    If your choice is sour cream (a thicker product than kefir), add flour in parts. Most likely, 170-180 g of flour will be sufficient. What is important here is the consistency of the dough, similar to frying traditional pancakes. Be sure to sift the soda through a fine sieve to remove all dry lumps and not later spoil the quality of the cake with unpleasant bitter inclusions. In addition to baking soda, baking powder, now popular in baking, will also work.

    Knead the viscous jellied dough without a single clot, set aside for a while. And to avoid problems with burning and sticking of the product, grease the inside of a heat-resistant container with a diameter of 22 cm with a piece of COLD butter (warm melted butter leaves a too thick layer), sprinkle with flour, shake off the excess flour - that is, cover the mold with the famous “French shirt”.

    Now we select dense, juicy apples for the pie, wash them, peel them, and cut out the core. Shred into slices of equal thickness: about 2 mm. The number of fruits is also easy to change; in our step-by-step recipe with photos there are five fairly large seasonal and therefore very fragrant apples. The cutting options for apple jellied pie are very different: cubes (small, medium, large), shavings through a grater, long straws, universal bars, quarters and even massive halves.

    Load the fruit pieces into the sticky dough, carefully, without damaging the apples, mix - cover each slice with flour mixture. It is enough to stop at apples plus dough. But lovers of aromas and culinary experiments can additionally throw in a handful of raisins, crushed nuts, some berries, a pinch of ground spices, lemon zest, and pour in a spoon or two of honey.

The recipe for jellied apple pie is based on two cooking options. The filling is either filled with dough, similar in consistency to pancake dough, or a soft sand base with a layer of apples is used, which are thickly filled with a creamy mixture.
Spices added to the cake (vanillin, cinnamon, saffron, cardamom, cloves) will add gourmet sophistication to the baked goods, but they should be used in moderation - excess spices will clog the aroma of apples.

Instead of vanillin, it is better to use vanilla sugar: it is difficult to accurately measure the dose of vanillin - if you add a little more of it than you should, the dough will become bitter and the cake will be spoiled.

The light caramelization of the apples gives the pies a special taste. To do this, coarsely chopped apples are quickly fried (to retain their shape) in butter with a small amount of sugar and then used according to the recipe. In addition, during caramelization, excess liquid quickly evaporates, and the pies turn out less “wet.”

Classic apple pie

The classic version of apple jellied pie is prepared very quickly. In fact, this is a traditional charlotte, but everyone turns it out differently.

Main products:

  • 3 – 4 eggs;
  • 4 – 5 medium-sized apples, sweet and sour, not loose, starchy, but juicy, crisp fruits;
  • a glass of granulated sugar (more is possible - it all depends on the sweetness of the apples and preferences);
  • 1.5 - 2 cups of sifted flour (if you take more flour, the cake will be denser, less - more loose);
  • a teaspoon of baking powder or soda slaked with lemon juice (half a teaspoon).

For a special taste: spices and alcohol (cognac, rum, liqueur) in the amount of 1 tablespoon. Alcohol not only gives the cake a completely unique taste, but also serves as an additional leavening agent.

Cooking steps:

  1. Turn on the oven at 180 - 200 C.
  2. Beat the eggs and sugar with a fork or whisk until the granulated sugar crystals melt.
  3. Add a tablespoon of dessert alcohol: liqueur, cognac or rum (optional), spices.
  4. Sift the flour, mix with baking powder and mix into the egg mixture, one tablespoon at a time. Stir clockwise until large bubbles appear. The thickness of the dough should be such that it flows viscously (but does not flow) from a spoon.
  5. Cut the apples: into large pieces or narrow slices, depending on your preference. Apples can be caramelized.
  6. Grease a mold 23–24 cm in diameter with oil, or line it with oiled parchment.
  7. Pour the batter into the lattice, waiting until it fills the bottom.
  8. Place the first layer of apples, sprinkle them with cinnamon and vanilla sugar (optional). Pour a thin layer of batter, making sure it gets between the apple slices and down the sides of the pan.
  9. Next, also pour in the fruit layers, making sure that the last layer is made of dough, otherwise the apples will dry out during baking.
  10. Bake until golden, check doneness with a wooden stick.
  11. If the apples on top begin to wither, you can make a filling: beat half an egg with sugar (a tablespoon) and 50 g of melted butter. Pour this mixture over the pie when it is half cooked.

Kefir based

Jellied pies made with kefir are very tasty.

