masterpieces

Now it is necessary to highlight in more detail the basic tools that you will need to comprehend the art of carving. Among them there is great amount variations, but the main ones are:

Additional items you may need as you refine your practice include:

However, this list is far from complete. The popularity of carving has led to constant developments in the field, often resulting in new tools.

The basis of skill, or the secrets of professionals

In order to make your first experience as productive as possible, you should pay attention to the achievements of eminent carving masters.
The main postulates that will allow you to successfully begin to improve in your chosen area include the following points:

The main thing in carving is practice. Over time, you will be able to learn how to correctly calculate the force of pressing the knife, as well as the angle of its direction.
Additionally, the masters note that fantasy plays a huge role in carving. Even if something didn’t work out for you, look at your creation from a different angle - perhaps your small flaw or small mistake allowed a new technique to be born.

From theory to practice: carving for beginners

Now that the basics of this art have become clear to you, it's time to put the acquired knowledge into practice. In order to achieve the best result, you should gradually increase the complexity of the work. Through such a gradation, you will have skills, thanks to which in the future any element will be available for you to manufacture.
First of all, we choose the object of creation. Experts advise starting with the following applicants:

  • cucumber;
  • carrot;
  • apple

They have earned such trust due to their qualities - a dense consistency allows you to get the necessary skill with minimal loss of quality.
So, let's see what masterpieces a beginner in carving can make.

1. Cucumber flower

It is necessary to take one dense long cucumber. We cut the middle into halves (2-3 pieces are needed), and we will use the edge with the “tail” to give the composition color and create a flower.

In the flower part we make six cuts, not reaching two cm to the tail (use a long knife).

We cut the resulting blank along the edges to get the outlines of the petals, as in the photo (use a Thai knife).

We remove the core of the cucumber (if there is no special knife, you can carefully make it with a spoon). Next, we make cloves with a Thai knife.

Now, with a Thai knife, carefully separate the skin from the pulp. Finally, make small triangular windows at the base.

Place the blank in ice water - so you can straighten the future petals.

From the pulp of the cucumber, make a round core, which must be decorated with an ornament and placed inside the flower.

We cut the cucumber, not reaching the base, as shown in the photo (7 layers each).

We divide the plates into 7 pcs.

We make bends of each even plate (in one direction);

We collect everything together and enjoy the creation of our own hands!

2. Carrot cloves

It is necessary to cut the carrots according to the proportions shown in the photo.

On the long part, using a Thai knife, it is necessary to cut the grooves. Their number can be unlimited, but you should not grind too much.

Next, we cut the resulting part with grooves in such a way that we get thin flowers.

The remaining part needs to be corrected - cut its edges so that it takes a conical shape.

On the wide side, using a Thai knife, you need to create a semblance of a grid.

Create, by shallow longitudinal cuts, pockets for the finished petals.

Place the petal blanks in the cut pockets.

The carnation is ready.

For beauty, you can decorate the core with dried cloves or something else.

3. Apple flower

Arm yourself with a hard apple and a Thai knife.

Cut off 1/4 from the side where the apple has a tail.

Carefully, without reaching the end, separate the peel with a thin layer of pulp from the core. It is also necessary to make 13 cuts - they will serve as blanks for the petals.

Using the marks, make triangular cuts to create petals on the apple.

Now you need to repeat 13 marks, and in the same way cut the petals from the apple pulp.
Important! The petals of the second level must be between the petals of the first level.

The procedure should be repeated with another row of pulp.

Next - create the last row of petals. Remove the bones from the middle and fill it with something of your choice. Something brighter would look good.

Thus, carving vegetables and fruits is an amazing activity. He keeps the tradition ancient East while connecting them with new technologies. Allows you to turn food into works of art that give us not only food saturation, but also aesthetic pleasure.

Having tried your hand at carving, you can diversify homemade food, as well as surprise your family and guests with your extraordinary approach to creating dishes.

