Flour - 0.5 kg.

Milk - 1 glass

Cooking:

Dissolve sugar and yeast in warm milk.

Pies can be fried or baked in the oven. A large pie can be allowed to rise a little (from half an hour) and then put in the oven.

They can be cut into small pieces or rubbed on a coarse grater, mixed with cinnamon, honey, sugar or lemon zest. Flour - 600 gr.;
granulated sugar - 4 tablespoons;
eggs - 2 pcs.;
margarine - 50 gr. (can be replaced with butter);
milk - 250 ml. (can be replaced with water + dry milk 2 tablespoons, or kefir);
salt - 1 tsp;
yeast - 2 tsp dry (or about 24 gr. pressed);
vanillin - 1 tsp (it is possible without it).

I will not describe the filling, since everyone has their own favorite. Any one is suitable for these pies, that is minced meat, that pate, that chopped chicken legs, onions and greens, jam, cabbage, mushrooms, cheese, chocolate etc.
The author made the dough in a bread machine using the main dough program, but if you do it manually, then there is nothing complicated either.

Cooking:

To do this, you need to dilute the yeast in warm milk or water with the addition of 1 tbsp. Sahara.
Let them come to life (yeast), and when they begin to foam, you can make dough.
To do this, mix all the ingredients and knead the dough, if it is watery, add more flour.
The dough should not stick to your hands.
Put the dough in a warm place to approach for 2-2.5 hours.
Knead twice, for the third time you can sculpt pies and bake.
Put the pies on a baking sheet covered with baking paper, brush with egg and put in a preheated oven at 200 degrees until browning.

5. Pancakes

2 eggs
500 ml of sour milk (or kefir + milk)
200 gr cottage cheese of any fat content
1 tsp soda
12 tbsp flour with a slide (300 g)
salt, sugar to taste
vegetable oil about 100 ml.

Cooking:
Beat cottage cheese with eggs, add half of the milk.

Add salt, sugar (if the pies are with unsweetened filling, then a little more salt and vice versa) and add flour.

Add soda to the remaining milk, mix well and combine with the curd mass.

Beat everything with a mixer or whisk. The mass turns out to be the consistency of thick sour cream.

Pour a portion of the dough into a well-heated frying pan, reduce the heat and cover with a lid.

As soon as it is noticeable that the bottom of the pancake is browned - put the filling (closer to the center) gently, using a spatula, fold the pancake in half. The dough is soft and rolls up easily.

Cover the pan with a lid for 1 minute, then turn the pancake over and cover again.

6. Pies - Delicious without the hassle

The pies are soft, tasty and do not get stale for 2-3 days, unless of course they live. The dough is prepared in 5 minutes and pies are immediately molded, no need to wait until it rises.

1 glass of warm water;
50 gr. pressed yeast;
1 st. a spoonful of sugar;
1 teaspoon of salt;
3 art. spoons of sunflower oil;
4 cups flour;
1 glass of boiling water;
any filling.

Cooking:

Dissolve the yeast in warm water, add sugar, salt, sunflower oil, mix the flour a little and pour in a glass of boiling water. Knead the dough. After the dough is kneaded, we immediately begin to sculpt pies. I prepared the filling in advance, I had a potato with a liver, and so, any one to your taste will do here. What I love about this recipe is that you don't have to wait at all - even though the dough is yeasty. While one was fried, I sculpted the next).

  • Mayonnaise - 250 gr.
  • Sausage or any meat-containing product - 200 gr.
  • Fresh tomato - 2 pcs.
  • Bulgarian pepper - 1 pc.
  • Cheese - 50 gr.
  • Olive - 5-10 pcs.
  • Dill, onion - optional.
  • Sunflower oil - for lubrication of the mold.

Cooking:

1. Cut the bread loaf into small cubes. Cut sausage or any meat product into small cubes. If you like greens and onions, then you can chop them too. We put everything in a deep cup and, adding mayonnaise, mix well until smooth. You should get something like dough with meat inclusions.

Instead of a loaf, you can take half a regular loaf of bread.

2. In a greased baking dish, spread the bread and meat mass and evenly distribute in the form of a dense layer.

3. Cut the olives, tomatoes and peppers into circles or strips - as you like - and spread them alternately or in layers on top of the bread base. Three cheese on a coarse grater and sprinkle on top.

