2 teaspoons potato starch;

a tablespoon of lemon juice;

Vanilla to taste.

Cooking order

First of all, you need to cook If frozen berries or fruits are used, they must be thawed in advance. Then lightly mash the large ones with a fork, and the small ones can be left unchanged. Pour the mass into a bowl, filling them only halfway, and put in the refrigerator until completely solidified. This will take at least 6 hours.

Further preparation of fruit desserts should be started only after this time. Soak the remaining gelatin in 100 ml of water, then dissolve it over low heat and bring to a boil, stirring constantly. Then whip the cream with sugar into a fluffy mass, add the diluted gelatin and mix. Put on top of the berry jelly and put in the refrigerator for another 3-4 hours. After this time, decorate with grated chocolate and you can enjoy a bright dessert in every sense.

And when they get bored, but there are still a lot of fruits, and, what is most offensive, they become very cheap or start to deteriorate in the country, the only way to “utilize” them is to freeze and jam? Let's seriously prepare for the fruit season this year and use the gifts of nature to the maximum. To do this, you need to pick up some interesting ideas and recipes and keep them ready, because summer is going by so quickly. "Culinary Eden" has already compiled a small selection of original fruit desserts that will help to attach excess fruit when there is a lot of them.

Let's start, perhaps, with apples - the most common Russian fruit. For ideas, let's go to the famous researcher of Russian cuisine - William Pokhlebkin and the author of the "culinary bible" of the late 19th century - Elena Molokhovets. At Pokhlebkin, we found as many as three original, but very simple fruit desserts from apples, moreover, one of them (Russian sweet) was developed personally by the author and is not found anywhere else, which is rather unfair. Judge for yourself:

Bake Antonovsky apples until the peel is separated from the pulp and the pulp turns into puree. Wipe, remove peel, seeds, etc. For each glass of mashed potatoes, put at least one tablespoon of honey, mix, serve hot for dessert. You can also lightly bake in the oven (3-5 minutes).

Pastila belyovskaya

Puree from baked Antonov apples is mixed with whipped proteins and powdered sugar, poured into paper-gauze molds, dried in an oven and rolled in powdered sugar, drying in air (in a sieve).

Ingredients:
3-4 Antonov apples,
3-4 tbsp granulated sugar,
0.5 cups of baked milk,
4-5 pieces of prunes (optional).

Cooking:

But Pokhlyobkin nevertheless strongly advises mixing Antonov apples with milk. And this is the reason for this: “Baked Antonov apples (and only they!) Although they remain sour in taste, they have a huge content of pectins, that is, a natural glue that, when boiling (baking) apples without water, binds malic acid, keeps it in jelly state. On the other hand, baked and, moreover, fatty (4-6%) milk is also deprived of the opportunity to actively interact with malic acid, especially since it is connected, in addition to pectins, also by the sugar we add (it must be put more!). Thus, in the dish, no sourness, curdling of products will occur: we will have time to eat it before that. The combination of sweet and sour and milky-creamy-unleavened taste turns out to be extremely subtle, refined, rare and pleasant.”

In the book Molokhovets, about a dozen pages are devoted to desserts with apples. There are relatively simple ones:

Ingredients:
1 cup grated apples
0.5 cup eggs
0.75 cups of sugar
0.5 cup heavy cream
0.5 cup crushed crackers,
0.25 cups of heated oil.

Mix everything well, pour into a mold and put in the oven.

There are more difficult dishes:

Zephyr apple

Ingredients:
5-6 apples
0.5 cup sugar

0.5 lemon.

Cooking:
Bake apples, rub through a sieve, put whites and sugar, stir with a spoon in a cold place until it turns white and thickens so that the spoon is kept upright. Squeeze the juice from the lemon, put on a dish, cool, serve with biscuits, meringue or jam.

But most are intricate recipes that require time and experience. What are the costs, for example,

Ingredients:
500 g large apples,
0.5 lemon,
1 tbsp Roma,
0.75 cups of sugar
0.5 tsp cinnamon,
1.25 cups deep fat (0.65 cup fat and 0.6 cup oil)
1 tsp vodka.
1 cup batter (put sugar, salt, sour cream, flour into the yolks, separated from the proteins, mix thoroughly, add milk, whites whipped into a thick foam and stir gently).

Cooking:
Peel the apples from the core and peel, wipe with lemon, cut into slices, put on a plate, sprinkle with rum, sprinkle with half the sugar, mix gently, cover with a plate, let stand.

The recipe is certainly difficult for home use, but if you need to treat and surprise guests in the country, it will do just fine. Firstly, food costs are minimal, and secondly, guests can cook their own fruit dessert according to the fondue principle, just give them batter, deep fat, apples and other fruits or even vegetables so that there is room for experimentation.

Russian cuisine is not very rich fruit desserts, which cannot be said about Ukrainian cuisine. That's where the expanse of gourmets! Let's try to cook the simplest first

Ingredients:
10-15 ready-made pancakes,
5-6 apples (or pears, peaches, plums)
80-100 g butter,
50 g sugar
2 tbsp ground crackers.

50 g almond biscuits or grated almonds
200 g soft unsalted cheese,
1 tbsp Sahara.

Cooking:
Put the pitted peach halves cut side up in a mold, sprinkle with cookie crumbs or almonds, put a spoonful of cheese on top. Preheat the grill and place the pan with the peaches under it for 5 minutes, until the top is browned. Then sprinkle with sugar, add heat and bake for another 2-3 minutes until the sugar caramelizes.

Similarly, you can do with fresh figs, if you suddenly get tired of eating it just like that.

12-15 figs,
2 tbsp light honey,
2 tbsp pine nuts,
100 g mascarpone cheese.

Cooking:
Preheat oven to 180°C. In figs, make cross-shaped cuts from the side of the stem so that they open like a flower. Ingredients (for 4 servings):
3 hard pears
100 g sugar
1 vanilla pod
20 g butter,
0.5 lemon,
1 tsp ground ginger,
50 g almond flakes,
1 egg
1 tsp milk,
thyme sprig,
250 g of ready-made puff pastry.

Cooking:
In a heavy-bottomed pan or baking dish, combine 100 ml of water, sugar and vanilla seeds, bring to a boil and reduce the syrup to a dark color, without stirring, so that the sugar does not crystallize. Roll out the dough to a thickness of 3-4 mm and cut out a circle slightly larger than the pan. Put the dough on top of the pears, tuck the edges in and brush with lezon (a mixture of egg and milk). Place the pan in the oven at 190°C for 20 minutes. When the dough is browned, remove and cool slightly. Cover the cake with a flat plate and carefully turn over using an oven mitt. Sprinkle the pie with thyme leaves and serve immediately. Very tasty with heavy whipped cream.

  • bananas - 2 pcs;

How to cook:

For this you will need:

  • glass of water;
  • a glass of granulated sugar;
  • 4 cups fresh (you can take frozen, thaw it first at room temperature);
  • powdered sugar.

How to cook:

  1. Make a simple syrup: combine a glass of water and a glass of sand in a saucepan, then
    heat over medium heat and bring to a boil, while stirring constantly until the sugar dissolves. Remove from heat and cool for 5 minutes.
  2. Add 1 cup of fresh cranberries to the syrup. Stir so that the berry is covered with syrup.