Apple Pie Base:

  • 3 – 4 apples, strong, sweet and sour, Simirenko type (approximately 500 – 600 grams);
  • kefir of any fat content - a glass (250 ml);
  • flour (you can use not 1, but 2 varieties - it makes more fluffy baked goods);
  • medium sized eggs - 2;
  • butter - 50 grams;
  • granulated sugar - 140 – 150 grams;
  • salt - less than half a teaspoon;
  • vanilla sugar, cinnamon and other spices to taste.

You need baking powder - half a sachet or 1 teaspoon. It can be replaced with half a teaspoon of soda and a little, no more than a teaspoon of lemon juice or any vinegar 3 - 6% (apple, wine) to “quench” the soda.

Stages:

  1. Before cooking, keep the kefir and butter at room temperature for about an hour so that they are not cold.
  2. Turn on the oven before starting to prepare the dough so that it warms up exactly to 180 - 200 C.
  3. Sift the flour, mix with a pinch of salt, baking soda or baking powder.
  4. Beat sugar, spices and eggs separately, add softened (not melted) butter, stir.
  5. Then pour kefir into the sugar-egg mixture and beat with a whisk or fork until the sugar crystals dissolve. It is better not to use a mixer.
  6. Pour the liquid base little by little into the flour mixture and stir until a mass similar to low-fat sour cream is obtained.
  7. Cut the peeled apples the way you like - thin slices or large pieces.
  8. Pour a little dough into a greased pan, lay out the apples, pour the dough again so that the fruit is evenly distributed in the pie. If desired, add steamed raisins, candied fruits, nuts, and lemon zest.

Prepare the kefir jellied pie with apples at 180 - 200 C for about an hour. After browning the surface of the pie, you can check its readiness with a wooden toothpick - the dough comes out dry, which means everything is baked. Sprinkle the top of the pie with cinnamon sugar.

Cooking with sour cream

Sour cream pie with apples can be prepared in different ways, but it turns out especially delicious with soft shortcrust pastry as a base and a chic filling.

For the test you will need:

  • flour - about 2 cups;
  • baking powder - teaspoon;
  • butter - 100 g;
  • sour cream - half a glass (or a little more);
  • granulated sugar - half a glass.

For the filling: 4 – 5 medium-sized crispy apples and spices to taste.

For the jellied cream:

  • sour cream 250 – 300 g;
  • egg – 1;
  • granulated sugar 150 – 200 g;
  • flour – 1 – 2 tablespoons, starch – 1 tablespoon.

Stages:

  1. Add sugar to softened butter and grind.
  2. Beat sour cream with egg, mix with butter-sugar mixture. If desired, add 3 - 4 teaspoons of liqueur, cognac, rum.
  3. Sift the flour, add baking powder, and gradually add it to the egg-sour cream mixture to obtain an elastic, soft dough.
  4. Place the dough in a greased pan. Many people use oiled parchment paper to prevent the dough from burning. Press the dough to a thickness of 5 - 7 mm to get a “basket” with sides. Prick with a fork in many places.
  5. Thinly slice the peeled apples (many people like large, juicy pieces) and fill the dough form with them. You can mix apples with orange, lemon, and cinnamon zest.
  6. Prepare the filling: beat the egg with sugar, add starch, flour, then sour cream.
  7. Pour sour cream thickly over the apples and place in the oven, preheated to 200 degrees.
  8. Bake until done, 45 - 60 minutes (depending on the “ability” of the oven).

The cake is cooled directly in the mold. Many people believe that baked goods with filling taste even better after they sit in the refrigerator for several hours.

Jellied pie with cottage cheese and apples

Jellied pie with cottage cheese and apples is a lush, tender and rich dessert dish.

Required:

  • 3 – 4 sweet strong apples;
  • 300 grams of cottage cheese with at least 9% fat content;
  • 3 tablespoons sour cream;
  • wheat flour about 1 cup;
  • 70 – 100 g butter;
  • 3 eggs;
  • 150 g sugar (more if you like sweetness);
  • a teaspoon of baking powder and your favorite spices.

You can add steamed and chopped dried fruits, nuts, and candied fruits.

Preparation:

  1. Chop the peeled apples very finely or grate them on a coarse grater.
  2. Beat eggs with sugar, add melted butter, mix.
  3. Mix cottage cheese, sour cream, baking powder, spices and egg-sugar-butter mixture. Add enough flour so that when kneading you get a soft, viscous, but not liquid dough.
  4. Stir chopped apples into the dough. It is best to first put a little dough without apples into the greased form, and only then pour out all the dough with apples. You can place apple slices on top of the pie.
  5. Bake until golden.