You can put any topping on top, as for pizza.

4. We send our creation to the oven preheated to 180 degrees and bake for about 15 minutes so that the cheese chips melt and spread in an even layer.

5. Serve directly from the heat or let cool for 15 minutes, and then cut into portions.

Jellied pie with fish and rice

I really like the filling pies! No need to mess around for a long time - mix all the components and pour the batter. Or the dough is poured in two layers: the lower one, on which the filling is then simply scattered, and the upper one, with which the contents are “covered”. The core itself can be absolutely anything - from the usual fried minced meat or fresh chopped cabbage, to a complex combination of products.

However, the combination of any fish with rice will be the most memorable. Moreover, you can use both canned food and fresh seafood fillets.

Ingredients:

  • Flour - 300 gr.
  • Fish fillet without bones - 400 gr.
  • Mayonnaise, sour cream - 200 gr.
  • Rice - 100 gr.
  • Egg - 3 pcs.
  • Green feather onion - 1 bunch.
  • Baking powder - 1 tsp
  • Lemon juice - 1 tsp
  • Oil is for lubrication.
  • Salt, a mixture of peppers, dill - to taste.

Cooking:

1. Boil rice until fully cooked in water. If the filling is from canned fish, then you can not add salt to the water, because the finished cereal will absorb excess salt from canned food. If the fillet is fresh, then it is better to salt it a little so that the taste of the finished pie is not insipid.

2. Finely chop the washed onion with a knife. If the feathers are hard enough, then they can be wrinkled a little with your hands or with a wooden pusher.

3. Cut the seafood meat into small pieces so that they cook faster, sprinkle with lemon juice and combine in a bowl with the previous components. Add a little salt, flavor with a mixture of peppers and dill (you can even dry), mix well until smooth.

4. Now let's do the test. In a deep bowl or pan, combine mayonnaise with sour cream and beat in eggs. Beat until smooth, and then immediately combine with pre-sifted flour and baking powder. After thorough mixing, the liquid base is ready.

By the way, sour cream can be replaced with thick kefir, which, in reaction with baking powder, will make the dough much more magnificent.

5. Pour half of the liquid filling into a baking sheet greased with sunflower or butter or a special form and level it into a layer all over the bottom.

6. Distribute the filler evenly on top and pour the remaining half of the liquid consistency.

7. We send our baking sheet to the preheated oven and leave it to bake at 180 degrees for about 50 minutes. When our masterpiece cools down a bit, cut it into portioned pieces.

8. Serve with your favorite sauces, ketchup, pickled cucumbers. But even without additives, even a cold pie is very, very tasty!

You look - it seems like a thick, good yeast cake, and you tear off a piece - there is a filling! The secret of real Ossetian pies is precisely that the dough should be as thin as possible, and the filling should seem thicker, although in fact exactly the same amount of dough should be used as the filling.

When there is time, it is better to start the yeast dough on the dough yourself. If time is running out, then ready-made from the nearest cookery is quite suitable.

Ingredients:

  • Yeast dough - 1 kg.
  • Minced meat - 900 gr.
  • Butter - 60 gr.

Or you can prepare the dough in advance:

  • Flour - 1 kg.
  • Water - 700 ml.
  • Dry yeast - 1.5 tsp.
  • Salt - 0.5 tsp.
  • Sugar - 0.5 tbsp. l.
  • Sunflower oil - 1 tbsp. l.

Cooking:

1. We divide the finished dough into 3 parts. We roll balls out of them and then roll each of them into a cake of 25 cm diameter.

If there is no ready-made, then we take dry yeast, combine it with sugar and dilute it in warm water (100 ml). We wait until the dough rises (usually it takes 15-20 minutes), and combine it with the remaining water, salt and sugar, and in portions we introduce the flour sifted in advance. We knead the dough well, then grease it with sunflower oil and, covering it with a film or putting it in a food plastic bag, let it rest for 2 hours. Then we crush it well and you can start cutting.

2. Mix minced meat with chopped herbs, lightly salt and pepper, add your favorite seasonings or without them at all and, dividing into 3 identical parts, roll up the balls and put them in the center of each cake.

