What I like about this recipe is not only the effectiveness and taste, but also the ease of preparation. If you need a good mixer for a biscuit, you need to beat eggs for a long time, then there is absolutely no need to achieve thick foam or peaks. The main thing is splendor, which can be achieved with the help of a good old whisk!

It is better to make roses with helpers - because speed is important in their formation. It's great if you have a couple of baking sheets: while one is in the oven, you can make blanks on the second. If you have one baking sheet, the bottom of the detachable form is perfect for the role of the second. This time we baked in an electric oven, the second time I baked in a gas oven, at a temperature of 200C, at a level slightly above average.

Ingredients:

For 3-4 tens:

  • 5 large eggs;
  • 1 glass of sugar (200g);
  • 1 cup flour (130g);
  • 1 sachet of vanilla sugar.

To grease the pan:

  • A piece of butter.

For decoration:

  • 3-4 tablespoons of powdered sugar.

How to bake:

Eggs are needed not the heaviest, perfect, but not small either: a little more than average. A glass without a slide. Instead of vanilla sugar, you can take vanillin at the tip of a teaspoon.

We take out the eggs from the refrigerator in advance: the proteins are beaten much better if they are at room temperature.

We also turn on the oven in advance - before you start cooking the dough, so that it has time to warm up to 180-200C.

Carefully separate the whites from the yolks. Pour the squirrels into a larger bowl, and for now set aside the yolks in a plate.

We begin to beat the egg whites with a whisk, gradually adding sugar.

Our goal is not “standing” foam and not “peaks”, but just a lush mass. When you gradually introduce all the sugar and vanillin, and the proteins will approximately double in size, becoming fluffy, bubbly, white - that's enough.

Now add the yolks and beat for another minute and a half, until smooth.

Then, continuing to beat, we introduce flour - just like sugar, adding a little - for 4-5-6 visits.

The dough is ready. Don't be put off by the fact that it's rather liquid, flowing freely. That's the way it should be.

We take a baking sheet and - do not grease it all with oil! - and draw circles with a diameter slightly less than a glass with a corner of the bar, 3-4 cm from each other.

Because if you grease a whole baking sheet with oil, the oil will burn, and why waste it? And on these greased areas, pour a portion of the dough with a teaspoon to make circles. It is not necessary to make too large ones, it is more difficult to make roses from large circles. The optimal diameter is 4-5 cm. If the circle is not quite round, but oval or wavy - nothing, in nature they are also not made with compasses. There will be beautiful, different petals!

And yet, do not make many blanks at once, even if the baking sheet is large. Since roses need to be formed quickly - while the dough is hot, then the blanks are plastic, easy to give in, take shape and stick together with each other. And when they cool down, they become brittle and hard to connect. Therefore, at the same time we place 6-9 circles in the oven, 3 for each rose.

And here are the blanks at the bottom from a detachable form.

We bake for 4-5 minutes, look at the appearance: when the edges of the cakes begin to blush, become brown-golden - it's time to get it out! If underexposed, and the blanks remain pale, the cookies will be damp, if overexposed, they will fry to brown.

Now let's act as quickly as possible! We pry off the hot biscuit cakes with a thin iron spatula (we use a spatula for this purpose - it is strong, thin, ideal - it must, of course, be clean!).

We take the smallest of the circles and squeeze with our fingers from several sides, forming the middle of the rose.

The second circle, of medium size, is pressed to this middle from below and on the sides.

We place the third cake, the largest one, from below under the second one and press it in the same way, forming the third row of petals.

What a beautiful rose! It looks like tea roses when they bloom on a hot summer day, and the sun shines through the fragrant petals with hot rays!

By the way, biscuit cakes are hot, and they burn fingers out of habit. Therefore, have something cool on hand to relieve the heat when forming roses by touching your fingers.

There is also a complicated version of biscuit roses: when forming flowers, while hot, they can be strengthened on sweet straws. Get a whole "bouquet".