Recipe for those who are fasting

Strict fasting excludes the use of animal fats, eggs, and milk in the diet, but does not at all exclude the enjoyment of skillfully and deliciously prepared desserts without these products.

These include a simple recipe for apple jellied pie with orange juice.

Required Products:

  • 3 – 4 apples: half of them are finely chopped, and the other part is grated on a coarse grater and squeezed a little (the proportion can be changed);
  • flour – 150 – 180 grams, baking powder (a teaspoon) or soda dissolved in lemon juice (a third of a spoon);
  • granulated sugar - half a glass or to taste;
  • juice from 2 oranges (about 150 ml) and orange zest;
  • odorless vegetable oil 50 ml;
  • roasted and crushed almonds – half a glass (optional);
  • liqueur, cognac - a tablespoon (or more);
  • salt (pinch), favorite spices.

Preparation:

  1. Mix butter, orange juice and dessert alcohol, sugar, spices, salt, slaked soda. Beat with a fork until the sugar dissolves.
  2. Add apples mixed with zest and nuts to the aromatic liquid, you can add sultanas.
  3. Mix flour into the mixture in small portions to form a flowing, sticky dough. Worth a try - it must be sweet.
  4. Bake in a hot (180 – 200C) oven in a pan thickly greased with vegetable oil.

From biscuit dough

Essentially, jellied apple sponge cake is very close in preparation and composition to the classic pie - charlotte. But there is a difference - whipping the whites is done separately - using a blender. Therefore, the sponge cake turns out especially airy and tall.

Products:

  • medium-sized eggs - 6 pieces (carefully separate the yolks from the whites);
  • flour - 130 - 150 grams (sifted 3 - 4 times to saturate with oxygen);
  • sugar -200 – 220 grams and a couple of teaspoons of vanilla sugar;
  • apples -2 – 3 pcs. (If you use more, the cake may not rise or may become too wet).

Important! The eggs must be cold. Dishes for whipping - clean, cold, fat-free and dry. Soda and baking powder are not added to the biscuit dough.

Preparation:

  1. Cut the apples into slices, sprinkle with lemon juice to prevent darkening, add spices.
  2. Grind the yolks with half the sugar and beat vigorously with a fork or whisk (you can use a blender) until the mass turns white and increases 2-3 times.
  3. Start beating the whites at the lowest speed. When foam appears, increase the speed to maximum and add a pinch of fine salt to improve whipping. After the mass thickens slightly, add the remaining half of the sugar to the mixture in parts and continue the beating process until a strong foam is obtained.
  4. Add a third of the whipped whites to the yolk foam and, using a large spoon, carefully stir everything up and down until smooth.
  5. Slowly stir the flour into the egg mixture, sifting it in batches and moving the spoon up and down.

Then you can use 2 options:

  • I - carefully add the chopped apples, and then add the remaining 2/3 of the whipped whites into the mixture, again gently mixing and pouring the resulting dough into the mold;
  • II - pour 1/4 - 1/3 of the dough onto the bottom of the mold, place a layer of apples on it, and so on 2 - 3 times (the apples should be covered with a thin layer of dough on top).

The first method is faster, the second allows the dough to rise better.

As for the dishes, the optimal shape is a small diameter so that the cake turns out tall. The bottom of the mold is well greased with oil and sprinkled with flour. In order for the biscuit to rise, the walls of the mold do not need to be greased, otherwise the dough will slide down the slippery walls. You can cover the walls with parchment.

This is one of the fastest apple pies, for which you will need:

  • strong sweet and sour apples - 4 pieces;
  • milk - a full glass;
  • eggs – 2 – 3 pieces;
  • sugar - glass;
  • vegetable oil - a tablespoon;
  • baking soda (half a teaspoon) or baking powder;
  • wheat flour - 2.5 cups.

Preparation:

  1. Cut the peeled apples into cubes and sprinkle with lemon juice.
  2. Using a whisk or mixer, beat the eggs with the sugar until it dissolves.
  3. Pour in the milk and mix everything well again.
  4. Add baking powder or slaked soda to the sifted flour.
  5. Mix the flour in parts into the egg-milk mixture until smooth and a flowing dough similar to thick sour cream is obtained.
  6. Add spices to taste.
  7. Combine the apple mixture with the dough and mix everything again.
  8. Pour the dough with apples into a baking dish greased with butter or lined with oiled parchment.

Bake in an oven preheated to 180 - 200 degrees for 40 - 60 minutes.