3. We distribute the filler over the dough, leaving about 4 cm free at the edges, so that later it would be easier to wrap the dough and give it the desired shape.

4. We wrap the edges to the center and pinch them in the middle.

5. You should get a huge "belyash" without a hole.

6. Turning it over to the other side, gently press it with your hands so that the minced meat is evenly distributed inside, and the “belyash” turns back into a flat cake about 30 cm in diameter.

7. We grease a wide frying pan (preferably cast iron, as in Soviet times) or a baking sheet with margarine and put a cake with filling on it. Again, lightly press down on top, trying not to tear, so that the diameter increases by a few more centimeters. It is better if it completely fills a 35-centimeter diameter frying pan.

8. Now, in the middle of our future pie, it is best to make a small, neat incision in the top layer of dough so that a hole is formed through which the steam from the cooked minced meat will come out and will not tear the pie from the inside.

9. We heat the oven to 200 degrees and put the cake to bake first in the lower position for 10 minutes, then in the upper position for 20 minutes. During this time, everything should be baked and browned.

10. We take out the finished pastry, put it on the table and coat it well with butter on top. It takes about 20-gram piece for 1 pie. If not all the oil has been absorbed and a piece remains - we put it directly into the hole made earlier - the oil will soak the filling.

11. Cut into convenient pieces and serve to the delight of the guests.

Lavash pie

When you don’t want to mess with flour, ordinary pita bread will come to the rescue. It is sold in all barbecue and bakery departments. It will serve as the base in which the filling is wrapped. And so that during baking it does not dry out much and does not turn into a crust that cannot be gnawed, you can either soak it slightly in kefir, or simply smear it well on top.

Ingredients:

  • Meat pulp - 400 gr.
  • Kefir - 1.5 cups.
  • Cheese - 200 gr.
  • Lavash - 3-6 pcs. (depending on size)
  • Egg - 1 pc.
  • Onions, carrots - 1 pc.
  • Dill, parsley - 1/3 bunch each.
  • Sunflower oil - 2 tbsp. l.
  • Tomato paste - 1 tbsp. l.
  • Salt, spices - to taste.

Cooking:

1. Grind onions and carrots. Cut the meat into small bars.

2. We send everything to fry in a pan with sunflower oil over medium heat. In the process, lightly add some salt and add your favorite spices and tomato paste. Once the meat is ready, remove from heat. It usually takes about 10-15 minutes to roast.

3. Grind the greens. Three cheese on a grater. We twist the fried meat in a meat grinder. We combine everything in a deep bowl and mix well. Our stuffing is ready.

4. Lubricate a deep frying pan without a handle or a baking dish with sunflower oil and line the bottom with one or two pita breads so that they overlap on each edge, as if forming sides, and there is still left to then wrap them a little on top around the edges of the pie.

5. Spread and level the meat and cheese preparation into a layer.

6. Tear 1-2 pita bread into medium pieces and moisten them well in kefir. Beat kefir in advance with an egg.

7. Spread slightly crumpled wet pieces of pita bread in a layer on top of the filling. Pour the kefir filling evenly, leaving a little to lubricate the top layer.

8. Right on top of the kefir-lavash semi-liquid layer, evenly lay out the remains of the filler and cover with "sides" of pita bread. We close completely with the remaining whole pita bread (if necessary - two).

9. We coat the top with the left egg-kefir mixture. To make the top soft enough, cut the butter into pieces and distribute them equidistantly over the surface. You can even freeze a piece of butter and rub it directly over the top layer of pita bread so that it is completely “oiled” during baking.

10. Preheat the oven to 220 degrees and bake our cake in it for 20-25 minutes. Let cool slightly and cut into portions.

Jellied pie with cabbage

I really like cabbage under a tender jellied dough. Usually I don’t even add onions to it, because it is already very tender and tasty. Only dill for spring freshness.

But you can also add a little minced chicken, freshly grated potatoes or sausage sticks. What to add - it's up to you to decide - after all, everyone has their own special preferences for combining products with cabbage.

