I didn’t fry the champignons beforehand, but used raw ones, if they are cut thinly, then they will have time to cook. If desired, you can chop larger and overcook with onions in vegetable oil, then the filling will turn out to be more juicy. If you use forest mushrooms, then they must first be boiled, and then fried with onions until fully cooked. You can also add other vegetables to the filling, for example, bell peppers, onions, olives, some meat products: boiled chicken breast, ham, salami, cut into thin slices. For the sauce, I mixed tomato paste, water, oil, sugar, salt and pepper, dried basil and oregano, and finely chopped garlic. You can use your favorite pizza sauce.

    Next, the pizza dough needs to be rolled out - it is most convenient to do this on parchment sprinkled with flour. If you know how, you can stretch the dough with your hands, it is quite plastic and easy to shape. It is more convenient for me to roll out with a rolling pin to a thickness of about 3 mm. I make pizza blanks of large diameter, about 35 cm, for almost the entire baking sheet. To make the edges even, I wrapped 1-2 cm of dough inside along the edge - as a result, a neat side is obtained.

    Grease the dough with sauce and drizzle with a little olive oil. Together with parchment, she transferred it to a baking sheet in the oven, heated to a maximum of 220-260 degrees, for 5 minutes. By the way, I used a baking sheet with a low side, and turned the sheet over so that the sides were on the bottom - it’s more convenient to bake pizza.

    Why pre-bake a cake without a filling? In 5 minutes, the dough will be slightly baked over the entire area, the sauce will seize, due to which it will not be damp, when we place the filling on it, it will turn out crispy.
