  • sort out the collected berries, remove spoiled fruits and debris. Put in a suitable container, pour cold water and leave for 6 hours. Remember to change the fluid regularly. This is required in order to remove white plaque from the surface of the berries, in which pathogenic microorganisms are present. It is they that cause fermentation and lead to damage to the compote;
  • you can remove excessive astringency if the berries are blanched in a small amount of liquid;
  • the best way to remove bitterness and viscosity from fruits is the freezing process. For compote, berries are recommended to be collected after the first frost. If the crop was harvested earlier, then there is nothing wrong with that. It is enough to remove the chokeberry in the freezer for 1-2 days;
  • the compote that is prepared from concentrated syrup is considered tasty: 500 grams of granulated sugar is used per 1 liter of liquid;
  • it is allowed to combine chokeberry with other ingredients. For example, citrus fruits soften the taste, give a ruby hue to the drink. A good combination is considered to be cinnamon, mint, vanilla, star anise. It is recommended to use cherry leaves as a flavoring agent.

Despite the large number of positive properties, the product has some contraindications. It is worth remembering that excessive consumption is harmful to health:

Autumn has already arrived, and we still continue to make preparations for the winter. Today I offer a recipe for a fragrant and very tasty drink - we will prepare apple compote with chokeberry. Pleasant sweet taste with subtle sourness and delicate aroma of this drink will be appreciated by both adults and children.

By tradition, compotes and juices for the winter I roll up in small jars. This recipe will use 3 1 liter jars, so you can use one 3 liter jar. The proportions of the necessary ingredients are indicated just for such a volume. We will prepare this fruit and berry compote using the double filling method, and store the drink in a cool dry place or closet.

Ingredients:

Cooking step by step with photos:

We will prepare this delicious and fragrant compote for the winter from chokeberry, apples, water, granulated sugar and citric acid. The amount of sugar depends on the variety (sweetness) of the apples and your preferences.

The first step is to carefully prepare the jars and lids in any way convenient for you. Since even for compotes I use jars with a capacity of no more than one liter, they fit perfectly in the microwave, in which the sterilization process takes place. Thoroughly wash the cans with soda or detergent, then rinse in cold water and pour about 100 milliliters of water into the bottom of each. We put it in the microwave and steam it on the highest power. For one jar - 5 minutes, and 3 banks together is enough for 7-8 minutes. I just wash the lids, put them in a saucepan, pour water (so that the lids are completely covered) and boil for about 5 minutes. We put the berries in prepared jars - I gave the proportions for a three-liter jar, if you remember. In other words, in one liter jar we put 100 grams of berries, which must be removed from the branches in advance, sorted out and washed.

Next we put the apples. 400 grams is pulp with skin without seed pods, cut into slices. I used 3 large apples, each weighing about 180 grams.

Cover with lids and leave for 10-15 minutes. During this time, the berries will color the water. By the way, in this way the fruits are sterilized.

Drain the fruit and berry infusion into a saucepan and put on fire. Bring to a boil, stir until the sugar dissolves, and cook at a moderate boil for just a minute or two.