Ingredients:

  • Fresh cabbage - 0.5 kg.
  • Flour - 6 tbsp. l.
  • Mayonnaise, sour cream - 4 tbsp. l.
  • Egg - 3 pcs.
  • Baking powder - 1-2 tsp.
  • Sesame - 1-2 tbsp. l.
  • Butter - 1 tsp.
  • Dill - 0.5 bunch.
  • Salt - 1 tsp

Cooking:

1. Shred a fork of fresh cabbage in the usual way. Lightly add salt (1 tsp without a slide) and knead a little with your hands so that the straw gives juice.

2. Finely chop the dill with a knife and add to the cabbage. Mix well so that the dill greens are redistributed evenly in the cabbage.

3. Break the eggs into a deep bowl and beat with a mixer or blender until foam appears.

Pan-fried pies are the perfect quick dish. Indeed, they are quickly prepared - fifteen minutes, and they are on the table! They are indispensable when you urgently need to feed the household, and you are running out of time, and there is little food in the refrigerator.

In a frying pan, they are good because every housewife has components for them. These are flour, milk, vegetable and butter (or margarine). And for the filling, you can use anything: minced meat, potatoes with onions, carrots, eggs, etc.

In addition to the ease of preparation, the advantage of these pies is their cost-effectiveness. The products they need are inexpensive. Agree, this is an important advantage!

What will you need

The pies are small in size, their size is half the size of the usual ones. Do not try to make them large, otherwise they will fry longer and will not be as appetizing.

So, you will need:
Butter or margarine - 80 g.
Milk - half a glass.
Flour - 2 cups.
Salt is on the tip of a knife.
Vegetable oil for frying.

The indicated quantities of products are enough to cook 18-20 pies.

To eat, one person needs 4-5 pies (it depends on the appetite of your household). If you need to cook more, increase the amount of food proportionally.

Don't cook them ahead of time, as they taste best fresh. When they stand, they are also tasty, but if they are served directly from the pan, then they are much better.

How to cook them

First knead the dough. Melt the butter or margarine and cool (to do this, insert a saucepan of butter into a large bowl of cold water, and the butter will cool instantly).

Then pour the butter into a separate bowl, add half a glass of milk, 2 cups of flour and salt. Replace the dough. It will turn out soft, elastic and will not stick to your hands. Roll it into a ball and send it to the refrigerator.

Now make the filling (see below about it).

After that, take out the dough, divide the ball into three parts. Take one of them and cut off a plum-sized piece from it. Roll it thinner. The diameter of the mug will be about 7 cm. Important! The dough must be rolled out thinly, otherwise the taste will not be the same.

There is no need to sprinkle flour on the board or countertop, the dough does not stick at all anyway.

Take the resulting circle of dough. Put the filling on one half - put a little, 1 teaspoon. Cover it with the second half and pinch the edges well (you can do this by pressing them firmly with a fork). You will get a pie in the form of a crescent moon.

Prepare the rest of the pies in the same way. Long talk, do it faster.

Then fry them in a hot skillet. While one portion is frying, cook another.

Important Points

Before frying the pies, pour vegetable oil into the pan and heat well. But as soon as you put pies on it, immediately turn down the fire, it should be small! Otherwise, the pies can burn - they are fried very quickly, you cannot leave the stove. When one side of the pie is browned, turn it over to the other side.

Attention: do not spare oil, pies take a lot of it. It is not necessary to fill them to the top, you just need to look so that it is enough.

Put the finished pies in a bowl or pan. Do not cover with a lid, then they will remain appetizingly crispy. And if you close them with a lid, then after standing, they will become soft. In this form, I like them less, although they can then be reheated in the microwave.

Stuffings for pies

For my taste, these pies are best combined with such fillers:
- with fried onions;
- chopped meat;
- hard-boiled eggs with onions.

But sweet fillings - cottage cheese, apples, etc. - I personally do not like here. Although someone may like it, it's a matter of taste.

Potatoes with fried onions

Boil potatoes, mash, add oil. Finely chop the onion and lightly fry it without overdrying. Mix everything, salt, pepper.

Meat filling

Fry ground beef, pork or chicken in a pan, salt and pepper. For greater smoothness, you can knead it with a fork and add a little milk.

Egg and Onion Stuffing