The quilling technique is quite versatile and sometimes amazes with its originality. So, for example, some crafts can be used for playing with children, others can serve as decorating functions, and others can generally be used for table setting.

Today we propose to consider several master classes on the topic of fruits and vegetables, which are subject to both beginners and experienced quilling needlewomen in terms of complexity. Each master class is detailed instructions With step by step description of all actions, supplemented by a variety of photos, diagrams, sketches and templates.

Necessary materials for work

So, to work on fruit joys, you need to stock up on the following materials:

  • colored paper or ready-made quilling strips;
  • glue;
  • scissors;
  • army ruler with round holes of different diameters;
  • toothpick or a specialized device for winding strips of paper.

By the way, the above device can be made with your own hands, using an unnecessary drawing brush, a needle with a large eye and wire cutters. Now we will tell you step by step how to make a simple quilling tool from improvised means.

Rid the brush of the existing lint.

Break off the needle with wire cutters, as shown in the picture, then secure it in place of the former pile.

We have more or less figured out the tool and materials, let's move on directly to the quilling blank figures, which are the basics for beginners.

From each twisted roll, by simple manipulations with your fingers, you can get such uncomplicated forms that will later be useful to create a whole composition.

In order to make such a fruit composition using the quilling technique, you need paper in red, green, orange, white and brown.

Quilling strawberry

We twist a lot of rolls of red paper and give them the shape of an eye.

We connect the details of the strawberries together, fix a strip of paper along the contour, glue an arbitrary tail on the top of the berry. Here is such a fruit.

Orange slice in paper rolling technique

We twist the roll of two strips glued together (orange and white).

We give the roll a droplet shape, fix the parts together with glue, according to the template.

We glue a strip of white paper along the contour, then a strip of orange.

Kiwi in quilling technique

Twist a few white rolls for the core and form a lot of green details, in the form of a drop.

Connect the parts together, glue the kiwi slices along the contour with a brown stripe.

Ideas for Quilling Vegetables

By the principle of creating fruit slices, you can also make quilling vegetables. Let's give you a few interesting ideas.

Fruit fridge magnets

Quilling magnets are easy to make from the available fruit and vegetable crafts. To do this, take any craft and glue a small magnet or magnetic strip on the reverse side with Sekunda glue or a hot gun.

Quilling “Fruit Basket”

At the heart of the basket, one of the main forms is used - a drop. Such elements need to be made a huge number.

Cut out the desired shape for the basket from the notebook sheet; a trapezoid is used in MK. Lay out and glue all the elements according to the template. Make sure that the basket parts do not stick to the sheet.

There should be two such blanks - these are the front and back walls of the basket.

Glue the bottom of the basket. Its length should be equal to the sum of the lengths of the three sides of the side part. Connect the side and bottom with glue.

Glue the second wall of the fruit basket.

While the basket is drying, make a handle for it. To do this, glue the parts into two strips. Decorate the basket with fruits from the first MK or fold them inside.

Quilling “Fruit Vase”

Twist 12 loose rolls with a diameter of 14 mm, give them a droplet shape. Gather 6 parts into a flower and glue.

Twist 13 yellow rolls with a diameter of 18 mm, give them the shape of a crescent.

Glue the parts, place a tight-rolled red roll in the center, as shown in the figure.

Glue the V-shaped pieces to the flower. Glue the remaining details in the form of a drop.

Roll 12 eye pieces from a 16mm roll. Glue them on the bottom office.

Form 12 drop-shaped and 12 crescent-shaped elements from a sixteen millimeter circle, glue to the base.

Roll 12 yellow and 12 blue 20mm rolls. Give them the shape of an eye.

Form the side of the vase. From the rolls (point 9) make 4 flowers (2 yellow, 2 blue). Glue tight red rolls among the yellow petals, and yellow ones on the blue flower.

In the middle of the flowers, place pre-twisted curls, as in the photo. Glue a drop to the center of the curls.
